Why can't I just get through one dinner flawlessly?

Josephine "Josie" Clemens was a contestant on Season 20 of Hell's Kitchen. She ranked in 9th place.

Season 20[]

Episode 1/2[]

The eighteen Young Guns arrive at Las Vegas on a bus heading to Hell's Kitchen. Josie took a selfie with everyone on their way, and they drove past the real Hell's Kitchen restaurant. She revealed to have had a crush on Ramsay since she was ten. The bus arrived at Hell's Kitchen, where Marino greeted the chefs. She wanted to say Ramsay's opening line for every service. Marino explained that Ramsay created a museum to celebrate the past nineteen seasons in honor of the twentieth season. Giving the tour were Shakala and Sean, who led the chefs into the museum. As the chefs toured the museum, they saw photos of past contestants, jackets hung, Hell's Kitchen Wall of Fame, and lines from past seasons. Then, they see video clips of moments from the show. The last stop was an exhibit of the doors used to reveal the winner of each season. Sean said that the final part of the tour was a documentary film about the show's history. However, the curtain pulled back to reveal an audience waiting for them and Ramsay on a stage behind them. Once on stage, Ramsay explained the museum was meant to showcase the past, while the eighteen of them were the future. Ramsay added the desire to become a chef was a dream for many young people, and food has evolved over the years since the show began. So, Ramsay announced that the season's winner would become his protégé and become the new Head Chef at Gordon Ramsay Steak at the Paris Hotel in Las Vegas. Afterwards, Ramsay announced the Signature Dish Challenge and gave the chefs 45 minutes to cook their dishes.

Josie decided to make a vegan dish during the Signature Dish Challenge and felt that it could heal Ramsay. She was the fifth person from the red team to have her dish judged by Ramsay and went up against Antonio. She told Ramsay she used to be a chubby kid and went vegan two years ago for her mental health after suffering a terrible week. Regardless, she bounced back and presented her herbal tonic noodle soup with shitake mushrooms, lemongrass, and garlic. However, Antonio thought it looked like baby food with noodles on top and said it would not be a dish he would serve to Ramsay. After tasting it, Ramsay asked her if the dish was supposed to be hot and gave her a spoon to taste. While she claimed to like it, Ramsay found the sauce hot and underwhelming and gave her two points.

The red team won the challenge 30-28. They were rewarded with dinner at Gordon Ramsay Steak 2.0 and had three previous winners joining them: Season 17 Michelle, Season 18 Ariel, and Sous Chef Christina. During the reward, Josie asked Ariel if it was worth taking risks in challenges. Ariel said she stayed very safe in Season 6 but lost as a result. Michelle told them to take the chance when the time came, and Sous Chef Christina asked them if they sized up the men. However, she was not worried about the men, making Victoria laugh. Later, when Ramsay came in to join the red team for dinner, she was star-struck before calling him dreamy.

The following day, the chefs saw the Water on Mars juggling act. After seeing them strip to shorts, Josie called it the best day of her life.[1] During the Alcohol Challenge, she was not seen much, and she did not win as her dish did not make it into the Top Three.

During the 300th dinner service, Josie was at the fish station with Kiya. As the two worked on their scallops, Kiya was unsure of her as she was vegan and wondered how she could serve scallops if she could not taste them. As she got her scallops started, Ramsay came in and gave her and Kiya a short demo on how scallops should be cooked. She got infatuated by Ramsay's presence and claimed she could smell his cologne, but Kiya got her focused again. Despite that, she got her scallops accepted. The red team won the service. After elimination, she thought the women were all badasses and was no longer worried about the men.[2]

Episode 3[]

Before the Whole Squid Prep Challenge, Josie got emotional after seeing the Season 1 teams do the Squid Prep Challenge as she was a vegan. During the challenge, she wanted to get through this and keep the women’s winning streak strong. She was seen getting one attempt accepted, and the red team won the challenge 16-14. They were rewarded with an off-road racing experience at Speed Vegas and eating lunch provided by BLT Steak. As the women went upstairs to change, she was happy not to do the men’s punishment because that would have pissed her.

During dinner service, Josie was at the meat station with Victoria. When Curtis Stone came into the red kitchen, she got infatuated and revealed that her boyfriend knew she had a crush on the latter. The red team won the service.[3]

Episode 4[]

During the Paris Hotel Brunch Service Challenge, Josie was on the omelet station with Emily. After Emily was late on an omelet, Ramsay warned them not to sabotage their team and ordered them to get a grip. The red team won the challenge and was rewarded with a Caesars Entertainment’s Private Jet ride to see locales like the Paris Strip, Hoover Dam, and the Grand Canyon. They also won a staycation at Planet Hollywood’s mega-suite. During the reward, she felt her jaw broke on her after seeing the mega-suite.

During dinner service, Josie was on the appetizer station with Emily. At one point, she sent up her flatbreads. Unfortunately, they were burnt, and Ramsay showed them to the women. She admitted that she did not check them, and Morgana decided to help her while giving her directions. Then, she accidentally dropped her refire while walking it, and Brynn felt she was not stepping it up. Thankfully, her third attempt was accepted. Both teams were named joint losers, and they were asked to nominate two each. During deliberation, Keanu recalled her burnt pizza and voted for her. She got upset by that.

Josie was the red team's second nominee for elimination, with Brynn as the first. They joined Alex and Antonio from the blue team. Later, Victoria joined them. Ramsay asked her if she was done during her plea, but she said she did not lose her confidence and knew she could communicate well with her teammates. She survived elimination, but Ramsay told her to get a grip. She welcomed Sam and Payton as new teammates while saying goodbye to Victoria, Emily, and Megan.[4]

Episode 5[]

Back at the dorms, Josie and Morgana were willing to work with Sam and Payton even though Sam was not keen on the switch. She reminded everyone to be patient with their new team, though she wanted to be tough on the men.

During the Emoji Jacket Challenge, Sam figured out that Josie was making a fried chicken sandwich. Ten minutes left, she did not want to waste her chicken and asked Sam for his opinion after hammering it. Sam told her to start over, much to her dismay, as she wasted a dead animal. When Trenton revealed to have added mayonnaise to his dish, she knew he should not have done that. She was the sixth person from the red team to have her dish judged by Ramsay and went up against Kevin. She lost the round to Kevin as she added paprika to the dish. The red team won the challenge 4-2, and they were rewarded with a ride on the High Roller and lunch at Chayo. During the reward, she thought she saw the blue team at the Eiffel Tower. During lunch, she called it her favorite reward, thanks to the food and the mechanical bull.

During prep, Josie said it was Payton and Sam's time to prove themselves. During dinner service, she was at the meat station with Keanu. She feared they were sinking in the red kitchen and asked Morgana if she could help with mussels. However, Morgana did not respond to that and only asked if they dropped the halibut on order. Ramsay told her not to treat the kitchen like a kindergarten and ordered her to show some responsibility. So, she turned on her angry eyebrows and became more assertive towards Morgana and Payton. Her New York striploin was well-received. When Morgana struggled on fish, she felt the former was gone due to a weak mindset. After multiple mistakes, the red team was kicked out of the kitchen.

The red team lost the service, and they were asked to nominate three people for elimination. During deliberation, Josie asked Morgana if she felt the pressure that night. Morgana quietly argued everyone who worked on fish had someone else, but she reminded her she could have asked for help. Then, she told Morgana to speak up more as she could barely hear her. For the third nominee, she considered Keanu due to the latter shouting, but Keanu disagreed. Kiya nominated her as she only found her voice that night compared to the other services. However, she argued that she helped Kiya with fish on the opening night. Still, Kiya felt she was their weakest chef, and the red team struggled on naming a third.

She was not nominated for elimination.[5]

Episode 6[]

Before the Megan 21st Planning Challenge, Josie thought Megan's palate would be the same as Ramsay's and deemed it a tough challenge. She cooked one of the three entrées for the red team. She was the fourth person from the red team to have her dish judged and went up against Trenton. She made a Filipino steak and eggs. While they were deemed wonderful, she lost that round to Trenton. The red team lost the challenge after a tie at three each. They were punished by decorating the dining room for the party under the instructions of a strict party planner.

During Megan's 21st dinner service, Josie was at the appetizer station with Kiya. The red team received their first order as she said she learned from her mistakes last time on appetizers. She knew that she had to be flawless for Megan as she got her flatbreads accepted. When Sam and Payton struggled on meat, she told them to verify the cook and felt they would not send up a proper steak. So, she stepped in and felt their steaks, leading the third attempt to be accepted. After Payton's Pad Thai was sent back for being bland, she told him to get his thumb out of his butt. On the following order, she was one of the five people that helped with the lamb and took it out of the oven. However, it was raw, leading to Ramsay kicking the red team out of the kitchen.

The red team lost the service, and they were asked to nominate three people for elimination. During deliberation, Josie reminded everyone that she was the one who walked the raw lamb after taking it out of the oven. She was one of the three people chosen for nominations alongside Payton and Sam.

Josie was the red team's third nominee for elimination, with Sam first and Payton second. During her plea, she admitted to knowing better than to intervene on other people's stations. She survived elimination as Ramsay sent her back in line. However, Ramsay warned her not to send up somebody else's mistake. While being dismissed, she learned to worry about herself more as it was a similar mistake she made before.[6]

Episode 7[]

Back at the dorms, Brynn, Emily, and Josie hanged out in the red bedroom. Emily told the two that she had an infected eye a few weeks ago and looked like the Hunchback of Notre Dame. That made her laugh as she never had a college experience and found dorm life fun. She and Emily ended up hanging out more that night as the two goofed around.

When both teams went to Cashman Field, Josie called Ramsay cute in his soccer jersey and found him cuter than the other players. Before the International Cuisine Challenge, she welcomed Antonio as a new teammate. She picked Chinese cuisine. She was the first person from the red team to have her dish judged and went up against Steve. She felt nervous going up against Steve because he proved to be a respected chef by now. She made a Chinese breakfast with sticky rice and chicken stir fry. Still, it was criticized for having an overpowering soy sauce taste. She said she did not taste the dish after she mixed in the chicken juice. Still, Emily whispered that it was a novice mistake, and Trenton laughed at how she would not try her own food. She lost that round to Steve. The red team won the challenge 4-2. They were rewarded with a pool party at the Flamingo Hotel and Casino and a private Piff the Magic Dragon poolside performance. During the reward, she deemed Piff cool due to his insult humor as he did his routine.

During dinner service, Josie was at the meat station with Kiya. At one point, a communication breakdown occurred as she and Keanu were not at the same timings for meat and garnish. She told Keanu to be on time. Both teams were named joint winners.[7]

Episode 8[]

During the Relay Challenge, Josie used lobster butter for the salmon sauce during round two. She knew she was at a disadvantage due to her vegan background. When it was revealed that the sauce came out salty, she said she made the sauce but did not season it. Keanu told her that lobster butter was a salty product, but she said she would have people taste her meat products. A dismayed Keanu compared the situation to the International Cuisine Challenge and thought her veganism was starting to hurt them. The red team won the challenge 3-1. They were rewarded with a zip lining experience at High Link, going over the Vegas Strip, and having lunch at the Strip Bistro Bar. She said she had never zip-lined before during the reward, but she and the rest of the red team enjoyed the experience.

Later that day, Emily and Josie had a flirtatious conversation and told Sam that it was how vegetarians talked to each other when the latter asked if they needed a room. Ramsay decided to do one-on-one meetings with everyone. She was called as the first person to have her meeting, but she was nervous going down as she never went to his office before. Once there, Ramsay had Josie take a seat and do a one on one with her. Josie said she was having a lot of fun and felt she needed to focus on plating and execution. Ramsay felt that Josie did not trust her instincts because she could cook meats well and told her to find her voice. When she reunited with Emily at the patio, the latter was relieved to see that she was not eliminated as the two embraced.

Later that evening, Ramsay announced the Cook For Your Life Challenge and Josie was named one of the five chefs to compete. She went up against Keanu, Sam, Victoria, and Emily. During the cooking, she felt confident in her skills in the red kitchen but was unsure of her standing amongst the rest of her peers. She double guessed herself on the double pork chop despite having cooked meat perfectly before. She was the second person to have her dish judged by Ramsay, and she was nervous walking it up. She made a bone-in pork chop with green onion. While it was praised for a great sear, Ramsay questioned her decision to slice it. She said it was not out of concern for the cook as she wanted to plate it the same as the lamb dish. However, there was a pool of juices on the bottom, but Ramsay said the seasoning was on point. While she lost to Sam, she was the second person to survive after beating out Emily. However, she felt conflicted because despite being safe, she did not want to see Emily go home and got emotional when she entered the dorms. Fortunately, she was glad to see Emily in the dorms later.[8]

Episode 9[]

During the Spells Kitchen Challenge, Josie went up against Victoria in part one. She got parsnips and sent it to the red team's sea bass. After Ramsay heavily criticized the red team's ribeye dish, she thought it was more of an individual challenge than a team challenge, which she realized was wrong. She cooked the veal chop alongside Sam, and they were the third pair to have their dishes judged by Ramsay. They went up against Steve. She made seared veal chop with celery root puree, zucchini ribbons, and sautéed rutabaga. It was criticized for having crunchy rutabaga and being bland, and she failed to score. The red team lost the challenge 3-6, and they were punished by baking bread for Ramsay's Las Vegas restaurants and churning butter. During the punishment, she got awkward after seeing Antonio and Sam churn the butter.

Before the Charity Night dinner service, Josie got excited about serving Brad Garrett as she watched Everybody Loves Raymond with her mom growing up. During the mushroom risotto course, Sam asked her to help him plate the dish. During the snapper course, she felt Brynn was letting go of control when the latter was putting her trust in everyone. When the snapper came to the pass, it was raw thanks to her, and Brynn was dismayed. She was in charge of the filet mignon course. She wanted to push through her course and agreed on fifteen minutes with Trenton. Trenton did a double-check with her in the red kitchen later. She walked her filets up to the pass, but Ramsay pulled the red team over and showed them they were raw. As the red team worked on the refire, she disappointingly asked why she could not have a service where she made one mistake. The refire was accepted.

Both teams were named joint losers, and they were asked to nominate two each. During deliberation, Josie was unanimously agreed as a nominee alongside Kiya. However, she nominated Brynn and Kiya, the former for getting inside her head that night. Brynn warned her to pick her words carefully, but she did not care as she was willing to call the former out. She refused to go up for a third time as she blamed Brynn for not checking the snapper, but Kiya reminded her about the raw files. Still, she reminded Kiya about firing the filets early, even though the latter argued that they bounced back from it. Antonio told her that if they were going to go by course, then she would be nominated. Still, she thought she was being the scapegoat and refused to be nominated.

Josie was named the red team's second nominee for elimination, with Brynn as the first. They joined Megan and Victoria from the blue team. During her plea, Ramsay accused her of losing control of her course, but she said she did not know what was happening. Shocked by that, Ramsay told her that she should have, and she admitted to it. She survived elimination. While being dismissed, she was willing to be up for more nominations if it were done to show Brynn's true colors.[9]

Episode 10[]

Back at the dorms, Josie thought the red team held a grudge against her, but she did not care as their attitude towards her reflected themselves. She did not join the red team out on the patio. Instead, she trash-talked Brynn in front of the blue team.

The next day, Josie sat next to Emily instead with her teammates until Ramsay had her go back. Still, she wanted to sit next to Emily due to the bond they had. During the Blind Taste Test, she went up against Emily. She wanted to outshine her teammates after the way they treated her. She got beets and potatoes, resulting in Brynn getting the caramel corn and nacho punishments. During Sam's turn, she got the caramel corn punishment. The red team lost the challenge 6-9, and they were punished by cleaning up the dining room and resetting it for that night’s service. She did not like Sam’s complaining throughout the punishment and told him to grow a pair.

During dinner service, Josie was at the garnish station. She knew she received three opportunities to bounce back, and she refused to let Ramsay down. Still, Antonio considered her one of their slowest members and feared that her performance on garnish could back them up. While Antonio and Kiya got their proteins accepted, Ramsay was waiting on her garnishes. However, she sent up the wrong garnishes, and she had to fire the salmon garnishes. Ramsay reminded the red team that it was their first order and was confused about how she did not fire the salmon garnish earlier. She admitted to her mistake, got the lentils accepted, and red diners enjoyed their entrées. On their next order, she was determined to bounce back and refused Kiya’s assistance. Still, Sam feared they would be screwed if she did not have it. She sent up under portioned garnish for the lamb as she thought it was one instead of two. Ramsay brought her and Sam to the pass and asked them for their coordination. She admitted that it was 1000% her fault she sent up under portioned garnishes as Ramsay was confused by the silly mistakes.

Both teams were named joint winners and Kiya was named the "Best of the Best" for the red team. During deliberation, Kiya reminded Josie how she struggled on garnish. She tried to argue that she did not know they could fire garnishes ahead of time, but Kiya called it an invalid excuse.

Josie was Kiya's nominee for elimination and joined Steve from the blue team. She was upset during her plea but said she was not done learning as the kitchen was helping her grow as a person and said she had a lot left. In the end, Ramsay eliminated her for struggling on garnish and running out of chances. Still, Ramsay told her that she was on track thanks to her focused passion and wished her luck. Josie said she would miss Emily during her exit interview but called the experience amazing as she learned a lot.

Ramsay's comment: "Josie may have come a long way in this competition, but right now, she still needs more time to grow."[10]

Episode 15/16[]

Josie was one of the seven chefs that returned for the final dinner service. She watched the Final Menu Challenge with the others. She was Megan's final pick after Steve, Victoria, and Emily. She was the final pick overall. Still, she was concerned as Steve and Victoria were strong but quiet chefs, and she had Emily as her partner.[11]

During prep, Josie was responsible for cooking the chicken for the demo dish, but it ended up overcooked. During dinner service, she was at the meat station. She was confident she would nail meat thanks to practicing one hour and a half into dinner service but bumped back to five minutes due to a delay. She had high hopes for Megan to win, but she sent up an overcooked ribeye. Megan ordered her to get a refire going but she ignored the former despite having her name called. She sent up the refire, but Ramsay saw it was raw after slicing into it. Having had enough, Megan ordered her and Steve to change stations, therefore going onto meat. Megan eventually lost the finals to Trenton. During the celebration, she and Emily complimented Megan.[12]
