The eighteen new chefs arrived at Caesars Palace in Las Vegas as Ramsay wanted them to see the first official Hell's Kitchen Restaurant. Marino greeted the chefs at the front doors and took them inside the restaurant. As the chefs drank champagne, they got to know each other. Eventually, Ramsay came in, explained that the Hell's Kitchen Restaurant was built on the show's eighteen-season legacy, and revealed that it was one of the highest-grossing restaurants in America. Ramsay revealed that he brought them to the restaurant for inspiration because the winner of that season would become the Head Chef at the brand-new Hell's Kitchen Restaurant in Lake Tahoe. Ramsay admitted that they would not be competing in the real Hell's Kitchen restaurant due to the demand, so they would be going to Los Angeles to compete. The chefs returned to the bus to head to the airport, Marino handed out the tickets, and once arriving at the strip, they see a helicopter revving up, with Ramsay taking it and flying off. As the chefs went into the airport, Nikki was pinching herself as she could not wait to board the plane. After some time, the chefs were called in for boarding, but as the chefs walked through the doors, they found themselves standing inside the restaurant. Ramsay appeared in his chef jacket, revealed that for the first time in the show's history, Hell's Kitchen would take place in Las Vegas and had some performers do some shows for the chefs. While the chefs could not do any of the tricks they saw, they reaffirmed that they could indeed cook to Ramsay.
During the Signature Dish Challenge, Nikki went up against Declan, they were the seventh pair to play for their ingredients and received New York striploin, corn, and couscous. She clumsily moved around the kitchen during the cooking as she struggled to plug in a blender, the cap flew away from her, and she struggled to open a fridge. She revealed that she only cooked for two years and had no training in culinary school, but she said that she didn't need all the experience and that she would be fine with the experience she had, picked up as much as she could and felt she could prevail. She was the first person from the red team to have her dish judged by Ramsay, she tried to balance out the confident side and anxious part, and before tasting her dish, he asked her where her passion came from. She revealed that she was originally a brain injury specialist and did kitchen work as an extra-paying job, but she decided to quit her original job and follow her passion. She made a charred grilled New York striploin with Mexican street corn couscous, pickled red onions, and truffled chimichurri, and Ramsay awarded her four points for being delicious. The red team lost the challenge 27-28, and they were punished by cleaning the Caesar Palace's fountain.[1]
During the Creative Shrimp Challenge, Nikki told Sous Chef Christina about her shrimp dish that used sushi rice, Asian beans, and soy. She knew that her dish had a high risk of failing, but she would rather go big or go home. She was feeling frantic with three minutes left as her components were not coming together as she had hoped. She was one of the two chefs from the red team that made the worst chef dishes, with Jordan as the second, and they were joined by Kenneth and Eliott from the blue team. She was the first chef to have her dish judged by Ramsay and presented her jasmine sushi rice with a chargrilled tiger shrimp. Ramsay saw that she failed to clean it properly and had everybody remind her that it was the first rule of cooking shrimp. Kenneth himself said he would not want to eat shit like that, comparing it to leaving a baby wear a shit-covered diaper all day. Afterwards, Ramsay told her that he would not even put her dish on a café menu, much less his own menu. Despite that, she survived elimination as Eliott's dish was deemed worse than hers. She knew she cracked hard in that competition, but she knew she could cook and wanted to bounce back from this.
Later that day, both teams watched the Sous Chefs explain the menu, but Nikki felt that they were blazing through the menu and that everybody must cook them in the next hour. During prep, she told Mary Lou that she was on fish after the latter asked. During dinner service, she was on the fish station with Lauren. At the start, she sent up a raw lobster tail, frustrating Ramsay. Kori was pissed as her raw lobster tail wasted her perfect risotto, and she took responsibility for her mistake as Ramsay forced her to apologize to Vanderpump. However, when she started to tear up over her mistake, Kori told her not to cry in front of the customers as she should do that in the walk-in where nobody could see her. She got her refire accepted, and Vandepump's table received their order. On the next ticket, she got confused by Ramsay's call out due to his accent and speed and sent up only one order of scallops when two were ordered. She admitted that she misheard Ramsay's call-out and started to tear up when she admitted that she could not keep it together. Frustrated by that, Ramsay took the women into the back pantry and asked her if she was done, but she said she could bounce back. After Ramsay ordered her to get a grip, she refused to throw away the competition on the first dinner service and knew she had to recover. Fortunately, her second order of scallops was accepted, and a wave of appetizers was leaving the red kitchen. The red team won the service.[2]

During the Caesar Salad Challenge, Nikki was pleased to ride on motorized scooters as she had a thing for motorized vehicles. During the challenge, she told Mary Lou to make sure she did not drop the salad when the latter struggled to move. She was seen getting two attempts accepted, and the red team won the challenge 10-8. They were rewarded with a dune buggy experience in the Nevada desert, and during the reward, she saw her driver Fabiola tear through the sand.
When the red team came back from their reward, Nikki was confused after seeing Fabiola in a breakdown and wondered what happened between the reward and now. When the women changed up for service, she hoped Fabiola would get her head on straight as the latter must be in the kitchen no matter her health. During dinner service, she was on the garnish station with Kori. Even though she said that garnish was not ready, Jordan walked the steaks up to the pass. Then, she got confused when Jordan sent up a steak for Apolo Ohno's table when a Wellington was on order. The red team lost the service, and they were asked to nominate two people for elimination. During deliberation, she nominated Lauren, believing that the latter was behind that night, with Brittani and Kori in agreement. Then, Jordan nominated her based on her lack of experience, with Amber agreeing with the former as she did not know what her leadership skills would be. However, she had no idea why she was nominated when she made improvements since last night and called the women out. While Mary Lou nominated her, she nominated Fabiola alongside Kori and Syann.
Nikki was the red team's second nominee for elimination, with Lauren as the first, but Ramsay was shocked that she was nominated and asked Syann why they nominated her when she made no mistakes that night. Syann explained that the women felt that she would not be a strong chef for them in the long run, but Ramsay was not happy that they were basing it on that, and not for the fact they left half of their diners hungry. She felt that it was not a fair judgment, and Syann admitted that she performed a 1000% better than last night when asked by Ramsay. She survived elimination after Ramsay voided her nomination.[3]

Back at the dorms, Nikki got frustrated being around people who did not believe her capabilities and told the women that they have no idea what she could offer. However, Amber reminded her that she is young and inexperienced, meaning she had no chance of entering a Sous Chef role, but she told Amber not to base her off her resume alone.
During the Wedding Brunch Service Challenge, Nikki was on the avocado toast station. She was not seen during the challenge, and the red team won. They were rewarded with an overnight trip to Lake Tahoe, where they would ride snowmobiles in the mountains and stay at the Harrah's Hotel and Casino.
Before dinner service, Nikki said goodbye to Amber as the latter was reassigned to the blue team. During dinner service, she was on the meat station with Kori. After seeing Brittani struggle on fish, she went over to fish to calm her down and help her cook the refire. However, Ramsay reminded her that she was supposed to be on meat, but when she claimed she was supporting Brittani, Ramsay asked if it was truly needed. Brittani nodded yes, frustrating Ramsay as he called it painful. While working on Sous Chef Christina's VIP table, she reminded them who they were cooking for as she refused to let their Sous Chef down. Both teams were named joint losers, and they were asked to nominate two each.

During the Mexican Cuisine Challenge, Nikki was paired up with Syann, and they were seen getting their ingredients for their chicken taco dish, finishing fast. The red team won the first part of the challenge, and they received 45 minutes of cooking time. They were the second pair from the red team to have their dish judged and went up against the pair of Peter and Josh from the blue team. They made a braised chicken taco with jicama and whole grain mustard slaw, Aarón Sanchez praised them for thinking through on their taco's flavors as everything paid out, and they scored that round over the pair of Peter and Josh. When the score was tied at two each, Aarón called up her and Syann's dish to face off against Adam 's dish. However, they lost the tiebreaker, and the red team lost the challenge. They were punished by cleaning the animals in the pen, scoop up the manure, and clean up the hay bales before that night's dinner service.
During dinner service, Nikki was on the meat station. When the red team was moving onto entrées, she felt anxious as it was the first night she worked alone on meat. After Ramsay called out the order, he asked her for a time, but she hesitated to call out five minutes. That caused Ramsay to doubt her ability to run meat by herself and got more annoyed when it looked like she was about to tear up again. Despite that, she got confident and gave out proper times, saying that she oversaw the grilling station back home. That came out true as her meat was cooked perfectly. Later, she received help from Lauren after Ramsay ordered the latter to do so. Although both teams were named joint winners, Ramsay asked both teams to nominate one person each. During deliberation, she agreed with Syann about nominating Lauren.

Episode 6[]

During the Modern Italian Night Cuisine Challenge, Nikki went up against Adam, and she smashed open a guitar to reveal chicken saltimbocca. She was the fourth person from the red team to have her dish judged and presented crispy fried and mushroom stuffed chicken roulade. It was criticized for tasting dry but praised for the prosciutto crisp and the saw, earning her six guitars. The red team lost the challenge 28-33, and they were punished by making hand-made pasta, prepping tomatoes, and making pesto. During the punishment, she called it gruelling as it was time-consuming.
During the Italian Night dinner service, Nikki was on the appetizer station with Kori. She was not seen that night, and the red team won the service.[5]
Episode 7[]

During the Protein Identification Challenge, Nikki was paired up with Kori, and they grabbed a bison and lobster dish. Per Syann's suggestion, they grabbed bison and king crab legs, but it was half right. They swapped out the bison for filet, making it fully incorrect, but their third attempt, bison and lobster, was correct. Before the blue team went up, she hoped they got overconfident and lose. Near the end of the blue team's time limit, she was getting stressed and prayed the blue team would fail. The red team won the challenge as the blue team failed to beat their 8 minutes and 46 seconds, and they were rewarded with a flow riding experience on top of the Planet Hollywood roof. During the reward, she wiped out due to her long limbs.
During dinner service, Nikki was on the meat station with Jordan. At one point, Syann talked with her about timings so she could drop her salmon, but when the latter went to look for more acceptable pieces of salmon, she got confused as salmon was an easy fish to cook. On their next order, she and Jordan walked up a lamb and New York striploins instead of the requested Wellington. Later, they made the same mistake on the refire, but while she blamed Kori for telling them to fire that, the latter argued that she did not, even though the flashback said otherwise. After a while, the meat station presented an overcooked steak, and it was one of the three mistakes that caused Ramsay to kick the red team out of the kitchen. While going back to the dorms, she was not happy that the red team was kicked out yet again and felt there was no reason they should have these problems by now.
The red team lost the service, and they were asked to nominate two people for elimination. During deliberation, Nikki knew that each one of them made mistakes that night before asking what were the ones that brought the red team down overall. Then, she took the blame for the New York striploins being overcooked.
She was not nominated for elimination.[6]
Episode 8[]

The next day, Nikki saw Absinthe out in the dining room and compared them to robots. During the Craps Challenge, she rolled an M and picked miso and was happy that Jordan picked Thai Chili as it fitted well with their ingredients. During the cooking, Lauren needed her advice on how to prep the monkfish as the former never cooked one before, and with 90 seconds left, she struggled to make a rice cracker. She was the third person from the red team to have her dish judged by Ramsay and presented her miso and monkfish with a crispy rice cracker. Ramsay praised the cracker along with the rest of the dish, and she scored a perfect 5. When the score was tied at 19 points each, Ramsay called up her dish as the best of the red team and went up against Cody's dish. Although she reminded Ramsay about her rice cracker, Cody's dish beated her out, and the red team lost the challenge. They were punished by prepping Wellingtons for both the restaurant and Gordon Ramsay Steak, which included preparing the mushrooms for the duxelle.
Later that day, Ramsay told Nikki that because she had the best dish of the red team during the Craps Challenge, she must host private interviews within the red team and nominate two members for elimination. Back at the dorms, she knew that nobody from the red team has been perfect and hoped she made the right choice. Speaking to Lauren first, she reminded the former of how she needed somebody for support, but Lauren did not believe that and felt that she was on a high horse. Lauren said she only asked questions due to her talkative nature and felt that she should not oversee nominations as the former deemed her the weakest chef. At the patio, she tells Mary Lou that the red team sees her as a team member and not standing out with her voice, but the latter said she did not want to scream at people as everybody back home could hear her. Then, she told Jordan that while she was a strong cook, she also felt that she shuts down whenever she got into her head or was confronted by a negative experience. However, Jordan got pissed by that as she vented to her on how she was surrounded by people who had thirty-plus years of experience compared to her two, but she knew that the former's outburst only proved her point. After finishing her interviews, she struggled with who to nominate.
Nikki named Lauren as her first nominee, and Jordan as her second, forcing the two in the Cook For Your Life Challenge. Back at the dorms, she felt that Amber had a chance to win, but Kori disagreed as the latter could go into her head too much. After seeing Amber and Marc return to the dorms, she realized that with both Jordan and Lauren still downstairs, the red team would lose a member.[7]
Episode 9[]

Back at the dorms, Nikki deemed the red team the final four, and come the next day, she called Declan's Donna persona Double D.
Before the Blind Taste Test, Nikki was the only person that correctly guessed her milkshake, which was peanut butter. She was the first person from the blue team to compete and went up against Declan. She failed to get all four of her ingredients correct, resulting in Jordan getting all three of the punishments. After her turn, Jordan swore that she would beat up her for putting the red team in the hole. During Kori's first turn, she was saved from the punishments, and when the red team had to choose somebody to go up against Marc, she immediately said Kori. However, she got the ice cream dunk, and the red team lost the challenge 8-10. They were punished by taking in delivery of beef and prepping them for Steak Night. During the punishment, she felt embarrassed about costing the red team the win as Jordan continued to be salty.
During the Steak Night dinner service, Nikki was on the fish station. At one point, she coordinated well with Jordan on appetizers, and come entrées, she said that it was her first time on fish after her poor performance on the opening night, but she wanted to see herself redeemed. Fortunately, Nikki got her salmon accepted and planned to make every single portion perfect as Floyd Little enjoyed the dish. Later, she was amazed by Kori's strong performance on meat and compared her to an octopus. The red team won the service.[8]
Episode 10[]

Back at the dorms, Nikki hoped the red team would not turn out like the blue team after seeing Marc and Cody argue.
During the Five Protein Burger Challenge, Nikki cooked the turkey burger, and during the salmon burger round, she presented the red team's sun-dried tomato pesto salmon burger, going up against Marc. While Laurent Tourondel wished for less sun-dried tomatoes, he was happy with the burger overall, and the red team scored over Marc. She was the second person from the red team to have her dish judged and went up against Cody. She made a pancetta and turkey blended burger with pepper jack beer cheese, but while Tourondel liked the dish, she lost that round to Cody.
The red team won the challenge 3-2, and they were rewarded with a trip to Dig This, which included crushing cars in a construction site. During the reward, Mary Lou saw that a dummy wore a blue jacket, and Nikki jokingly compared it to Josh. As the red team smashed cars with the backhoes, she felt a surge of emotions flow through her and called it a great way to let off some steam.
Before dinner service, Nikki chose to go onto the meat station. On entrées, she said the challenge would be getting the entrées for the twelve top in sync and feared how bad it would be to fuck up. Fortunately, her meats were accepted, with Ramsay calling the temperature extraordinary. Later that night, the women noted how she was killing it that night, and Ramsay pulled her into the back pantry. Ramsay told her that regardless of her resume, age, and lack of experience, her cooking that night has been exceptional, and the progress she has made in the last few weeks have been extraordinary. That amazed her as she never expected a chef like Ramsay to give her a one-on-one like that, but she planned to hold onto it forever. The red team won the service.[9]
Episode 11[]

During the Spells Kitchen Challenge, Nikki went up during part one and got pineapple. Then, she decided to send it to the blue team's halibut, smugly wishing them luck on that. She cooked the halibut alongside Mary Lou, but she felt that the avocado would be the hard part of the dish during the cooking as it was difficult to apply it to a halibut dish. Ninety seconds left, she was dismayed that her garnish was too salty, and there was no time to fix it. Before judging, Ramsay asked the red team to drop a halibut dish, and she told the red team to take her plate off due to the salty rice.
The red team lost the challenge 2-3, and they were punished by baking 600 twill cookies. Back at the dorms, Nikki saw how upset Mary Lou was over their loss, and during the punishment, she said it took 30 seconds for them to settle out of the oven. However, the red team got a good rhythm going as she dunked the cookies in the powder.
During the Charity Night dinner service, Nikki was in charge of the pan-seared scallops' course. She told her team to fire three portions each and knew it was an opportunity to show Ramsay she could lead as the rest of the red team cooked the scallops. However, while the red team managed to get their course out, it was soon discovered that she miscounted and that only ten dishes were sent out. That angered Ramsay as Mary Lou could not believe that happened, but the red team was able to get the last two plates out. However, she knew that the course did not come out the way she wanted it. Mary Lou tried to tell her to plate the salad garnish on the risotto course, but she got confused as Jordan and Kori were doing it as well, only for Sous Chef Christina sternly tell her to listen to Mary Lou. On the filet course, she said that one of the filets felt rare, and Ramsay sliced into one to confirm her fear. Although Jordan blamed the red team for screwing her, she felt the latter should stop blaming others for her lack of leadership. As Jordan stormed off to cool her head, she reminded her that it was her responsibility to check over her work, and it was her fault for failing to do that. On the dessert course, she gave the red team roles to accomplish.
Both teams were named joint losers, and they were asked to nominate one each. During deliberation, Kori brought up Nikki's missing scallop dishes, but while she admitted to that mistake, she felt there were problems with delegations that night.

Episode 12[]

The next day, the Sous Chefs took the chefs out to see a VIP show of Criss Angel, making Nikki say it was her childhood dream come true. The chefs saw Angel do his routine to their amazement, and afterwards, Ramsay said there was one more trick Angel had. Angel revealed a 360-spinning box and unveiled it to reveal four models in black jackets, confirming that it was time for the Black Jackets Challenge. That made her tingle as she wanted one and was willing to die for one.
During the first Black Jackets Challenge, Taste It Now Make It, Nikki used cauliflower and butternut squash for the purées, green apple for the salad, and cod for the fish protein. When she presented her dish, she was excited to have Ramsay taste her dish. Although she got both the fish protein and the purées correct, she missed one ingredient on the salad and forgot to add shallots to the dish. She lost the challenge to both Mary Lou and Declan and had to compete in the second challenge.
During the second Black Jackets Challenge, Nikki picked Frank to open his briefcase and received lobster, making her happy about the selection. During the cooking, she felt confident about her dish, but Ramsay warned her not to leave her lobster in the pot for too long as it could go tough. Horrified that she forgot the lobster, she pulled it out of the pot, but the lobster was overcooked to her dismay. With no other choice, she had to chop up her tail and mix it into the polenta. She was the final person to have her dish judged by Ramsay but was not happy with the presentation of the dish. She made a lobster tail polenta, and while it was criticized for having the tail chopped out, Ramsay praised the flavors, making her hope the flavors were enough. She lost the challenge to both Cody and Kori, and was forced to compete in the final challenge against Amber.
Before the final Black Jackets Challenge, Ramsay showed Nikki a picture of her icing a cupcake on Halloween with shown, and she explained that it was taken in a homeless shelter. She explained that food was scarce for them as she never had a home until she was ten years old, and the importance of food was big from the start as she never looked back in regret of her struggles as they shaped her into who she was today. During the cooking, she decided to make a dish she had when they were struggling and would eat boxed potatoes and waxed beans every night. While she said she never appreciated that before, she did now. She was the final person to have her dish judged by Ramsay, was happy with her dish and felt he would see her passion in the dish. She made her take on her mother's cooking, a herb panko-seared pork chop with gruyere and cheddar mixture. Ramsay praised the cook on the pork as it was glistening but felt that she could have added more cheese to the potatoes. When she went back in line, she felt like the pork chop and was confident that it was worthy of a black jacket. Before Ramsay made his announcement, she knew she had come so far since the beginning and wanted to go even further. Ultimately, she lost the challenge to Amber and was automatically eliminated. Before leaving, Ramsay told her that she earned his respect for being the most improved chef in the show's history and offered her a chance to stage in any of his restaurants. She was grateful for the opportunity and left with her jacket on her back. During her exit interview, she received a retrospective montage of her time on the show. Ramsay did not comment on her elimination, and she did not receive the portrait burning sequence.[11]
Episode 15/16[]

During the recap in episode sixteen, Nikki received the portrait burning sequence for the first time since her elimination.
Nikki was one of the seven chefs that returned for the final dinner service.[12] She was Mary Lou's second pick, after Cody, and was followed by Amber and Lauren. Back at the dorms, she was assigned to the fish station.
During prep, Cody checked with Nikki on the scoring of the redfish, and she knew that Mary Lou's bonds would be the deciding factor. Before service began, she was determined to see Mary Lou win. During dinner service, she was on the fish station. At one point, she was seen communicating times with Cody, and after seeing Mary Lou boss them around, she felt the latter was killing it. After service ended, she felt that Mary Lou did an incredible job. Mary Lou eventually lost the finale to Kori.[13]

Nikki appeared with her husband, as one of the past Hell's Kitchen contestants dining, along with Declan and Tara from Season 21 and their spouses. She jokingly asked Ramsay to have her cook during service. Later, she wonders if she's going to be called to the kitchen while Ramsay called the red team to the hot plate.[14]

- After her appearance on the show, Nikki went to work with Amber at MC Hotel in Montclair, New Jersey, before accepting a position at Hudson's Mill in Garnerville, New York in April 2021 as the Executive Chef.
- In January 2023, she joined cb5 hospitality consulting, where she held the position of VP of Development and Culinary Innovation until February 2024.
- In April 2024, she was named Executive Chef at The Drowned Lands Brewery in Warwick, New York.
