Later, he noticed that his lamb was undercooked, but despite telling Michael that he needed another minute, the latter sent up the garnishes regardless. That forced him to reluctantly tell Brendan to send the raw lamb as he would rather have Ramsay get angry over raw food than over another long wait. Indeed, Ramsay got angry over the raw lamb, and kicked the blue team out of the kitchen. Both teams were named joint-losers, and were asked to nominate two each.

Nick was the blue team's second nominee, with Michael as the first, and they joined Mieka and Christine from the red team. During his plea, Ramsay accused him of being colored blind due to serving two raw pork’s, he admitted that he was ashamed over his mistake, and called himself an asset to the blue team, while accusing Michael of being a liability. Then, he decided to keep his head cool as he knew things would be tested, his third attempt was accepted. On entrées, he felt that Brendan's salmon was not ready yet, but the latter ignored him, and sent up raw salmon. Later, he got annoyed at Brendan cooking fish not on order, and that they were not properly cooked. He said that he and T not only bonded over the Bret situation, but also because they were both gay, and T said that her girlfriend would get along with him.

During the Exotic Protein Challenge, Nick chose elk for his dish, and went up against Alison. During the cooking, he felt that Randy's ostrich burger idea made the latter a one trick pony, and wanted the latter to step outside the box. After hearing it, Marino had him tell the table about the delay, and he was mortified about his embarrassing moment. When he tried to help T, Ramsay reminded him that a Sous Chef had to be at the pass, and when he explained that the cut Wellingtons were from being off on garnishes, Ramsay reminded him that he was not supposed to slice them until garnishes were at the pass. The blue team won the challenge 5-3, and he felt that the red team was spiraling out of control, before commenting that it was no surprise how the blue team kept winning dinner services. The blue team was rewarded with a trip at a rock-climbing gym, and having lunch at Bourbon Steak at Americana. During the reward, he jokingly said that Milly was twerking after seeing the latter's underwear, and during lunch, he believed that they could mold Robyn into the chef they needed her to be, and felt that she was having a change of heart. But, if Robyn was not, he would send her home.

Before the Cook For Your Life Challenge, Nick felt that Ramsay was making the demonstration look easier than it should be. Because he was the last person from the blue team left in the previous challenge, he was asked to nominate three people from the blue team to compete in the challenge. He nominated Robyn, Giovanni, and Milly.[22]

During the Cave Meat Challenge, Nick knew that the difficult thing was to use the ingredients with their proteins. Because the blue team was short a member, he was the only person that was cooking with the venison, and during the cooking, he discovered that the convection oven was turned way too hot. He was the second person from the blue team to have his dish judged, and he went up against the pair of Dana and Elise. He made a warmed spiced roasted venison with butternut squash purée, and while it was praised for tasting as good as it looked, he lost that round to the red team. The blue team eventually won the challenge 2-1, and they were rewarded with a trip to Hummingbird Nest Ranch, and got to sample caviar supplied by Petrosian. During the reward, he admitted how far removed he was from fancy compared to the Ranch.

During dinner service, Nick was on the fish station. He was not seen that night, and the blue team won the service by a mile.[23]

Episode 9[]

Back at the dorms, Nick was told by Michelle that she explained to Elise how the raw chicken was her responsibility, but when the latter continued to say that the former did not take responsibility for her mistakes, he accused her of saying that due to Michelle naming her as one of the weakest chefs on the red team. As Elise continued to argue, he called the former a bully for picking on Michelle, reminded her how the red team was losing to the blue team and mocking her constant boops.

During the Fishing Challenge, Nick received cod, was the first person from the blue team to have his dish judged, and went up against Jennifer. He made a pan-roasted cod with crispy prosciutto and lemon chive Berblanc, it was criticized for taking the skin off, and he lost that round to Jennifer. After Elise lost to Milly, he told her that she could not blame the fact that she herself collected only three ingredients, before mocking her with boops again. The blue team won the challenge 4-2, and they were rewarded with an overnight trip to Las Vegas on a private jet, got to stay at Caesars Palace, and received a ride on the tallest Ferris wheel, the Link High Roller.

During dinner service, Nick was on the garnish station. At one point, he called Robyn a ham around the chef's table, and told her to focus on the grand prize, before thinking that he should hire her as his Sous Chef. Both teams were named joint-losers, and they were asked to nominate two each. During deliberation, he felt that Van could improve on his communication, before considering Robyn and Milly for elimination. When he heard the red team's loud deliberation, he deemed it ridiculous.

He was not nominated for elimination.[24]

Episode 10[]

Main article: Episode 1710 - It's All Gravy

During the Blind Taste Test, Nick was the second person from the blue team to compete, and went up against Jennifer. He only guessed garlic and basil correctly, resulting in Robyn receiving the cannon punishment. During Benjamin's turn, he was spared. The blue team won the challenge 8-2, and they were rewarded with lunch at Roy Yamaguchi’s Hawaiian Fusion lunch, and received Vitamix blenders. After hearing that, he deemed the blue team unstoppable, and during the reward, he was excited as his husband would be happy about his new Vitamix.

During the Charity Night dinner service, Nick oversaw both the pan seared scallop course and the passion fruit soufflé course due to the blue team being short a person. On his first course, he had some of the blue chefs cooking while the others helped him plate, before expressing confidence that he can do it despite tackling two courses. However, Ramsay informed him that the scallops were getting more darker than needed, leading the latter to wonder if Milly was trying to sabotage him. Despite that, he got his first course out. On his second course, he was not seen, and the blue team won the service.[25]

Episode 11[]

Main article: Episode 1711 - Trying to Pasta Test

During the Budget Challenge, Nick was not happy when Milly asked for ground chicken, and during the cooking, Sous Chef Jocky warned him about his pasta drying out quickly for his English pea and ricotta ravioli dish, with him knowing that he was taking a risk as there was no room for errors. He was the first person from the blue team to have his dish judged, went up against Jennifer, and presented his English pea and leek ravioli with ricotta cheese and butter poached lobster. It was praised for the beautiful presentation, having delicate pasta, but criticized for having some air trapped in the pasta itself. So, he scored $81, but he felt that Ramsay giving him $23 was harsh when another judge gave him $30. The blue team lost the challenge $313-$320, and they were punished by cleaning up the racks in the pantry rooms.

During dinner service, Nick was on the appetizer station. He was not seen that night, and the blue team won service.[26]

Episode 12[]

Main article: Episode 1712 - Five is the New Black

After Ramsay announced that only five of the seven chefs would receive black jackets, Nick realized that the former was not playing around. During the first Black Jackets Challenge, also known as the Taste It Now Make It Challenge, he used sea bass, cauliflower and fava bean, celery root, apples, chives, and fava beans in order to recreate Ramsay's dish. At one point, he deemed it a mental mindfuck due to the green and white purées, and having multiple options, but went with his initial choices. While Ramsay was judging the dishes, he accused Elise of being unsure of herself, and commented that Ramsay had a serious poker face after the latter judged his dish. While he got the fish protein correct, he failed on the purée components. However, while he and Benjamin were tied on being the closest of the chefs on the hash, with four ingredients, he edged out on the latter, and received the second black jacket, making him happy as it solidified what he has been working towards.

Nick and Milly spent the remainder of their day in the Black Jackets Lounge, and he said that because he fought hard for his jacket, he felt that it would be the best of the best that season. Later, Michelle and Benjamin joined the two at the lounge. While watching the final Black Jackets Challenge, he felt that Robyn should play it smart as the multiple choices could fuck her up, felt that Elise was more confused as she was staring and not cooking, and called Robyn's decision to switch proteins in the middle a risky move. Eventually, they welcomed Robyn to the lounge.[27]

Episode 13[]

Main article: Episode 1713 - Stars Heating Up Hell

Continuing from the previous episode, Nick said that despite a rough start, Robyn was becoming a serious competitor.

During the Cooking School Challenge, Nick was paired up with Olympic gold medalist gymnast Jordyn Wieber. During the cooking, he found out that Wieber had very little experience in the kitchen, and despite the latter being nervous, he managed to get her calmed down. Soon after, he was caught checking out Ricky Williams ass. They were the first pair to have their dish judged, and presented their peppercorn crusted scallops and celery root purée. Ramsay praised the scallops for tasting delicious, and he and Wieber sat in the winner chairs.

Nick lost the challenge after being dethroned by Robyn, but he was chosen by Michelle to come on her reward with her. They went on a helicopter tour of Los Angeles and ate lunch at 71 Above. During the reward, he admitted that he hated heights, but he and Michelle enjoyed their helicopter tour. During lunch, he believed that he and Michelle were more ready for black jackets than in Season 14, and the two toasted to an eventual final two.

During prep, Milly asked Nick for some help prepping the appetizer station, dismaying him as it meant the former was already flustered. During dinner service, he was on the meat station with Benjamin. At one point, he got annoyed when Milly continued to be disorganized, even getting grossed out by the latter's messy station, but still helped him out on appetizers. When Benjamin was not communicating to Robyn properly, he told him to get it together. Later, Ramsay discovered that his New York Striploin was raw, dismaying the latter as he was having a perfect run until then, but his refire was accepted and they served Wyclef Jean’s table. After seeing Robyn's burnt Brussel sprouts, he compared them to rabbit turds.

After service, Michelle was named the Best of the Best. During deliberation, Nick and Robyn discussed Milly’s messy station along with not doing much that night, although he discussed with the latter about the burnt Brussel sprout incident. When speaking with Michelle, she told him that he would not be nominated that night.

Nick was not nominated for elimination, and while being dismissed, he believed that Milly’s attitude that night was unprofessional.[28]

Episode 14[]

Main article: Episode 1714 - Families Come to Hell

The next day, Nick saw the dining room covered in Christmas ornaments, and said that he loved Christmas, especially when there was food involved. He received a visit from his husband and mother, and commented that he did not get to see his loved one’s last time. During the Holiday Dish Challenge, he decided to make a peppercorn crusted filet in honor of his husband, but got concerned about Milly’s dish as the latter was getting too comfortable and looked like buffet food. He was the second person to have his dish judged, and presented his peppercorn crusted filet mignon. It was criticized for having a salty purée, a little overcooked for his mother, and not being festive, but the potatoes were praised for balancing the dish out.

Nick lost the challenge as he received only two votes, and was punished by cleaning up the Christmas decorations, and detailing the Hell’s Kitchen SUV's. During the punishment, he was not impressed with Milly’s clean up as he left streaks on the vehicles and said that the two people he was stuck with sucked at washing cars, before sarcastically thanking his mother for not picking his dish. Later, he wanted Season 14 to be in the finale as Michelle and Milly agreed to that.

During dinner service, Nick was on the meat station. After seeing Michelle fail to recognize a ribeye from a New York striploin, he felt that the former was better than that. He was the final person to run the pass, and Ramsay told him to check everything. As he wanted to be in the finale, he was given a veal chop instead of the pork chop but did not notice it until after he sliced it. While dismayed by that mistake, he knew that he had to make everything perfect as he rejected Benjamin’s appetizers for lacking salt, Sous Chef Christina’s garnishes as she sent up creamed spinach instead of creamed leeks, and caught Michelle bringing up duck sauce instead of the proper lamb sauce. Then, he rejected Milly's overcooked egg, and despite all that, he finished his pass on a high note, while knowing that while Ramsay was trying to break them, it was not going to happen. As the chefs got the desserts ready, both he and Michelle agreed that it was a very intense service.

After service, Ramsay asked the final four to name one chef that deserved to be in the finale. During deliberation, Nick received votes from everybody to be in the finale, but despite that, he still felt unsafe as Ramsay had the final decision, before struggling on his vote.

At elimination, Nick was chosen by everybody as the person that belonged in the finale, and he said that he has been very composed in services. After Milly was eliminated, Ramsay named him the first finalist, praising him for being the most improved All-Star that season, and for being a fast learner. He was later joined by Benjamin and Michelle, and while being dismissed, he was amazed to be in the finale as he worked his ass off.[29]

Episode 15/16[]

Main article: Episode 1716 - All-Star Finale

Back at the dorms, Nick knew that with a final three in the finale, it was a close nit race. Later, he was about to cook some tater tots for dinner, only for Ramsay to call the dorms, and ask the final three to come back downstairs. He received Sous Chef Christina as his Sous Chef, and felt proud as the latter went from a former contestant to running a Vegas empire. While discussing the menu with her, he told Sous Chef Christina that his menu was all personal. After the Sous Chefs left, he got his tater tots cooked, and he and Michelle playfully recited a service when he got them out of the menu.

During the Final Menu Challenge Part 1, Nick felt that his sauces were risky as it included Hollandaise and Berblanc but did not want to miss his second opportunity to win. However, he discovered that his Berblanc sauce broke on him as it was still too hot and began racing to make a new sauce. After seeing Benjamin's dishes getting high praise, he started to get nervous, was the final person to have his dishes judged, and hoped that his Berblanc sauce was okay. His beef carpaccio was deemed a great start, along with his cranberry hollandaise with scallops, and seared sea bass with tri color carrots with Berblanc sauce, with Ramsay in particularly praising the sauce. Then, his crispy chicken with sweet potato purée and espresso and chili dusted venison loin was passed as well. After the judging, he felt anxious, Ramsay announced that it was a three-way tie for the winner and announced that they were going to the Calumet Ranch for the 7th annual Culinary Award Ceremony.

At Calumet Ranch, Nick called the location beautiful, even though he had no idea what was going on, and was happy to spend a night without cooking. Later that night, it was revealed that the Ceremony was fake, and Ramsay announced that it was time for the second part of the Final Tasting Challenge.

During the Final Menu Challenge Part 2, Nick knew how crazy it was that his five dishes would decide his fate, but was confident that he would win. Then, he knew that it was sink or swim as he worked through his mistake earlier that day, commented that he was the only one of the three that made it farther than he did last time and felt that he grew since Season 14. When it was announced that the five Executives from the Casers Entertainment Group would judge each round, he got intimidated by the fact that Ramsay would not be deciding the top two chefs. On the cold appetizer round, his beef and beet carpaccio were praised for the balance of the flavors, and he scored 8 points. On the hot appetizer round, his bay scallops with cranberry hollandaise were praised for having the apple sweeten up the dish, and he scored 9 points. On the fish entrée round, his pan seared Chilean sea bass dusted with fennel pollen was deemed too sweet for Gary Selenser, and he scored 8 points. On the chicken entrée round, his chicken breast with applewood smoked bacon and sweet potato purée was praised for tasting moist and tender and scored 9 points. On the beef entrée round, his espresso and chili venison loin with seared oyster mushrooms was deemed moist, with Ramsay praising the smoked salt part. In the end, he lost the challenge to both Michelle and Benjamin, and was eliminated from the competition, disappointed that he lost by one dish.

After the challenge, Ramsay reminded Nick that his time in the competition was not over yet as he was now part of the lineup of returning chefs for the brigade, and he joined the seven returning chefs. He was Michelle's first pick, followed by Dana, Milly, and Elise, and the first pick overall.[30] Before Michelle made her final decision, Nick knew how difficult the decision was for her, and felt that she would be better off with neither Elise or Barbie. Back at the dorms, he confronted Elise on her halfhearted confirmation, causing her to snap at him as he called her a sore loser and a bully, before proclaiming to back up Michelle as if he was not in the finale, then he would help her win.

During prep, Michelle and Nick discussed ways to improve some of her dishes, with the former calling him her right-hand man, but he got annoyed by Elise's told her to go home if she was going to be rude that night, felt that she should grow up for acting like a middle schooler despite her age, and was over her being in the red kitchen. During dinner service, he was on the garnish station. At one point, Michelle asked him to read out an order for Milly, but he called out the order incorrectly for a nine-top table, confusing Milly, causing Ramsay to berate him that there were no nine tops that night, and then to the entire red team that they were not going to throw food like that. Michelle eventually won the finale over Benjamin, and during the celebration, he expressed proudness in Michelle’s accomplishment and that she deserved it for dealing with the bitches in the red kitchen.[31]

Quotes[]

Season 14[]

  • (To Josh) "Stop fucking talking over me Josh, you're a fucking dick!"
  • (About Bret) "Why is everyone crying? I figured I'd be the first one to cry, these boys are EMOTIONAL!! There's no need to be crying, I get that you're passionate, but get a box of tissues and suck it up. Let's go!"
  • (After reuniting with his ex-girlfriend) Nick: "What are the chances she (Nick's ex-girlfriend) would be here?" Randy: "What's the chance that we'd see one of your girlfriends?" Nick: "Exactly, cheers!"
  • (In the kitchen about Randy) "If I hear him say 'risotto' one more time, I'm gonna cut my own dick off."
  • "I AM THE KING OF HELL'S KITCHEN!"
  • (About Bret's back injury) "Tearing your back while your taking a dump, like, that's something you see in like- in like a horror movie. I just hope he got to wipe- that's my main concern."
  • (About Bret's departure) "I definitely think Bret's injury is a blessing in disguise. At the end of the day, only one person can win Hell's Kitchen, so sucks to be you, Bret."
  • "Literally, I smell like scallops and shame!"
  • (Imitating Bret) "I'm fucking carrying this team, yo!"
  • (After being eliminated) "From day one, I definitely was an underdog. I was so nervous. But you have to stick up for yourself, because if you don't, people are gonna walk all over you. I knew I would make mistakes, 'cause I know I'm not perfect. But you have to grow, and you have to be willing to learn and bounce back. The rewards were amazing. It was always something new and definitely exciting. Stress, pressure, it's not so nerve-wracking once you gain confidence. It was really cool to kind of just be myself and get as far as I did. I don't think the worst chef left tonight. I think that I was outperformed tonight."

Season 17[]

  • "I've grown a lot since season 14, and not only because of my beard."
  • (About Josh) "Of course the last person that just arrived is Josh! I'm going to make the best of it and kick his ass again so...bye, Felicia!"
  • (About Josh) "I think Josh is delusional, he was slowing down service all night."
  • (About Benjamin) "Last time I checked, we're not in fucking France. So stop saying Oui, just say "yes". I don't know how to say "No, girl" in French, but... no, girl."
  • Nick (to Elise): "Bye! Check the scoreboard, girls’ team is losing, bye Felicia!" Elise: "Yeah, girls’ team is losing but my scores aren’t!" Nick: "Oh yeah, well, guess what, you're still on their team, honey! BOOP BOOP BOOP BOOP!"
  • (To the blue team) "Guys, we're not the red team, stop arguing!"
  • (To Michelle) "You're killing us softly with this sauce."
  • "The couscous is so bland that it's almost as bland as Benjamin's personality."
  • (After catching Sous Chef Christina's creamed spinach sabotage) "Love the idea, but let's get creamed leeks up!"
  • (After being eliminated) “It sucks that it came down to basically one dish, even though you’ve put so much effort into your food. You obviously think that some of your dishes(If not all of them) were better than most of their dishes. Just knowing you’ve lost, and you’ve disappointed your sous chef and your chef. No one wants to have that feeling. (Sighs heavily)
