Raymond "Ray" Alongi was a contestant on Season 11 of Hell's Kitchen. He ranked in 10th place.

Season 11[]

Episode 1/2[]

When he got on the Hell's Kitchen bus, Ray noticed that all the other chefs were half his age and compared it to old school meeting new school. Then, Ramsay surprisingly told the chefs to meet him in Las Vegas. He did not believe he would be going there already and arrived there, the chefs were greeted by showgirls, got on a double-decker bus for a tour of the city, and got tricked into believing they would go on a Las Vegas 4D experience. However, they arrived in front of a live audience, where Ramsay was waiting for them. When Ramsay announced the grand prize of the season, he declared that his entire life job was depending on that.

During the Signature Dish Challenge, Ray was the fourth person from the blue team to have his dish judged by Ramsay and went up against Ja'Nel. Before tasting his dish, Ramsay announced that he was the oldest competitor in the show's history. He served his veal stuffed with prosciutto, which shocked Ramsay for the presentation, but was praised for being cooked to perfection. He and Ja'Nel scored a point for their respective teams.

The blue team eventually lost the challenge 4-5. They were punished with an eight-hour school bus ride from Las Vegas to Hell's Kitchen, in the desert, without air conditioning. Ray was annoyed by Sebastian 's constant talking during the punishment. When the bus stopped in the middle of the freeway, he asked if they were kidding him. During the break, he declared that losing a challenge would not happen again for the blue team and that he could not wait to get in Hell's Kitchen and prove that men could cook better than women.

The next day, during prep, the men were focused and working as a team. Ray tried to help Jeremy who was completely lost, while acknowledging that he was very inexperienced and that he was concerned about him, especially when Jeremy revealed he did not know how to make polenta.[1] During dinner service, he was at the garnish station with Jeremy. On the first attempt at appetizers, he expressed disappointment when the risotto was undercooked and that the entire team had to taste it. After Michael and Barret's ejections, he was dedicated to the meat station with Anthony. After Jon was kicked out, Ramsay asked him to taste the latter's overcooked risotto. Still, he used his fingers to do it when there were spoons everywhere, much to Anthony's dismay. Because of that, he became the seventh person from the blue team to be kicked out. The blue team eventually lost the service, and they were asked to nominate two people.

He was not nominated for elimination.[2]

Episode 3[]

The following day, some soldiers from the US army came to Hell's Kitchen, went to the dorms, and gave a very brutal wake-up call to the chefs by screaming and yelling to get up. When that happened, Ray felt like he was at boot camp. When the teams were challenged to climb up the wall, the soldiers flipped the wall over, revealing a shorter wall divided into blue and red sections. However, he was still not reassured as he acknowledged that even though the wall was shorter, it still was eight feet tall and that they would have to get over it. The blue team managed to get 37 lobsters in their bucket, compared to the red team's 31, and while celebrated, he said the blue team needed that win and to beat the girls and could not wait to take the day off. However, they did not win anything as that was only the first part of the challenge. Back to the dorms, he was very empathic and felt the pain for Anthony after looking at the latter's sprained ankle.

When Ramsay was introducing the Lobster Cleaning Challenge, Ray was confident as coming from Boston, lobster was all his life while calling the challenge a no-brainer. During the challenge, he was on his own. He scored at least one point, but the blue team eventually lost the challenge 8-11. They were punished by taking a delivery of thousands of pounds of halibut and branzino, prepping them for the next service, and eating fish head soup for lunch.

The next day, during prep, Ray calmed down an argument between Michael and Jeremy, saying it was not time to talk about shit as it needed to be done. During dinner service, he was at the meat station with Jon. At one point, he expressed dismay when Christian revealed his scallops were not done after Ramsay asked for them. Later, he and Jon were confident that the lamb was beautiful, even though Ramsay schooled them for inconsistent timing. However, it was returned for being raw, and the blue team was kicked out of the kitchen. Both teams were named joint-losers, and they were asked to nominate two people each.

Episode 4[]

The following day, all the chefs went outside for the next challenge and saw Ramsay, dressed in a running suit, and many runners waiting in front of a start/finish line. During the HK3K Service Challenge, Ray was not seen much, but he and Jeremy succeeded in sending all the appetizers to the dining room. At one point, he answered Ramsay that Zach was taking a salmon piece from an old tray. When Zach lied about it, he reminded him that Ramsay was not stupid and knew what was going on. The blue team eventually lost the challenge. They were punished by cleaning the HK3K course, including erasing the paint, breaking down the checkpoints, picking the trash, and finally, prepping both kitchens ahead of the following service.

Before the punishment, Ray expressed disappointment about the loss and did not give any excuse to Ramsay, only answering that they lost. But, he did agree with Michael's request that Ramsay read the tickets slower. The next day, during prep, he calmed down an argument between Michael and Dan.

During dinner service, Ray was on the appetizer station with Barret. When Ramsay called the first ticket, he did it very slowly, which he answered was perfect, much to Ramsay's dismay. He gave three minutes on his first risotto but corrected himself immediately by giving two minutes. When Ramsay asked for the risotto, he brought it to the pass, said he did not know why they should not get perfect risottos every time, and the risotto was accepted. He and Barret celebrated by giving each other a high-five, but later, it came back because of undercooked rice. Ramsay berated him, took his dirty pan containing rice that was still stuck to it, and showed it to the team. He started to make another one, but Ramsay called him "granddad" while urging him to hurry up. After, Ramsay told him to keep his pan down, which he answered that he understood. Then, Ramsay urged him to move quicker, and after, his second attempt was deemed delicious by Ramsay, who urged him to keep the bar up as he finally raised it and stayed focused. He was proud and eager to cook some more shit before apologizing for saying a curse word and was congratulated by Jon for bouncing back. Later, he and Michael gave each other an air kiss while waiting for Dan's lamb. The blue team won the service for finally showing some progress.[4]

Episode 5[]

While the men were toasting their first service win back in the dorms, Ray motivated his team by saying it could be done.

Before the Protein Identification Challenge, Ray was confident as he claimed having trained all his life for a palate challenge and that he could tell the difference between a cat and a dog. During the challenge, he was paired with Anthony, and they were the fourth pair to compete for the blue team. On Jeremy and Barret's turn, he suggested the duck as he knew it was the right protein from behind them. On their turn, they landed on the veal chop. Still, after closing his eyes and remembering his childhood memories, he knew exactly it was veal. They got it correctly on their first attempt, while he added that there was some things you know. On Jessica and Nedra's turn, when those two incorrectly guessed kangaroo, he jokingly said that he thought it was a kangaroo. Later, he jokingly suggested tilapia to Ja'Nel and Jacqueline.

The blue team lost the challenge 10:33-6:37, and they were punished by taking deliveries of wheat flour, grinding it, and making bread from scratch. During the punishment, Ray was asked if the mortars & pestles they were using were like grinding when he was a kid by Dan. Later, while milling, he declared that he was too old for that before cracking some of it his bones in his back and neck. When Jeremy came back from the hospital late that night, he could not believe that the cause of his collapse was the fact that he was not eating and jokingly said that the doctor needed a second opinion, which made his other teammate laugh.

During breakfast service, Ray was on the scrambled eggs station with Zach. He accidentally dropped some eggs on the counter on the first order while declaring his pans were too small. Ramsay asked him to stop, and he asked the latter for a bigger pan before Michael gave him one. He responded by saying he loved him and restarted his eggs. When he sent his eggs to the pass, they were under seasoned. Ramsay was furious, ordered the team to taste it. When he said that he would put salt and pepper in it, Ramsay was dismayed and stated that he needed a doctor. So, he started again, succeeded in bouncing back, and complimented Ramsay, who told him to make every one of them like the one he just served. The blue team won the service as they served all their tickets before the red team and celebrated by hugging each other. While celebrating, he declared he was really stoked.[5]

Episode 6[]

During dinner service, Ray was at the fish station with Dan. When the first ticket was called, he was asked by Dan how many orders of scallops were called, and he was annoyed when the latter was constantly requesting to cook and asked him for a pair of tongs. When he brought his first scallops to the pass, they were overcooked. Ramsay was furious before criticizing him for having his senior moment every time they started a challenge or a service. He ordered him to get it together, he started over, and his second attempt was accepted. When they began working on entrées, Dan was highly annoyed by him taking total control of the fish station and not letting him do one thing. He was also annoyed by Dan's behavior, saying that he should take his tampons, put on a red jacket, and cook with the red team. Then, those two started arguing while cooking, which annoyed everybody, and Ramsay wanted Dan and him to stop fighting. When he brought his bass to the pass, he realized that he forgot it was halibut on order instead. Ramsay scolded him for forgetting the order, and the blue team was ordered to start the table again. He pushed Dan away one more time, leading Ramsay to call them "dumb and dumber" and fuckwits, and to order them to talk to their teammates. When Barret entered the kitchen, he told he needed two minutes on the halibut, and Ramsay asked him for a time, which the latter answered that he was ready despite having a hiccup earlier before reassuring that he had it. However, the halibut was overcooked, much to Anthony's dismay. Ramsay berated him and Dan for screwing him after waiting for a long time. Also, he was accused of sabotaging Anthony by Ramsay, and he and Dan started over one more time. On his third attempt at the same order of halibut, he got a lot of pressure from Ramsay, and it turned out raw, much to Zach's dismay. Ramsay was furious and kicked the entire blue team out of the kitchen. While going back to the dorms, he was disappointed because he thought he had it.

Both teams were named joint-losers, and they were asked to nominate two people each. During deliberation, Ray was furious, called Dan a bitch for just standing there and declared that the station was perfect and that he should not go home over some bullshit. Then, Dan came out of his bedroom, told him to shut up, and after telling that he did not sound like a child, he responded that he sounded like a little bitch. The two of them argued over the disorganization of the fish station, with Barret taking a little part of it at one point before Zach calmed them down.

Ray was the blue team's second nominee for elimination, with Dan being the first. They joined Mary and Nedra from the red team. During his plea, he convinced Ramsay not to give up on him and had another argument with Dan before Nedra stepped in. In the end, he was asked to give his jacket to Ramsay along with the three other nominees, and after Ramsay declared that he would do something he never did before, the episode ended as a cliffhanger.[6]

Episode 7[]

Continuing from the previous episode, Ray became on probation, along with Mary, Nedra, and Dan, where he would have to earn his jacket back by the end of the following service, or he would be history. He was not convinced that Dan would get his jacket back in the dorms because he was acting like a little bitch.

The next day, both teams went to the dining room, where Ramsay introduced the Chinese Dish Creation Challenge and the Samurai statue that was placed there. When the countdown began, everybody ran to the plate of fortune cookies in front of the statue. When they arrived, it started moving, making everybody flinch and laugh. Then, Sous Chef James brought the blue team's basket of giant fortune cookies that would be carried with chopsticks. During the first part, Ray volunteered to man the board along with Dan, much to Ramsay's concern as both of them were on probation. At one point, he was annoyed with Dan asking questions about which ingredients would go. In contrast, he thought Dan went to Asia for a year. In the end, they succeeded in putting five ingredients for all of the dishes, with the dumplings even having a sixth one.

During the second part of the challenge, Ray worked on the dumpling course. He was the fourth person from the blue team to have his dish judged, his crab dumplings were praised for the presentation, but he lost the round to Cyndi. The blue team won the challenge 4-3, they were rewarded with a paintball activity, and he earned his jacket back, which he kissed and hugged it while declaring it would stay with him. During the reward, he and his teammates decided to target Dan.

During dinner service, Ray served dim sum tableside. On appetizers, he was behind, so Ramsay urged Jean-Philippe to make him speed up. He said his teammates were killing him because he was on his own. So, he went back to the kitchen and asked for a new risotto because the first one was becoming cold, much to Ramsay's dismay, and a risotto refire was called. Both teams were named joint-losers, and they were asked to nominate their two weakest chefs each. During deliberation, he was considered by Barret and Anthony for backing up on tableside. Still, he did not think that he deserved to be nominated as his tables with dim sum had a good time because he was cooking for a long time and still thought he was better than everybody else.

Ray was the blue team's second nominee for elimination, with Dan being the first. They joined Jessica and Susan from the red team. During his plea, Ramsay declared that he was tired of seeing him be nominated and being shocked that he was despite not cooking in the kitchen. He retorted by saying that he was looking for a chef or line cook. Still, Ramsay corrected by saying that he was looking for a leader before adding that he could not even control a tableside trolley. He survived elimination.[7]

Episode 8[]

The following day, both teams went to the dining room. They were taken outside by Ramsay, who introduced the Farm Animal Challenge. During the first part of the challenge, Ray was the fifth person from the blue team who entered the pen. He chose a turkey and pasta combination by vigorously catching his turkey by the neck. During the second part, he revealed that he was doing a pasta dish with turkey meatballs and declared that he was proud of his meatballs as his friends loved them, even considering opening a meatball factory. He was the first person from the blue team to have his dish judged, presented his turkey meatballs with pasta. Ramsay joked that he had a lot of balls, but they were criticized for being dry, and he lost the round to Nedra. The blue team lost the challenge 2-3. They were punished by putting together a petting zoo and ensuring that the animals would be comfortable for the next service.

During the Family Night dinner service, Ray was at the burger station. At one point, he sent a cold cheeseburger for Ramsay's son, was called fuckwit, and berated by Ramsay. The latter slammed the counter while reminding him that it could not happen at that stage of the game. He continued to be schooled by Ramsay about having the audacity to send a cold cheeseburger to his son and declared that he would remember that bad event for many years. He sent his second attempt, which was accepted, with Ramsay's family being very satisfied. Then, he told Jon that he regretted sending the cold burger, but Zach motivated him by telling him to keep pushing. After many mistakes, the blue team received help from the red team, and the service was completed.

The blue team lost the service by a mile, and they were asked to nominate their two weakest chefs. During deliberation, Ray was considered by Michael for the cold burger to Ramsay's family. Still, he said that he cooked all of his burgers correctly except for the one which happened to be for Ramsay's son, and he declared that he was not the weakest chef.

He was not nominated for elimination.[8]

Episode 9[]

The following day, both teams went to the dining room, where Ramsay introduced the Steak Creation Challenge. During the challenge, Ray's pan caught on fire, much to Ramsay's dismay. He was the last person from the blue team to have his dish judged, served his rib-eye with Grand Marnier sauce, which was unexpected by Ramsay. Despite the steak being slightly overcooked, the Grand Marnier was deemed nice. However, he lost that round to Mary and was told by Ramsay that he would have nailed his dish if the steak was cooked medium-rare.

The blue team lost the challenge 3-4, and they were punished by taking a delivery of a giant cut of beef and prepping it for the next service. During the punishment, Ray was worried about carrying the cow but not butchering it. Later, he gave instructions to his teammates on how to cut it as he used to work at a place where they were doing that, much to Zach's annoyance. During the prep break, he was targeted by the latter for screwing up the blue team during the challenge, which he admitted. When Zach continued to have an arrogant behavior, he firmly told him it was enough, without success, so he got up to confront him. Still, both of them calmed down and shook hands. He added that nobody could beat him up like he could beat himself up and did not need anybody to remind him that he screwed up as he was already feeling the pain of being a loser. Finally, he concluded by promising that he would do what he would be supposed to do.

During the Steak Night dinner service, Ray was at the meat station with Michael. At one point, he was dismayed when Barret forgot to serve a salad as they were not the first day any longer. When the blue team moved on to entrées, Ramsay expected him to lead the meat station while urging him not to have a senior moment. He thought that Ramsay liked him as they were almost the same age, Ramsay urged him to speed up, but the New York strip was raw, much to his dismay. He admitted that he cooked it, Ramsay berated him and Michael, and both decided to switch leadership commitment. When he told Michael not to rush the steaks, the latter was annoyed. When Michael announced that they would need three and a half minutes, he was handed the table tray in his hands by Ramsay, and they had to start the entire order again. Later, their second attempt at the New York strip was accepted, and the blue team won the service.[9]

Episode 10[]

The next day, Ramsay showed the chefs pictures of him during his two favorite passions, cooking, and soccer, with Ray stunned how a cute kid in the picture became a hard ass in the picture. Then, a picture of him as a teenager was shown, with Zach calling him a mobster. During the Quinceañera Planning Challenge, he explained he would do a ravioli. Near the end of the cooking, Jon told him to put the pasta in the water as he would not make it. He made the pasta dish, was the third person from the blue team to have his dish judged, and went up against Nedra. He made homemade ravioli with three different types of cheeses. It was praised for having a good sauce. He won that round over Nedra and called himself the ravioli king. Before the steak round, he wanted to get the point as his team only won one challenge so far.

The blue team eventually lost the challenge 2-3. They were punished with decorating the dining room for the Quinceañera under Josette's instructions. Ray said that he never put dolls together during the punishment, even saying that it was not part of his Marine Corp chores. Later, he stopped Barret from breaking a chair, even though the latter was joking. When he asked when the punishment would end, Anthony snarkily said when they died.

During the Quinceañera dinner service, Ray was at the meat station. When Jon and Anthony were working on their appetizers, he jumped in to help them out, but the former said that they did not need the help. However, Jon told him to walk them up. Both teams were named joint losers, and they were asked to nominate two each. During deliberation, he agreed with Jon to nominate Barret and Zach.

Episode 11[]

Continuing from the previous episode, Ramsay asked the blue team to rate Zach's performance, and Ray claimed it to be a 3. Back at the dorms, he did not care about Zach's poor attitude.

Before the Presentation Challenge, Ray teased Jean-Phillipe's accent after seeing the latter in a vacuum air chamber with millions of papers flying around. During the cooking, he announced that his protein would be lobster as everywhere in Boston consisted of a baked stuffed lobster, stating it was like having water with their dinner. Despite warning that if the dish were not stunning, it wouldn't be tasted, Ray felt confident, stating his lobster was big, vibrant, and bold. Still, Jon was unimpressed, saying that it was not the Party Portions Challenge. His dish was not chosen to be judged due to looking like something from a Science fiction show, much to his disappointment. The blue team lost the challenge 257-269, and they were punished by cleaning up the dorms. During the punishment, he disgustingly found cookie crumbs in one of the red team's beds before concluding that it was Nedra's along with Anthony.

When Ramsay announced a dinner service that featured military soldiers, Ray felt touched as he had boatloads of experience with the marines. During prep, he offered his assistance to Zach, but the latter did not respond. During the Private dinner service, Jon felt he was his bumbling self again as he was not doing much to help. When it came time to plate, Ramsay rejected a move he was about to commit, asking him where his brain was. He was in charge of the lobster linguine course, and both he and Nedra agreed on seven minutes. However, he was not directing his team to the dismay of Ramsay, and Jon wanted him to step it up. He decided to plate his course by himself for some reason, frustrating Ramsay as four other chefs could help him. Jon accused him of being on another planet. Despite Sous Chef James reminding him to use his team, he wanted to make sure there was an even amount of lobster. Despite Zach trying to help him out, he and Ramsay noticed that the former's plate had little pasta and no lobster, frustrating him before asking if he had to stand behind Zach from now on. Ramsay showed the blue team another plate of inconsistent pasta. Fed up, he kicked Zach off the plating, and the latter told him to eat shit and die in response. Despite Ramsay being frustrated by the difficulty on a simple course, he got his course out not far behind Nedra, arguing that it was hard to go faster than he could. Then, Jean-Philippe came back with a plate that had raw pasta. After the third course was served, he struggled with the refire from the second course, as Jean-Philippe called it embarrassing. He asked Zach to finish off the lobster in the butter. Still, in retaliation for what happened earlier, Zach decided to sabotage him by cooking the lobster in cold sauce. When the refire was sent up, Ramsay rejected the cold lobster, and while Zach was happy his plan worked, he was pissed at the former for sabotaging him. After the fourth course was completed, he finally got the third attempt accepted.

Both teams were named joint losers, and they were asked to nominate one each. During deliberation, Ray argued that he did a better job than Zach and that he led a team more than often and refused to be nominated again.

Ray was named as the blue team's nominee. When Ramsay asked him if he was better than Zach, he said that he kicked the latter off due to the inconsistent plating and that Zach purposely sent him cold lobster on the refire. So, he and Zach were called up along with the red team's nominee, Nedra. During his plea, he felt he was getting stronger and more comfortable and felt he was more honorable than Zach. He was eliminated for his quiet leadership and not showing his full experience. Before leaving, Ramsay said he respected him for coming to compete. During his exit interview, he called that night a disappointment. Still, he knew he was leaving with his integrity and called his run a hell of a time despite being the oldest chef to compete in the show's history.

Ramsay's comment: "Ray's age was not the issue. It was his cooking. And I was not getting any younger waiting for him to improve." [11]

Episode 21/22[]

Ray was one of the ten chefs that returned for the final dinner service. He was Ja'Nel's final pick, after Cyndi, Susan, Zach, and Amanda. Back at the dorms, Ja'Nel left after getting frustrated with her team disliking her menu. He compared the situation to watching a football game from the sidelines.[12]

During prep, Ray was called one of Ja'Nel's secret weapons by Zach. Still, after putting his drink under the counter and telling Zach where it was, Cyndi asked how they got stuck with two idiots, referring to himself and Zach. At the same time, Susan feared they had two bad apples in the bunch. During dinner service, he was at the appetizer station with Cyndi. At one point, Ja'Nel told him to add more dressing to the salad, dismaying Susan as it would be a long night if they could not even get salads right, but he was able to get it fixed. Later, Ja'Nel looked to him for the second to last order of appetizers, only to reject his salads for being overdressed as an annoyed Ramsay told him to wake up. While he felt Ja'Nel was getting nitpicky with her perfectionism as blue diners grew impatient, his second attempt was accepted. Ja'Nel eventually won the finale over Mary.[13]

  • After his appearance on the show, Ray returned to his pizzeria, The Purple Eggplant, which closed in May 2019.
  • He is currently Executive Chef for the Unidine Corporation.

Trivia[]

  • At age 51, he is the oldest contestant in the season and in the history of the show. He is also the only contestant to compete while in their 50's.
  • He is the fourth contestant to have a military background before coming to the competition, along with Dan (also from Season 11), following Bobby (Season 4), Joseph (Season 6), and Guy (Season 10).
  • He, Dan, Mary, and Nedra (Season 11) are the only four contestants to receive an "on-probation" phase from Ramsay.
