The fourth episode of Season 22 of Hell's Kitchen aired on October 19, 2023. In that episode, the chefs went head to head on American food, an advantage was used, and dinner service was a mass improvement that lead to one team winning.

Intro[]

Before dismissing the chefs, Ramsay warned Mattias that he was on thin ice, and he could hear the cracking. Still, Mattias knew he could bounce back as Ramsay kept him for a reason, and he wanted to prove the latter he did not regret it. Meanwhile, Donya hated being on the bottom as she came to win and wanted to win the American Dream. Donya apologized for her poor performance that night and was comforted by Raneisha and Melissa, as they had no hard feelings. Raneisha hugged Donya as the latter released the tears, and the former knew the latter had to stop being hard on herself.

Team challenge[]

The following morning, both teams came downstairs, and Ramsay gave them some cheering up after the previous night. The Cheer LA team came outside and gave them a pep rally to liven things up. As Melissa used to be a cheerleader in high school, she tried to keep herself from joining the group. After Cheer LA's rally, Ramsay explained that their next challenge was the American Classics Challenge, which involved modernizing classic American comfort food.

Cheer LA brought out giant cards with the dishes the chefs would cook, and Ramsay said they would go head-to-head on those dishes. Ramsay asked Melissa who she wanted to go up against, and she picked Brad as she considered herself more American than the latter. Brad accepted the challenge and chose C, which was a cheeseburger. Still, Melissa knew she must put her money where her mouth went as a cheeseburger was all American. Then, Jason decided to go against Carmen; she picked N, and they got chicken wings. That thrilled Jason as he elevated comfort food. Raneisha challenged Mattias, and the latter picked H, which was pizza. Mattias said he cooked pizza daily and claimed his body was 80% pizza. Ryan challenged Atoye, who picked E, and their dish was spaghetti and meatballs. Then, Leigh challenged Dahmere, who picked I, and their dish was Mac N' Cheese. Afterwards, Jermaine challenged Donya, and their dish was lobster roll. Sandra challenged Devon on the Philly Cheesesteak after picking an H, while Sammi and Johnathan competed on the fried chicken after picking a K.

With the pairings set up, Ramsay gave the chefs 45 minutes to cook their dishes. Brad was ecstatic to cook a cheeseburger and devised a double patty recipe with an au poivre sauce that Sous Chef Jason liked. In the red kitchen, Raneisha made a pizza dip with deep-fried pizza chips, but Sandra did not understand what the former was thinking. Still, Raneisha went with her plan. Twenty minutes left, Mattias deemed his pizza a redemption pie and knew his dish would be a winner. Ten minutes left, Donya had a great recipe for her lobster roll and could not wait to battle Jermaine as they were both from New York. Donya wanted to show that she could win, while Jermaine told the latter that Queens would beat the Bronx. Meanwhile, Sous Chef Jason warned Johnathan not to overcook the white chicken meat, but the latter planned to double-coat the fried chicken. But with five minutes left, Johnathan discovered raw chicken and rushed to put it back in the fryer. Eventually, everyone had their dishes cooked and plated on time.

The cheeseburger round began the judging, and Melissa hoped that her visually appealing dish would win. Melissa's Mediterranean-inspired cheeseburger looked delicious and tasted fresh, thanks to the eggplant. Then, Brad presented his double cheeseburger with a peppercorn au poivre sauce, but neither Ramsay nor Melissa was impressed with the presentation as it looked messy. Still, Ramsay said it tasted better than it looked and thought Brad had the perfect cook. After a tough decision, Ramsay gave both chefs a point, ending in a one-point tie. Still, Melissa did not mind as the women were off to a strong start. On the second round, Jason's sweet and salty glazed chicken wings with a vinegar dip were up. When Ramsay asked Jason how he confit the wings in 45 minutes, the latter arrogantly said he belonged in the competition. However, Ramsay did not like the salty taste despite Jason saying otherwise. In contrast, Carmen's gochujang marinated chicken wings were praised for the sauce, and she scored a point. While the women led 2-1, Jason said he still loved his dish. On the third round, Ryan's three meat meatballs and spaghetti were deemed delicious, while Ramsay did not like Atoye's penne and veal and pork meatballs as they were not an American classic. Ramsay reminded Atoye that he asked her to elevate the dish, not change it, and Ryan scored that round. The score was tied at two each as Sandra served her Italian Philly Cheesesteak. Ramsay loved the colors and the Italian influence, while Devon's Philly cheesesteak with coffee and pepper marinated sirloin had good pink meat from the cook. Both tied that round, and it was a three-point tie.

On the fifth round, Leigh presented her sage cream mac N' cheese and revealed that she grew her own herbs on the fire escape. Ramsay pointed out that planting herbs on a fire escape was not smart, but Leigh argued that she liked fresh herbs. Still, Ramsay loved the dish as he wanted to dive into it, and Dahmere's farfalle pasta with tarragon cream sauce was deemed glamorous. Both tied that round, and the score was a four-point tie. On the fried chicken round, Johnathan was nervous about the cook of his protein, but he hoped Ramsay saw his heart. While Ramsay was skeptical about Johnathan's fried chicken breast, the cook was spot on, and it tasted moist. Then, Sammi's chili aioli fried chicken had a beautiful cook, and Ramsay gave her and Johnathan a point. The score remained tied at five each, and Johnathan recalled how his daughter looked up to him. The pizza round was up, and Mattias presented his braised tomato pizza. Mattias said it was his time to shine, and an impressed Ramsay welcomed the former back. Then, Raneisha's pizza dip intrigued Ramsay, but he was not impressed with the outcome of the dip as there were too many things in it. While Ramsay understood Raneisha's attempt to think outside of the box, he told her she went to Pluto and gave Mattias the point. The men led 6-5, while Raneisha felt she went too far with her dish. The final round was the lobster roll, and Donya presented her East side lobster roll. Ramsay loved the dish's simplicity and gave her a point before moving to Jermaine's dish. Jermaine's warm lobster roll with bacon was tasted, and Ramsay returned the two in line before his final decision. In the end, Jermaine scored, and the men won the challenge 7-6. Jermaine felt he was through the roof after winning it for his team.

Reward[]

The men were rewarded with a trip to Santa Barbara with parasailing and dinner at the Hotel Milo. Ryan was thrilled as he had never gone parasailing before. As the men and Melissa drove to Santa Barbara in the SUVs, Dahmere was pumped as they deserved the reward after a hard-fought battle. During the reward, Devon felt that Melissa picked the right time to use her pass, while Mattias felt he was on cloud nine while parasailing. At the hotel, the group relaxed by the pool as Dahmere commented that they got to where they were, thanks to cooking. Dahmere said he grew up rough in North Philadelphia and was ready to relax with his feet up. Mattias agreed with Dahmere as he had been told all his life to do something other than cooking.

Punishment[]

The women were punished by baking bread for the following service, which included grinding the wheat by hand. Ramsay asked Melissa if she was going to use her Punishment Pass, and after the latter recalled how her teammates did not have her back in the previous punishment, she told Ramsay yes. Melissa decided to take Jason's place, though the latter claimed he had gone parasailing before. Melissa explained that she picked Jason because she wanted to see if doing the punishment would humble him.

During the punishment, Sammi felt her arms give out on her and got deflated when Leigh told her they needed more than what she grinded. Jason tried to advise the women on what to do, but his attempt sounded arrogant, and Donya was close to hitting him. Atoye waited for when the men came back as Jason kneaded the dough.

Before service[]

The following day, the men and Melissa returned to Hell's Kitchen, and both teams prepped for service. Once everyone was ready, Ramsay asked Marino to open Hell's Kitchen.

Dinner service[]

Carmen and Dahmere served a French onion crostini in the dining room. Also, Nikki Howard and Jennie Garth dined at the chef's tables. As the women received their first order, Raneisha noticed the nerves she and Leigh had. Still, she wanted to do appetizers and show Ramsay she could step up. However, Raneisha served a carbonara with too much sauce, and Sous Chef Christina called her out for trying to lie as she had seen her do it earlier. Leigh was not happy Raneisha did that, but the latter got her refire accepted.

The men received their first order in the blue kitchen and got to work. Mattias felt rejuvenated and was ready to fight, but he served a cold lobster tail. Despite the rough start, Johnathan was ready to bounce back and help Mattias get off the thin ice. However, Mattias' second attempt came out raw, and Ramsay slammed it into the former's chest after showing it to him. The men were forced to restart the order, and Devon got annoyed as he was trying to lead Mattias to success. Still, the refired appetizers were accepted, and both teams got appetizers out. As the women got started on entrées, Sammi walked up her halibut, only for Ramsay to notice it was burnt. Ramsay was not happy as it was for Garth, while in the blue kitchen, Ramsay caught Jason smearing cold butter on a steak for Howard's table. Jason claimed he was basting it, but Ramsay had Ryan look at it and confirm it was not. Ramsay sternly told Jason that smearing cold butter on a steak would ruin it and that he should follow his orders. Ryan knew Ramsay saw everything and thought Jason should not try to pull lies on the latter. Still, the refired order was accepted, and Howard received her order. In the red kitchen, Donya felt the women were working like a choir, and she was the baritone. Atoye dropped fries before the order was ready, but Donya was not upset as she knew the former would eventually rise like Beyoncé. The order was accepted, and Donya called it beautiful. In the blue kitchen, the men were on their following order, and Jermaine hoped there were no more mistakes. However, Ryan served a raw lamb, and Ramsay sternly told Jason not to smile while he was lecturing them. Ramsay could not understand their mess, and Devon told Ryan to get it together as the latter had a target on his back.

Ninety minutes into service, Ramsay caught Sandra not communicating with the women and asked if she could reprogram her mind. However, Sandra could not remember the order and failed to give Ramsay a time on her fish. Ramsay pulled Sandra aside for a chat and asked if she was trying after hearing her say she could not remember the tickets. Sandra said she was trying, but Ramsay did not believe her and told her to leave if she would stand in silence. Still, Ramsay encouraged her to speak up and do better, which Sandra agreed with. Sandra became more vocal, and the women served their order. Ryan walked up his refire in the blue kitchen, and it was accepted. Afterwards, both kitchens served their final orders and completed service.

Post-mortem[]

When both teams lined up, Ramsay was happy that he could announce a winning team because they finally completed a service. Ramsay named the women the winners and told the men to nominate two people for elimination. As both teams returned to the dorms, Raneisha was thrilled to see a male chef leave that night.

During deliberation, Jermaine said his vote would be for someone who had food sent back or had the most problems that night. When Jermaine asked who had food sent back that night, Mattias and Jason raised their hands, but Ryan did not. Ryan refused to be nominated for a lamb that was two minutes off, but Jermaine thought otherwise. Although Jermaine acknowledged Ryan as a leader, he thought the latter should have owned the raw lamb. Jermaine nominated Ryan and Mattias, with the former reminding the latter about the raw lobster. While Mattias acknowledged the two raw lobsters he served, he thought he bounced back from slight mistakes. Brad pointed out how Jason lied to Ramsay about the smeared butter, but the latter argued he was not lying and thought the men had his back. Then, Johnathan and Mattias discussed how Ramsay chewed Jason out for smirking during a rant, but the latter denied it. Mattias got annoyed by Jason's attitude as he felt the latter was a line cook with an ego. As the three men refused to go up for elimination, Jermaine said they must pick two of them.

Elimination[]

Jermaine announced Mattias as the men's first nominee for elimination and Jason as their second. During their pleas, Ramsay asked Mattias what happened with the raw lobsters. Mattias admitted that he brought it early, but he bounced back and felt he was getting stronger. Also, Mattias said he was a better teammate than Jason. Then, Jason argued that he had no steaks sent back and said he was a better teammate than Mattias. However, Ramsay reminded Jason about the smeared butter and said he was upset to see that as that was not how they basted a steak. Jason argued that he already had the steaks basted, and he was resting them with butter on top as he flashed them. However, Ramsay sternly told Jason that he wanted the steaks to be basted in butter. Mattias was eliminated for the raw lobster tails and showing no improvement in the first three services. During his exit interview, Mattias felt he did not deserve to go home as he was a better chef than Jason, but he owned up to the mistakes he made and felt upset he was leaving a loser.

After Mattias left, Ramsay told Jason that while he saw the latter's skills and talent, his talent meant zero if he cut corners. While being dismissed, Jason did not care if he was a jerk as he was interested in making Ramsay proud and winning. Then, Leigh was not happy to see Jason survive but knew it was not her problem as he was not on her team. Lastly, Ryan called that night a wake-up call as he had to be 110% daily.

Ramsay's comment: "Mattias has had three services to impress me. Unfortunately, he struck out."
