The fourth episode of Season 20 of Hell's Kitchen aired on June 21, 2021. In that episode, both teams cooked a brunch service, an advantage was used, dinner service was rough on both ends, and Ramsay made a major switch up after the elimination.

Intro[]

While going back to the dorms, Trenton deemed Alex’s actions unacceptable as he did nothing but help that night. The women commented on the chicken gate controversy on the way up as Morgana did not feel well after witnessing that. Keanu even asked the men to show some strength as she wanted an actual competition. Antonio felt mental pain after that night, and Payton deemed it the worst part of his career. Antonio believed it the worst part of his life as he already went through being homeless and nearly losing his mother, but realized that everything is being tested in Hell’s Kitchen. Even though Trenton knew how hard Ramsay was treating them, he refused to give up the opportunity. Antonio wanted to dig the men out of the ditch as they were already six feet down, but Steve made light of the mood by stating he was 6 feet.

Team challenge[]

The next day, both teams were up as Payton wanted to win for the men after losing four in a row. Once downstairs, Ramsay reminded them that the winner would become the head chef at Gordon Ramsay Steak at the Paris Hotel. For their next challenge, both teams would be making brunch for their future coworkers, introducing them to multiple employees from the Hotel and seeing the Chippendale dancers sparked up Victoria as she did not want to let them down. Finally, Ramsay announced that the first team to complete their dining room side won the Paris Hotel Brunch Service Challenge.

The menu included a fruit salad appetizer and sparkling lemonade along with three entrées: French omelet, filet mignon and eggs, and eggs benedict. Alex was determined to win the challenge and leave the dorms. As the women received their first order, Emily began cooking the omelet. However, Ramsay reminded the women that Megan’s steak took six minutes, while Emily’s omelet took two minutes. Sam asked for times on steaks in the blue kitchen, but Alex gave out inconsistent timings as he went from eight to ten. Steve knew it was a speed challenge as they must move quickly as one but felt that the timings were not registering with Alex on meat. When Alex gave out three minutes over Sam’s two, Ramsay got upset and asked who was running the order. Alex said he was and asked for eggs, but Ramsay felt he needed a diaper instead. In the red kitchen, the women sent out their first order as Ramsay praised Megan for her steaks. In the blue kitchen, the men tried to work on their first order for the showgirls. Steve and Alex got their entrées accepted, and a stream of food was leaving both kitchens. Sam felt the men had a rhythm going and hoped they could pull it off. However, Ramsay caught Trenton frying an egg on a cast iron pan as it would stick to the pan and asked the men to remind him to use a nonstick pan. Trenton felt embarrassed by that mistake. Trenton also noted his egg to have burst. In the red kitchen, the women were waiting on Emily’s omelet, who claimed it was undercooked. Ramsay warned Emily and Josie not to sabotage their team and ordered them to get a grip. Brynn deemed the omelet station as the women’s weak link and hoped they would get it together give them another win. Ramsay ordered Megan to take charge. The men found their groove in the blue kitchen as they served the overnight security table and were now on their final two tickets. However, another clash of timings pissed Ramsay. The women were on their final two tickets in the red kitchen, and Brynn pushed her team to keep it up. Ramsay looked to the men for the steaks but was not happy when Alex and Payton were constantly feeling them. When they were sent up, Ramsay sliced them and showed the men that it was well done compared to Megan’s medium-rare. Payton felt like an idiot as he could have done them instead of Alex and said that was why chefs drank. Eventually, both teams were on their final order, and it was a race to see which team finished first. Both teams brought their orders to the pass, but the women got theirs up first in seconds. As such, Ramsay deemed the women the winners, and Victoria said she made brunch her bitch.

Reward[]

The women were rewarded with a Caesars Entertainment’s Private Jet ride to see locales such as the Paris Strip, Hoover Dam, and the Grand Canyon. They also won a staycation at Planet Hollywood’s mega-suite. Also, Ramsay said that he was closing Hell’s Kitchen for the night. Emily was excited as it was the best reward they had.

During the reward, Steve felt he was the President walking into the private jet with the women. Keanu felt fancy as the women and Steve looked outside to see the locations Ramsay mentioned. As they toasted, Emily said it would be hard to go back to coach after the experience. At Planet Hollywood, Josie felt her jaw broke on her, and Victoria was happy to live a luxurious life. Keanu and Emily danced in robes as Kiya saw Steve come out of his shell by dancing with them. Then, Steve did a high kick as Kiya wanted to see the women keep their winning streak.

Punishment[]

The men were punished by preparing 600 boxes worth of pastries for different Caesar’s locations. Ramsay asked Steve if he would use his Punishment Pass that time, and the latter said he would as he busted his ass in the challenge. Ramsay asked Steve who he would swap places with, and the latter asked the women who had the better pastry skills. Brynn said she did, but Steve was reluctant because she already had a Punishment Pass. Still, Brynn was okay with doing the punishment as she wanted to show Ramsay her leadership skills. Ramsay suggested to the men that they listen to Brynn because she had some manpower.

Back at the dorms, Antonio demanded answers, but Alex argued that his rested steaks were the reason for being overcooked. However, Antonio accused Alex of not being confident about timings like he was about the chicken from the previous service and felt he was blaming Payton. Alex argued against that, while Sam got annoyed by Antonio’s rising ego and called him out for that. Trenton deemed the blue kitchen the worst one he ever worked in due to everyone talking over each other for timings and reminded Antonio of how his ceviche and squid brought the men down due to his poor leadership. Trenton was frustrated by his teammates as Antonio challenged him to step up as a leader. Then, Trenton revealed that he came from a broken family and was always underestimated before feeling upset that there were people on the blue team bringing him down.

Payton brought back the first batch of eclairs from the oven during the punishment and showed how flat they were. Antonio deemed them terrible, and as they kept struggling on pastries, Trenton got dismayed. Antonio could not believe they had to make 600 boxes when they only completed one, and Payton felt it would be a long night ahead of them.

Before service[]

The following day, both teams prepped for that night’s service. After some last-minute suggestions to the women, Ramsay asked Marino to open Hell’s Kitchen.

Dinner service[]

Hell’s Kitchen was opening early for a theatre crowd. Also, Ramsay invited two Las Vegas magic performers to dine at the chef’s tables. The women served Criss Angel and his wife, while the men served Penn and Teller. Kevin and Keanu served a seafood chowder tableside. After the women received their first order, Ramsay called out the men’s first order. Antonio and Steve communicated as the latter wanted everyone on top of everything. However, just when Alex walked up the cauliflower garnish, Antonio shouted that he needed forty-five more seconds for scallops. Alex did not know why Antonio was already struggling and wanted them to win something finally. When Antonio walked up the scallops, Ramsay and Sous Chef Jason saw them half seared and half raw. Ramsay the men for their opinion, and Payton and Sam said it was raw. In the red kitchen, Megan walked up her crab cakes while Josie sent up her flatbreads. Unfortunately, they were burnt, and Ramsay showed them to the women. Josie admitted that she did not check them, and Morgana decided to help her while giving her directions. In the blue kitchen, Antonio’s refire was accepted, and the men served their first order. While Kevin cooked tableside, he told his customers that he felt the men would bounce back that night. However, a fire erupted on his pan, and Marino warned Kevin not to burn his dining room. Josie accidentally dropped her refire in the red kitchen while walking it, and Brynn felt she was not stepping it up. Thankfully, Josie’s third attempt was accepted, and both teams served their appetizers.

Moving onto entrées, Ramsay asked Brynn for a time, but she said she would be ready when he was. Ramsay lectured to Brynn that she needed to drive the women as she was on meat, but she still did not get it to Kiya’s annoyance. Once things got cleared up, Brynn barked out orders for the women, but Morgana got annoyed that she was getting things incorrect and wanted her to shut up. Despite that, the first order was sent out. In the blue kitchen, the men received their first order of entrées, but another communication breakdown over timings occurred. Annoyed by that, Ramsay gave the men a lesson on organization by reminding Sam to drive the ticket and have Alex read the tickets. However, Alex struggled to remember the order and had to go back multiple times to get it right. Payton said that if Alex messed up on his third service, then he was gone. Then, Alex was late on garnish by a minute and a half, and a frustrated Ramsay threatened to kick out the entire team due to Alex’s poor performance. Ramsay asked Alex why he was not ready earlier, but the latter said he needed a breather due to overthinking things. Distraught overhearing that, Ramsay sent him outside for a breather, annoying Antonio as nobody should ever tell Ramsay that they were flustered. As Alex went to the museum, he decided to own up to his mistake, cleared up his head, and went back to the kitchen. As the men got their first order out thanks to Steve working on garnish, Ramsay warned Alex to wake up. The women received the VIP order in the red kitchen, but Victoria ignored Morgana and Brynn’s time calls. Emily acknowledged Victoria’s strength but was not happy that she was cooking alone. Victoria walked the salmon without telling anybody and only told Ramsay when he asked for times on the order. Ramsay accused Victoria of not caring, but she argued that she did as Criss Angel and his wife watched. Sam reminded Antonio about the mussel sauce for the halibut and refused to have another terrible service in the blue kitchen. So, Sam got vocal at Antonio for the sauce but got annoyed by his arrogance. When Sam walked the Wellington, Kevin told Antonio to walk the halibut. However, Antonio needed ten more seconds, leading an impatient Sam to jump over and help. An embarrassed Ramsay said he would not have sliced the Wellington had he knew Antonio was late, but the halibut was eventually served. Victoria walked the refire in the red kitchen, but Ramsay took the salmon and the women into the pantry room. Ramsay showed the women that the salmon for Criss Angel’s wife was raw and accused Victoria of not caring again. Victoria said she did care, but Ramsay warned her to either get a grip or leave. As the women walked back to the kitchen, Kiya told Victoria to focus and own up to the VIP order.

One hour into dinner service, Antonio had Alex walk his salmon up, but it turned out to be raw. Fed up with the men’s continual struggles, Ramsay took them back to the pantry room and accused them of showing no remorse. The men disagreed as Alex said they would push hard and communicate. However, Ramsay warned them to get it together or else. Victoria got her third attempt accepted in the red kitchen, and the women served Criss Angel’s table. Eventually, both teams got their remaining orders out, and service ended.

Post-mortem[]

After having both teams lined up, Ramsay deemed that night shocking and disappointing. Both teams were named joint losers, and Ramsay asked them to nominate two each.

During deliberation, Steve told Alex that they should never wait on garnish as they did earlier, but the latter said he had to focus next time. Sam said it was too late and nominated Alex and Antonio, but Alex argued that he pushed through that night and nominated Antonio. However, Antonio said he had a bad day and refused to give up without a fight. Then, Alex told Kevin that he got flustered on fish, but the latter felt he had more to give to the team. Trenton was skeptical as it was a close race between Kevin and Alex.

On the red side, Keanu nominated Victoria and Brynn, the former for not communicating that night. Victoria acknowledged that but argued that Brynn’s over vocalness was worse. Brynn asserted that she was trying not to be a dictator and told Morgana that she should have told her to shut up if she thought it was a problem. Still, Morgana argued that Brynn would have gotten salty if that happened. Morgana nominated Brynn but struggled on her second. Then, Keanu recalled Josie’s burnt pizza and changed her vote from Victoria to the latter. Josie got upset by that while Emily nominated Victoria and Brynn. Angry by that, Brynn stormed off as she knew she had the fight back and refused to go home now.

Elimination[]

Emily announced Brynn as the women’s first nominee for elimination, with Josie as their second. Trenton announced Alex as the men’s first nominee and Antonio as their second. During their pleas, Ramsay asked Josie if she was done, but she said she did not lose her confidence and knew she could communicate well with her teammates. Then, Ramsay asked Brynn if she was the weakest chef on the women. Brynn said she was not and felt Victoria was the weakest. Ramsay agreed, sending Brynn back in line and calling Victoria up. Victoria thought she had the leadership qualities and knew she had to find her voice, but Ramsay deemed her performance shocking. Ramsay deemed Alex’s performance a disaster, but he thought he had the willingness and drive to bounce back. Lastly, Antonio said he would bounce back from his mistakes. Alex was eliminated for his poor performance on garnish, admitting to being flustered in the kitchen and not backing up his talk. During his exit interview, Alex was bummed to lose but was glad to work under Ramsay and show what the next generation was capable of.

Team Switch[]

After Alex left, Ramsay said he was not done yet and asked Victoria for her jacket. While he acknowledged that Victoria had a bad night due to carelessness, Ramsay placed her on the blue team. Then, Ramsay told Josie to get a grip before sending her and Antonio back in line. However, Ramsay said he did not want a repeat of that night and did a team swap by placing Megan and Emily onto the blue team and Sam and Payton on the red team. After the team swap, Ramsay hoped he had two confident teams.

While being dismissed, Emily said she would miss the ladies but felt the men would welcome her and Megan with open arms. On the other side, Keanu was unsure with dealing with Sam and Payton and knew it would be a challenge to whip them into shape. Lastly, Trenton felt having the women on the blue team would make them stronger and thought it would be an all-black jacket team.

Ramsay's comment: "I was shocked when Alex asked me for a breather on the first ticket of the night. Fortunately for him, he's got plenty of time for that breather now."

  • This episode marks the first time where levelling the numbers and reassignments were done simultaneously during the team switch after the elimination. Therefore, this marks the first time Ramsay reassigned an odd number of chefs with five (three from the red team and two from the blue team).
