The One Time Challenges are one-shot challenges used in Hell's Kitchen.

These challenges are ones that were only used once in the show's history.

History[]

Season 1[]

Episode 4 featured a challenge known as the Dining Table Challenge. It happened when there were eight chefs left, four on both teams. The chefs had five minutes to recreate Jean-Philippe's table by memory by the exact placement of cutlery, plates, and napkins for that challenge. The blue team won the challenge as they had only one mistake compared to the red team's four. They had a spa day up in the dorms while the red team polished the glass and silverware and had to prepare the dining room thirty minutes before dinner service began.[1]

Episode 7 (Fruit Flambé Tableside Challenge)[]

Episode 7 featured a challenge known as the Fruit Flambé Tableside Challenge. It happened when five chefs were remaining, and it was their first black jackets challenge. Ramsay gave the chefs five minutes to recreate his fruit flambé dessert. Jimmy won the challenge as he was the closest of the five to Ramsay's original dish. He won a helicopter tour of Los Angeles and took Michael with him, while the rest of the chefs cleaned the entire dining room ahead of the next dinner service.[2]

Season 4[]

Episode 10 featured a challenge known as the Main Protein Challenge. It happened when there were six chefs left. That challenge had the six chefs cook a dish in 45 minutes, using a protein they received from a covered dome. Jen's sliced ribeye was deemed the best, and she won the challenge. She went to Las Vegas to meet Season 3 winner Rock and had her dish featured on the following night's menu. She picked Corey to come with her. The remaining chefs participated in Delivery Day.[3]

Season 5[]

This season featured two one-time challenges.

Episode 3 (Meat & Cow Challenge)[]

Episode 3 featured a challenge known as the Meat & Cow Challenge. It happened when there were fourteen chefs left, seven on both teams. This two-part challenge tested the chef's knowledge of beef cuts and placements on the cow. For the first part, one chef from each team must correctly guess eight cuts of meat on the table. Once they got them all correct, the teams must then participate in part two. This part had the chefs correctly place the meat cuts on where they think it was on the cow and ring the bell. However, if Ramsay said they got a certain amount wrong, another chef must correct their teammates' mistakes. The blue team finished all two parts first and won the challenge. They went to the Sunset Winery at Santa Ynez for wine tasting and a steak dinner. The red team butchered two sides of beef and ate cow offal.[4]

Episode 11 (Borgata Signature Dish Challenge)[]

Episode 11 featured a challenge known as the Borgata Signature Dish Challenge. It happened when there were four chefs left. After visiting the Borgata Hotel, Ramsay gave the final four 45 minutes to cook a new signature dish for the hotel. Andrea's green tea-crusted tuna with black sesame rice cake was deemed the best, and she won the challenge. Andrea's reward was immunity at the subsequent elimination.[5]

Season 6[]

Episode 6 featured a challenge known as the 700 Calorie Challenge. There were eleven chefs left, six on the blue team and five on the red team. For that challenge, both teams had 45 minutes to cook a three-course meal that contained a total of 700 calories or less. To help the chefs with the calories, Ramsay brought in two nutritionists. Each team worked in pairs, but Amanda worked alone as the red team was down a chef. Kevin and Robert tied the appetizer round with Tennille and Suzanne. Still, Ariel Contreras-Fox and Sabrina won the entrée round over Van and Jim. Lastly, Amanda beat Dave and Andy on the dessert round. The red team won 2-1 and spent the day at Venice Beach with volleyball lessons from Annett Davis. Their dishes were featured on the menu that night, and they each received Vitamix blenders and cookbooks. The blue team had to gather the ingredients at a local supermarket and rode on a Conference Bike to get there. They also had to prep both kitchens for that night's service.[6]

Season 7[]

This season featured two one-time challenges.

Episode 6 (Mother Sauce Challenge)[]

Episode 6 featured a challenge known as the Mother Sauce Challenge. There were eleven chefs left, six on the blue team and five on the red team. Ramsay gave the chefs thirty minutes to create five dishes that used the five mother sauces in cooking. These included tomato, Hollandaise, béchamel, velouté, and demi-glace. While the chefs worked on their own dishes, Autumn and Ed cooked as a pair because the blue team had an extra person. To help judge the dishes, Ramsay invited his mother and his wife. Fran beat Salvatore on the tomato sauce round, while neither Jay nor Siobhan scored on the Hollandaise sauce. Autumn and Ed beat Holli on the velouté sauce round, but Nilka won the demi-glace sauce over Jason. Lastly, Benjamin won the béchamel sauce over Scott, ending the challenge in a two-point tie. Ramsay gave the blue team the win as he deemed Jason's dish the best one that did not score a point. The blue team spent the day at Ye Olde King's Head in Santa Monica and received their own cookware set. The red team had to deep clean the kitchens and prep for that night's service.[7]

Episode 8 (Gourmet Sandwich Challenge)[]

Episode 8 featured a challenge known as the Gourmet Sandwich Challenge. It happened when there were nine chefs left, five on the red team and four on the blue team. The chefs had thirty minutes to create their own gourmet sandwiches. Because the red team had an extra person, Siobhan's dish was dropped from judging. However, after the challenge ended at a three-point tie, Ramsay looked at Siobhan's dish. Unfortunately, it was deemed better than Fran's sandwich, and Ramsay gave the blue team the win. The blue team went to the California Central Wine Country for a wine tasting. In contrast, the red team made peanut butter by hand for an amuse-bouche special.[8]

Season 8[]

Episode 6 featured a challenge known as the Salad Challenge. It happened when there were ten chefs left, five on both teams. Both teams had thirty minutes to create their own inspirational salad entrée. Bon Appétit's senior food editor Sarah Tenaglia was invited as a guest judge. The best dish would be featured in the magazine. After the challenge ended as a two-point tie, Ramsay called on Gail and Rob for their salads as they were the best of their respective teams. In the end, Rob's pan-seared diver scallop salad with roasted portabella and grapefruit vinaigrette was deemed the best, and the blue team won the challenge. The blue team went to The Getty Vella for lunch. Not only did Rob receive a photoshoot for Bon Appétit, but his salad was featured in that night's service. The red team prepped for that night's service and ate a flower salad.[9]

Season 9[]

Episode 12 featured a challenge known as the Time Limit Challenge. There were six chefs left, three on both teams. For this challenge, Ramsay held a thirty minute challenge designed to cook three dishes in three different time intervals. One thirty minute dish, one twenty minute dish, and one ten minute dish. Each chef from each team went into the kitchen one at a time and every ten minutes, the other chef would join them. Jennifer beat Tommy on the thirty minute dish, but Paul beat Elizabeth on the twenty minute dish. Lastly, Will defeated Elise on the ten minute dish. The blue team won the challenge 2-1 and had a shopping spree at Ted Baker’s. The red team prepped for Charity Night and set up the tables.[10]

Season 12[]

Episode 5 featured a challenge known as the Creative Memory Challenge. It happened when there were sixteen chefs left, eight on both teams. For that challenge, Ramsay had both teams quickly match a pair of ingredients for their four dishes in five minutes and pair it up with four proteins. These included chicken breast, ahi tuna, swordfish, and pork chop. Then, both teams had thirty minutes to cook their dishes. Both teams work in pairs for the dishes. The pairs of Melanie and Rochelle tied the chicken breast around with the pair of Anton and Richard. The pair of Chris and DeMarco won the pork chop round over the pair of Jessica and Kashia. In contrast, Sandra and Beth won the ahi-tuna round over Jason and Gabriel. Lastly, the pair of Joy and Bev beat the pair of Scott and Ralph on the swordfish round. The red team won the challenge 3-2 and spent the day at Laguna Beach with lunch at the 5-star Studio at the Montage. The blue team harvested honey and made 100-pounds of honey taffy.[11]

Season 13[]

Episode 12 featured a challenge known as the Amuse Bouche Challenge. It happened when there were seven chefs left, four on the red team and three on the blue team. Both teams had twenty minutes to create two servings of their own amuse-bouche. Because the red team had an extra person, Sterling sat out. Tanya Steele of Epicurious came in as a guest judge. She and Ramsay scored the dishes on a 1-5 rating, ten being the total. Both La Tasha and Bryant scored seven each, while Santos scored seven over Roe's four. Lastly, Sade's nine beat out Jennifer's five and the blue team won the challenge 23-16. They went to Catalina Island and had lunch at the Blue Water Grill while the red team took in coconuts and prepped them.[12]

Season 15[]

This season featured two one-time challenges.

Episode 4 (Duck Challenge)[]

Episode 4 featured a challenge known as the Duck Challenge. There were fifteen chefs left, eight on the blue team and seven on the red team. To test the chef's ability to cook duck, Ramsay had both teams go out in boats to collect rubber duckies for their dishes. Each chef went into a boat with someone from the opposing team, and they must agree on the ingredients. After ten minutes of collecting ingredients, the chefs had forty minutes to cook their dishes. Kevin sat out to even the teams. Josiah Citrin came in as a guest judge, and he and Ramsay judged on a scale of 1-4, with eight as the total. The blue team won the challenge 32-30 and were rewarded with a private yacht and eating dinner at the Penthouse Restaurant with Ramsay. The red team prepped ducks for the following service and ate duck feet sandwiches for dinner.[13]

Episode 10 (Breakfast Challenge)[]

Episode 10 featured a challenge known as the Breakfast Challenge. It happened when there were nine chefs left, five on the red team and four on the blue team. Both teams had thirty minutes to create four breakfast-inspired dishes. These included vegetarian, meat, seafood, and sweet. Because the red team had an extra person, Ariel and Jackie made their own vegetarian dishes but come to the judging, the red team sat out the former's dish. Suzanne Tracht and David Lefevre were invited as guest judges. The trio scored each dish on a 1-3 rating, nine being the total. Ashley scored a perfect nine on the sweet round over Manda's three, but Dannie scored five over Chad's three on the seafood round. Then, Frank and Kristin tied on the meat challenge with eight. Lastly, Jared's perfect nine beat Jackie's three on the vegetarian round, and the blue team won the challenge 25-23. They went to Palm Springs to ride ATVs while the red kitchen cleaned up the kitchens and made mimosas for the Brunch Service.[14]

Season 16[]

Episode 7 featured a challenge known as the Southern Cuisine Challenge. It happened when there were twelve chefs left, six on both teams. Both teams had forty minutes to cook six Southern-inspired dishes. Chris Hastings was invited as a guest judge. Shaina beat Johnny on the hanger steak while Wendy and Paulie tied on the catfish. Then, Ryan won the fried chicken round over Matt, while neither Heidi nor Koop scored on the shrimp dish. Andrew defeated Heather on the pork chop, and while neither Kimberly nor Devin scored on the trout, the red team won the challenge 3-2. They went horseback riding experience at Gibson Ranch and had lunch from the Wings and Waffles food truck. Also, Wendy's spicy fried catfish with bacon peppered gravy, sautéed kale, and fried red potatoes were added to the menu for that night's service. The blue team prepped for shrimp and grits and prepped both kitchens for that night's service.[15]

Season 18[]

Episode 4 featured a challenge known as the Winter Soup Challenge. It happened when there were fourteen chefs left, seven on both teams. Both teams had forty-five minutes to cook their own soup, but because the Veterans won the pre-challenge, they received a ten-second head start to grab their ingredients. Traci De Jardins and Brian Boitano were invited as guest judges. The trio scored each dish on a 1-3 scale, with 9 being the total. The Rookies won the challenge 51-41 and received an overnight trip to L'Horizon at Palm Springs. The Veterans had to clean all 30 tons of the snow off the front entrance.[16]

Season 20[]

Episode 11 featured a challenge known as the Protein Match App Challenge. It happened when there were eight chefs left, four on both teams. Each team had a choice of cooking one of four proteins: lobster, filet, pork chop, and New York striploin. First, one chef from each team must pick two ingredients that they and their rival would cook with using a selection app, with four in total. Then, they had 45 minutes to cook their dish with the chosen ingredients along with a wild card ingredient from a blind pick. Richard Blais came in to guest judge. Steve and Brynn tied on the lobster round, but Megan beat Kiya on the filet. Antonio scored on the pork chop over Emily, and neither Sam nor Trenton scored on the New York striploin. The score was a two-point tie, but the blue team won as Steve's grilled lobster dish was deemed the best of the day. The blue team had a spa day while the red team cleaned the dorms.[17]

Trivia[]

  • In total, there have been seventeen challenges that were only used once in Hell's Kitchen.
  • Seasons 1, 4 and 5 are the only seasons to feature one-time challenges during the black jacket phase.
    • Season 1's challenge marked the first black jacket challenge and individual challenge introduced in the show.
  • Seasons 1, 5, 7, and 15 are the only seasons to have two one time challenges.
  • The blue team has won ten one-time challenges throughout the series.[1][4][7][8][9][10][12][13][14][17]
