Jason Hedin was a contestant on Season 22 of Hell's Kitchen. He ranked in 7th place.

Season 22[]

Episode 1/2[]

The eighteen new chefs arrived at Hell's Kitchen, where Marino awaited them. The chefs entered Hell's Kitchen and noticed the past winners from each season before entering the dining room. To give the chefs some inspiration, Ramsay decided to have them walk through the famous doors and have a taste of what it felt like to win. Afterwards, the chefs got to know each other before the Sous Chefs arrived, explaining how their time in the competition helped their careers. Afterwards, a guitar player appeared and played the national anthem as four other doors appeared behind the curtain, each figure explaining their journey for the American Dream. After Ramsay stepped out, he welcomed the chefs to the twenty-second season, where they were celebrating the American Dream. Ramsay said the three celebrities the chefs saw were proof of the American Dream and that Hell's Kitchen was part of the American Dream. Ramsay said the winner of that season would become his Head Chef at Hell's Kitchen in Caesars Las Vegas with a salary of $250,000. Then, Ramsay told the chefs that their Signature Dish Challenge was about to begin.

During the Signature Dish Challenge, Jason got annoyed by Brad's attempt to liven the mood. He thought Brad needed to shut up and cook as it was a serious situation. He was the first chef from the blue team to have his dish judged by Ramsay, and he went up against Melissa. Before having his dish judged, he gave Ramsay a lengthy description of his culinary career. When he mentioned that he worked with a chef Ramsay knew, the latter said they were his Head Chef with Guy Savoy. He made a citrus and chilli-infused Maine lobster with charred lemon. It had a good cook, but Ramsay felt the seasoning did not work as it was too sweet. He said he added some honey, but Ramsay thought it was unneeded as lobsters were already sweet and called it an injustice. While he felt he had done nothing wrong, Ramsay gave him a three. Still, he argued that his dish was worth a four.

The blue team lost the challenge after a 29-point tie. They were punished by participating in delivery day and cleaning up both kitchens. During the punishment, Jason told the men to work and talk while Ryan was trying to converse with Sous Chef Jason. Ryan felt he was rude, but he felt the men were not taking the competition seriously. Later that evening, Melissa took him aside and encouraged him not to be a jerk around everyone. However, he refused to change his attitude as he considered himself confident rather than arrogant.[1]

Jason did not win the Creative Scallops Challenge as his dish was not chosen to be in the top three. Back at the dorms, Jason asked if they got to keep the STDs they received in the competition, but that weirded Jermaine out as he did not think he was funny. Then, he began bad-mouthing the women by declaring that none of them had talent. Devon disagreed with him, and Dahmere did not want his negative energy to drain his skills.

During dinner service, Jason was at the fish station with Devon. Sous Chef Jason caught him trying to cook a lobster tail off the heat and asked how that would work. He argued he did not want it to separate, but that made Devon nervous as the latter knew he would not be perfect despite having worked in Michelin Star restaurants before. As the appetizers went up, Ramsay showed men his raw lobster tail, saying it needed another three minutes. Tad could not believe the big dog screwed up, and on his second attempt, Devon saw that his second attempt was raw. He did not respond to Ryan and Mattias for a time, making the latter feel that he was staring into space. After sending the lobster tail up, Ramsay saw something wrong and took him and Devon to the back room. The lobster tail came out raw, and Ramsay ordered them to get a grip. He knew he was not performing to his standards, while Devon knew he looked bad, thanks to him. So, Devon helped him on the third attempt, and it was accepted. On entrées, he served a raw halibut for Oscar De La Hoya, and it was one of the mistakes that got the blue team kicked out.

Both teams were named joint losers, and they were asked to nominate two each. During deliberation, Jason blamed Tad and Brad on the blue side for getting them kicked out, but Mattias said he was no better than the two on meat. Ryan and Mattias brought up the raw lobster tails he served while he badgered the former for not looking at him in the eyes. He denied serving anything wrong that night, which bothered Mattias as Tad and Brad took responsibility and said they had integrity. Mattias went off on him for not owning up to his mistakes, but he brushed them off.

He was not nominated for elimination.[2]

Episode 3[]

During the American Citizen Brunch Service Challenge, Jason was at the waffle station with Devon. After seeing Mattias struggle with the steaks, he felt the former could not cook to save his life. The blue team won the challenge, and they were rewarded with a Los Angeles-styled pool party at the Godfrey Hotel with a lunch catered by Craig’s.

During dinner service, Jason was at the garnish station. He was not seen that night, and both teams were named joint losers. They were asked to nominate two each. During deliberation, he asked Jermaine who was firing most of the proteins that night. Then, he suggested they move on to another subject because they were getting nowhere on the meat controversy. After Brad complained that he was useless in the second half of the evening, he felt the former was annoying him, and he could not let him ruin his focus on timings.

He was not nominated for elimination.[3]

Episode 4[]

During the American Classics Challenge, Jason challenged Carmen, and their dish was chicken wings. That thrilled him as he knew how to elevate comfort food. He was the second person from the blue team to have his dish judged by Ramsay, and he presented his sweet and salty glazed chicken wings with a vinegar dip. When Ramsay asked him how he confit the wings in 45 minutes, he arrogantly said he belonged in the competition. However, Ramsay did not like the salty taste despite him saying otherwise. He lost that round to Carmen, but he said he still loved his dish.

The blue team won the challenge 7-6, and they were rewarded with a trip to Santa Barbara with parasailing and dinner at the Hotel Milo. However, Melissa used her Punishment Pass to change places with Jason. So, he was forced to join the red team's punishment: baking bread for the following service, which included grinding the wheat by hand. Still, he tried to downplay it by claiming he had gone parasailing before. During the punishment, he tried to advise the women on what to do, but his attempt sounded arrogant, and Donya was close to hitting him. Atoye waited for when the men came back as he kneaded the dough.

During dinner service, Jason was at the meat station with Ryan. At one point, Ramsay caught him smearing cold butter on a steak for Nikki Howard's table. He claimed he was basting it, but Ramsay had Ryan look at it and confirm it was not. Ramsay sternly told him that smearing cold butter on a steak would ruin it and that he should follow his orders. Ryan knew Ramsay saw everything and thought he should not try to pull lies on the latter. Still, the refired order was accepted, and Howard received her order. Later, Ramsay sternly told him not to smile when the former was lecturing him and Ryan about the raw lamb. The blue team lost the service, and they were asked to nominate two people for elimination. During deliberation, Jermaine asked who had food sent back that night, and he and Mattias raised their hands. Brad pointed out how he lied to Ramsay about the smeared butter, but he argued he was not lying and thought the men had his back. Then, Johnathan and Mattias discussed how Ramsay chewed him out for smirking during a rant, but he denied it. Mattias got annoyed by his attitude as the former felt he was a line cook with an ego.

Jason was the blue team's second nominee for elimination, with Mattias as the first. During his plea, he argued that he had no steaks sent back and said he was a better teammate than Mattias. However, Ramsay reminded him about the smeared butter and said he was upset to see that as that was not how they basted a steak. He argued that he already had the steaks basted, and he was resting them with butter on top as he flashed them. However, Ramsay sternly told him that he wanted the steaks to be basted in butter. He survived elimination, and while Ramsay told him that he saw his skills and talent, his talent meant zero if he cut corners. While being dismissed, he did not care if he was a jerk as he was interested in making Ramsay proud and winning.[4]

Episode 5[]

Back at the dorms, Jason tried to brush off Ramsay's criticisms about the smeared butter, but Raneisha was mad that he did not own up to his mistake. Raneisha confronted him for lying to Ramsay and for being too egotistical. As he argued back, Johnathan felt embarrassed as Raneisha looked to her team for support. However, the women left as Donya told Raneisha that he was the men's problem. Also, he left so he could go to bed.

During the Protein Identification Challenge, Jason was not worried about the red team's time as he knew the men would win. He went up twice as the blue team was down a member. On his first turn, he was with Ryan, and they were the first pair from the blue team to compete. Their dish was oysters and venison. They chose mussels and lamb as their first pairing, but it was wrong. Their second attempt, venison and clams, got a blue light. They kept the venison, but after getting crab wrong, he and Ryan got their fourth attempt accepted after grabbing oysters. On his second turn, he was with Johnathan, and they were the final pair from the blue team to compete. Their dish was monkfish and rabbit, but their first attempt, sea bass and pork, was wrong. The sea bass and rabbit got a blue light, and as they struggled on a fish, Dahmere screamed at them to bring one up. Fortunately, their third attempt was correct, and the blue team won the challenge 6:39-13:14. They were rewarded with an axe-throwing experience, with Ramsay joining them. During the reward, he recalled how angry Melissa looked when they left.

During dinner service, Jason was at the appetizer station with Dahmere. He said he would crush the hot appetizers as he knew the men would win and sent up his risotto. Despite having served a delicious risotto, the men were forced to start over when Devon and Brad forgot to fire the scallops. He was unhappy as his risotto was perfect. Later, he got concerned over seeing Jermaine wrap the Wellingtons in tin foil but hoped the latter knew what he was doing. The blue team won the service.[5]

Episode 6[]

During the Fusion Cuisine Challenge, Jason went up against Sammi, and he claimed he worked out a lot. However, his aim was not good, and he missed the targets, much to Atoye’s amusement. Eventually, he hit Indian, while Sammi hit Greek. He was the third person from the blue team to have his dish judged and presented his yogurt and sumestic crusted chicken thigh. They looked over-charred, but he claimed he wanted that appearance for the dish. However, Tony Messina handed him a rock-hard date, and he lost that round to Sammi. The blue team won the challenge 4-3, and they were rewarded with a day playing bubble soccer and brand-new Keurig sets.

During dinner service, Jason was at the fish station with Jermaine. At one point, Johnathan noticed that he was firing more fish than was ordered, and the former told him to chill as they were not cooking for a banquet. When Ramsay noticed the fish he was cooking ahead of time, he warned Devon that eight minutes for a steak would not work. Also, Ramsay told him that the halibut would not hold its heat for eight minutes and urged him to communicate with Devon. They both agreed for six minutes, but Devon accused him of looking out for himself as he picked up the pace for the steak. Brad walked it up, but the steak came out raw. Ramsay called down fish and meat to the front, but the former scolded him for taking too long as Ryan deemed him his own worst enemy. After Ramsay showed them the raw steak, Devon acknowledged that he had rushed the protein, and they were forced to start over. Ryan knew that he doomed them by rushing on fish, and Devon knew that rushing it did not work.

After Brad's exit, Ramsay asked both teams to nominate two each. During deliberation, Dahmere brought up how Jason got too far ahead that night and voted for him, but he did not believe he was a weak cook. When Jermaine accused Devon of being a snake, he did not care as he asked who was going up with him.

Jason was the blue team's first nominee for elimination, with Jermaine as the second. When Jermaine tried to put Devon up instead, he told the former that what Dahmere told Ramsay was true. They joined Raneisha and Sandra from the red team. During his plea, he did not believe he should go home as he was an anchor for a successful team. He survived elimination. While being dismissed, he claimed he did not want to be involved in drama and was not concerned about going home.[6]

Episode 7[]

During the Grilling Challenge, Jason went up against Leigh, and their protein was the chicken breast. He was the third person from the blue team to have his dish judged, and he presented his dry-rubbed barbecue chicken breast with grilled corn. Although the dish had everything well done, the chicken was overcooked. He lost that round to Leigh, and the blue team lost the challenge 2-5. They were punished by cleaning the grills, disassembling them, and packing them up for the women. During the punishment, he got frustrated with the disassembling, but he claimed he was okay working outside and not playing video games inside.

During the Steak Night dinner service, Jason was at the appetizer station with Johnathan. At one point, he and Johnathan got their first order of appetizers accepted. On entrées, he noticed that Jermaine was not responding to anyone, and it would not be wise to wait until the last minute. After seeing Jermaine struggle on the first order, he took it upon himself to help the former on garnish on the following order. The blue team lost the service, and Dahmere was named the "Best of the Worst". During deliberation, he knew it would only get worse from there on.

He was not nominated for elimination.[7]

Episode 8[]

During the Last Chef Standing Challenge, Jason cooked the shrimp Pad Thai dish and refused to leave the kitchen early as he wanted to show Ramsay he could multitask and claimed he could make better Pad Thai than most Thai restaurants he ate at. He was the third chef from the blue team to leave the kitchen, and he was seen barking at Ryan and Devon. He was the fourth chef from the blue team to have his dish judged by Ramsay, and he went up against Sammi. His dish was praised for having heart in the sauce and a good cook, and he tied that round with Sammi. The blue team won the challenge 5-3, and they were rewarded with a wellness retreat, lunch from Crossroads Kitchen, and Hexclad cookware.

Later that day, Ramsay held private interviews with the chefs. Jason was the second chef to have his interview. Ramsay told him that he stood too proud and showed no emotion in his cooking. He said he did not want to scare off his teammates with his attitude, but Ramsay told him to stop holding back and show his confident voice. He realized he would have to be abrasive to win the competition and told the other chefs what was happening. He was named one the weakest chefs on the blue team and was forced to compete in the Cook For Your Life Challenge. He joined Devon, Atoye, and Sandra. He was shocked that his team deemed him the weakest chef and thought the men were putting him in the challenge to watch him slip up and go home.

During the cooking, Jason seared his meat from the start as he had an idea for a pan-seared filet with roasted mashed potatoes. Also, he claimed he could cook a steak after eighteen years of work. He was the first chef to have his dish judged by Ramsay, and he was confident about his chances as he considered himself a top contender. He served his herb and garlic roasted filet mignon with honey mustard braised carrots, and crushed marble potatoes. While Ramsay liked the cooking of the filet, the former asked why he sliced it. He said he wanted it to work for his presentation, but Ramsay said that he risked bleeding out the meat, which ran into the meat. Atoye knew that cutting a filet was meant for the guests only, but he argued that he knew what he was doing despite acknowledging the tune-ups he could have done. He was the first chef sent to safety after his dish was deemed better than Atoye's. He had no doubts that he would be safe and said that winning the challenge confirmed he was a strong chef. Once he returned to the dorms, he warned the men that he was coming for them.[8]

Episode 9[]

Before the Budget Challenge, Jason welcomed Atoye as a new teammate. When Suzanne Goin came in as a guest judge, he called it a pleasure to be in her presence. He was the second chef from the blue team to have his dish judged and presented his cap of ribeye with pickled Swiss chard stem. The dish immediately impressed Goin as the cut was currently the trendiest cut in the market, making him feel he would get something in the $40 range. Sure enough, Goin priced the dish at $48. The blue team won the challenge $208-$207, and they were rewarded with an overnight trip to Hicksville Trailer Park in Joshua Tree. During the reward, he called it a unique experience but thought it would be fun.

During dinner service, Jason was at the fish station. When both teams worked on Daniel Mac's twelve-top order, he and Johnathan convinced Sandra to be ready in eight minutes rather than four. When both teams were on their final orders, he knew perfection was the key to winning that night. On the blue team's final order, he served his salmon, only for it to be raw. Ramsay was unhappy as it was their final order, but he knew he rushed the salmon. With some help from Ryan, the refire was accepted, and the blue team completed service first, winning in the process.[9]

Episode 10[]

Jason was not seen during part one of the Creative Pasta Challenge, but the blue team finished their board first and received a five-minute head start. During the cooking, he claimed that he loved making agnolotti and was confident about the results of the dish. He was the final person from the blue team to have his dish judged, and he went up against Sammi. He presented his portabella mushroom duxelle stuffed agnolotti and was confident he had it. While the shape looked more traditional, Evan Funke found undercooked pasta on the dish, and Ramsay said it looked thick. He lost that round to Sammi, and the blue team lost the challenge 1-3. They were punished by making 200 lbs. of fresh pasta for that night’s service.

During dinner service, Jason was at the meat station. When the blue team worked on Thuy Santos' order, he said he needed twelve minutes for the lamb. However, Ramsay was dismayed as the Wellingtons were resting on the tray. He claimed he did not forget the lamb, but Ryan prayed the former was right. Then, he served undercooked Wellingtons, and Ramsay was angry because he called out twelve minutes for the order. He was disappointed that he served raw minutes, and Ramsay called out his disrespectful attitude towards Sous Chef Jason’s wife. Still, he got the refire out, and Thuy Santos’ table received their order. Both teams were named joint losers, and Dahmere was named the "Best of the Worst" for the blue team. During deliberation, Dahmere reminded him about the raw Wellingtons he served and said he was going up for nomination. He was not happy with Dahmere’s decision and felt he was nominated for something he thought was minimal.

Jason was Dahmere's first nominee for elimination, with Atoye as the second. They joined Donya and Carmen from the red team. During his plea, he said the criticism he got from Ramsay helped him push forward. He survived elimination.[10]

Episode 11[]

During the Blind Taste Test, Jason was the second person from the blue team to compete, and he went up against Donya. He only got tomatoes correct, resulting in Ryan getting the milk dunk and sprinkle dump punishments. The blue team won the challenge 7-5, and they were rewarded with a $4,000 shopping spree at Sur la Table. During the reward, he asked a clerk if he got a discount on buying the floor model.

During the Charity Night dinner service, Jason was in charge of both the potato gnocchi course and the raspberry soufflé. Ramsay called him and Carmen to the front of the pass, and both agreed to be ready in seven minutes. He had Johnathan call out times for the dish as he did not want to micromanage. However, Ramsay told him to own his course, forcing the latter to order his teammates to plate the gnocchi. As the men plated their gnocchi at the pass, Ramsay and Sous Chef Jason saw overcooked portions, making the former demand to know who plated them. Ramsay said that the guests deserved better, while he saw that nobody took responsibility for the burnt gnocchi. As he fired more gnocchi, Ryan did a quick count of portions and told him they were ready. That annoyed Ryan, as the former felt he should have delegated someone else to do it. Still, his gnocchi were sent out. During the scallop course, Ramsay saw some that were overcooked, and Johnathan thought his team was dooming him, especially him. Ramsay was getting frustrated by the mess the men were in, and Sous Chef Jason caught Jason shaking the scallops, causing them to rip. Johnathan could not believe someone like him could mess up on the scallops, but his refires were accepted. On his soufflé course, he tried to focus on what to do and keep a positive attitude. However, Ramsay checked the convection oven and saw white lumps in the soufflé. He claimed that he was told to leave ribbons of egg whites during prep, but Johnathan was not pleased that he would throw the Sous Chefs under the bus. Sous Chef Jason said he never told him to do that, and Ramsay asked the former to bring over Sous Chef Christina. Sure enough, Sous Chef Christina said she never told him to do that, but he thought the former was not telling Ramsay the full truth. When the soufflés came out, some of them deflated, and the men were forced to serve some of them to their guests.

Both teams were named joint losers, and they were asked to nominate one each. During deliberation, Ryan deemed Jason the weakest leader of the men that night, but he disagreed. He said he ran the two courses to Ramsay’s liking and felt he was honest with everyone. As he felt he was getting ganged up on by the men, he asked how the burnt gnocchi and scallops came to be. Johnathan said that his attitude had not gone away since the start of the service, but he argued it was honesty. When he voted for Johnathan for nomination, he denied overcooking the latter’s scallops. However, Johnathan was too frustrated to argue, while Dahmere nominated him for elimination.

Jason was named the blue team's nominee for elimination and joined Donya from the red team. During his plea, he thought he led his dishes well and took responsibility for the slow plating. However, Ramsay heard him claim he led Johnathan’s scallop course and asked if the latter told him to cook all of them. He claimed that Johnathan told him and Dahmere to cook all of them. Ramsay asked him why he was up for elimination again, and he thought his teammates treated him like a scapegoat. However, Ramsay reminded him that he wanted him to own his course, not cook it. He survived elimination, but Ramsay warned him that while he had not given up on him, he was getting close to doing so. While being dismissed, he felt okay surviving elimination but felt frustrated being nominated so many times.[11]

Episode 12[]

While returning to the dorms, Johnathan was angry that Jason threw him under the bus at elimination and told him never to bring up his name again. However, he told the latter that it was a competition and that he should lead by example. That led to them bickering over the scallops again, as Johnathan said he lost respect for him still surviving despite being nominated five times. Johnathan went to the bedroom to cool off, but he did not understand why the former was angry. He claimed that Johnathan’s meltdown meant he was not worthy of being a head chef and tried to talk to him in the bedroom. However, Johnathan did not want to talk as he clearly did not get his frustration before storming away.

During the first Black Jackets Challenge, Jason rolled a C and picked cauliflower. After Sammi picked truffles, he was pleased as he had his dish planned in his head. During the cooking, he asked where his turnips were left, but no one said they moved them. He found them, but Johnathan said he was his own worst enemy with the dumb mistakes he made. He was the fifth person to have his dish judged by Ramsay, and he presented his miso seared halibut with a black truffle crust and lemon and miso Berblanc. It was deemed nice and plump, making him feel confident in his chances. However, Ramsay told him that the colors were too dark for his liking. He lost the challenge to Johnathan and Sammi and was forced to compete in the second challenge.

During the second Black Jackets Challenge, Jason grabbed New York striploin, fingerling potatoes, mushrooms, quail eggs, and black garlic for his dish. After getting quail eggs, he decided to make a steak and egg dish. When the final round began, he was the last person to get his ingredient, black garlic. Still, he said it was his favorite ingredient and felt the gods were on his side. He was the fourth person to have his dish judged by Ramsay, and he presented his herb and butter-basted New York Striploin with a sunny side-up quail egg and black garlic Ju. Ramsay asked why he trimmed the quail egg to be small, and he said he wanted it to look nice. However, Ramsay said he was concerned about the taste as the steak was unevenly cooked despite the other components working well. Still, he thought he had a chance to win a black jacket as everything on his dish made sense. He lost the challenge to Dahmere and Carmen and was forced to compete in the final challenge.

Before the final Black Jackets Challenge, Jason thought Ramsay was putting him through all three challenges to prove himself. During the cooking, Carmen, who watched the live stream at the dorms, noticed that he grabbed the lobster and wondered if he was trying to redeem himself from his signature dish. He decided to make a coconut Thai curry lobster dish and said his American Dream was to take lessons Ramsay taught him to heart and prove he was teachable. Also, he said he grew up on a farm in Minnesota and learned a lot about culture and cuisine after leaving at eighteen. He was the second person to have his dish judged by Ramsay, and while he knew the first two dishes he made were not the best, he also knew Ramsay wanted more out of him. He made a coconut curry Thai lobster. It looked better than his signature dish, and the lobster tasted well, but Ramsay felt the sauce needed more seasoning. After Ramsay had tasted all three dishes, he was eliminated from the competition. Before leaving, Ramsay told him that his determination was admirable, and he pushed him hard every day because he knew he could take it. During his exit interview, he did not believe he deserved to go home, but he said he was living in Ramsay’s world.

Ramsay did not comment on Jason's elimination, and he did not receive the coat hanging and portrait burning sequence.[12]

Episode 15/16[]

Jason was one of the seven chefs that returned for the final dinner service. He was Ryan's second pick for his brigade, after Sammi and was followed by Carmen and Sandra.[13] Back at the dorms, Ryan drew a penis on the paperboard, jokingly claiming that he was being drawn. As Ryan went over the menu, he explained to Carmen what a Voul-la-vant was and said he was not surprised he was on the former's team as he thought he was a strong chef. However, Ryan kept an eye on his mouth.

During prep, Jason said he would make sure he handled the meat station well, but while Ryan acknowledged his strengths as a chef, the latter was worried about his attitude based on previous experience. Still, Ryan was willing to go through one more night with him if it meant winning the competition. During dinner service, he was at the meat station. On their final ticket, he said he was not ready on the chicken breast, dismaying Ryan as it was not the time for that. When he served the chicken, it was undercooked, irritating Ryan as it was his reputation on the line. Ryan told him to refire it, and he claimed he wanted the former to win. While he served two when one was needed, the refire was accepted. As the chefs cleared up, he admitted that although he and Ryan did not see eye to eye, he knew the latter was a great cook and had a feeling he would win. Ryan eventually won the finale over Johnathan.[14]
