The fifth episode of Season 11 of Hell's Kitchen aired on Fox on April 2, 2013. In that episode, the chefs' protein knowledge was tested, a special breakfast service took place, and one chef made one of the stupidest mistakes in the show's history.
Intro[]
While going back to the dorms, Jacqueline felt awful after surviving elimination because she thought she was going home, and would never let that happen again. However, Cyndi was still not over Jacqueline's pink chicken incident, and Jessica confronted her teammates about why she was nominated as she did not know what she did wrong. Then, Jessica declared she was not the weakest chef on the red team by far and she would prove herself even more. Amanda acknowledged that nominating Jessica for the reason they did was very stupid. Mary apologizing for that, and Amanda comforted Jessica by kissing her on the arm.
On the blue side, the men toasted to their victory, with Dan showing how amazing it was about winning. Michael declared that the monkey was off their back, and Anthony stating it was the spark they needed and it was a new beginning for the men. Finally, Ray motivated his team by saying it could be done.
Team challenge[]
The following day, both teams went downstairs to the dining room. Ramsay was waiting for them in front of a large counter of different proteins, which impressed Anthony, who even stated that it was making him hungry. Ramsay explained that after losing many weak chefs, he was determined to find the real talent to emerge and added that the palate was the element separating the chefs from the cooks. For the Protein Identification Challenge, each team would have to identify five proteins from different dishes in the least possible amount of time. Ray was confident, as he claimed having trained all his life for a palate challenge, and he could tell the difference between a cat and a dog. After Ramsay explained the challenge, he announced the men would go first after winning the previous service before dismissing the women to the dorms. Michael and Jon volunteered to go first, with the latter telling both were the dynamic duo and there was no way they could lose.
Michael and Jon landed on the turkey meatballs on their first turn, but Michael declared it was not as easy as it looked because of the tomato sauce. During their turn, Barret was getting concerned as they were constantly running back and forth. After picking lamb, venison, veal, pork, buffalo, rabbit, goat, and kangaroo, they finally chose turkey on their ninth attempt. Jon was disappointed as he felt he let his team down. The second pair who competed was Dan and Zach, and they landed on the chicken tacos. Zach boasted on how much he trained his palate and how he knew right away it was chicken. They succeeded in getting chicken correctly on their first attempt. Zach concluded by saying it was not rocket science. After, it was Barret and Jeremy's turn, and they landed on the duck enchiladas. Jeremy thought straight away that it had to be an animal from that area because it was a Mexican dish. After guessing pork, venison, buffalo, and veal, they got the duck on their fifth attempt when Ray declared he knew it was duck from behind them, and he and Zach suggested it to Barret and Jeremy. The fourth pair was Ray and Anthony, and they landed on veal chop. Anthony declared that with eight and a half minutes already gone, they had to nail their dish. With Ray closing his eyes and remembering his childhood memories, he knew exactly it was veal, and they got it correctly on their first attempt, while he added that there was something you know. Finally, Michael and Jon went for their second turn, and they landed on swordfish & chips. Zach motivated both of them by saying they should trust their palates. Jon acknowledged it was an opportunity to redeem himself and wished they could get it right in one or two attempts. After guessing cod and sturgeon, they correctly guessed swordfish on their third attempt, stopping the clock at 10:33, with Ramsay commenting on how they were overthinking again. Dan wished the women would struggle as much as they did after acknowledging they could have done it in 5 minutes.
The women went downstairs, Ramsay revealed them the time to beat, and Cyndi wondered what took them so long and added that they would be pathetic if the women did not beat that time. After Ramsay stated that the clock would count down, Ja'Nel and Jacqueline volunteered to go first, and they landed on turkey meatballs. They got it correctly on their first attempt, and Jon was scared as he thought they would win the challenge in less time it took him and Michael on their first turn. After, Cyndi and Susan were the second pair who competed and landed on chicken tacos. Cyndi said she was throwing things in her mouth trying to taste things, and they got chicken on their first attempt as well. Then, Jessica and Nedra went next, and they landed on duck enchiladas. Because the sauce was red, Nedra thought the protein should be red as well. Anthony hopped that something catastrophic would happen to the women as the men have not won a challenge yet. Jessica and Nedra guessed venison, veal, buffalo, beef, squab, and quail without having the correct protein. Jon started to regain his confidence by comparing the two women to himself and Michael during the turkey meatballs round. The other women were getting nervous and motivated Jessica and Nedra. Cyndi stated that they should guess what was there fast. The two women incorrectly guessed rabbit and kangaroo, with Ray jokingly telling them he thought it was a kangaroo. Then, with Ramsay reminding that the clock was ticking, Jessica declared her mind was blank as she did not know. Jacqueline suggested goat, and Nedra declared that her team would kill her, that she was sweating like two fat bitches, that she was shaking like a stripper, and that she hoped to get the next one right. They finally picked duck on their ninth attempt, and Amanda declared that she and Mary have to get their protein in one or two tries at best. While tasting, Mary immediately noticed the bone thicker than the chop, so she went with veal and got it correctly on their first attempt, which made Mary very happy and saying that "Mary the butcher" came through. Ja'Nel and Jacqueline landed on swordfish & chips for the last turn, and Dan hoped that they would screw up really bad. Jacqueline was not worried about anything as there were so many whitefish they could choose from. They chose catfish on their first attempt, but it was incorrect, and Anthony wished that only red lights would come out. They also got cod and halibut incorrectly, Susan acknowledged they had to figure it out quickly, Zach recommended to take their time, Ray jokingly suggested the tilapia, and Ja'Nel and Jacqueline finally chose swordfish on their fourth attempt, therefore winning the challenge for the women. Cyndi was very proud to have won four consecutive challenges and wondered what was wrong with the men, adding she would beg for a sex change if she were one.

Reward[]
The women were rewarded with a day at Malibu, in a $15M beach house, as well as getting there in convertibles, making Nedra very happy. Arrived outside of the restaurant, the women got into the convertibles. Still, Nedra struggled to enter because of her large breasts.
Arrived in Malibu, Amanda declared that they were turning heads as they were eight hot chicks in three hot convertibles. When they arrived at their beach house, they were all very excited, with Ja'Nel declaring it was huge and that she could see straight through the ocean. Finally, the women toasted champagne glasses to Ramsay.
Later, they went to the beach for wakeboarding and volleyball activities. Laird Hamilton and Gabrielle Reece greeted them, which excited Susan, who knew they were the king and queen of the beach. When Hamilton took his shirt off, Nedra was infatuated by him and wished that he would rescue her at one point. Susan and Jessica went wakeboarding first, but when Jacqueline did it, she said it was very easy until she tried to stand up, which was when she fell in the water. After, Susan and Jessica fell in the water twice each. When Cyndi did it, she fell while she was on her knees and struggled to get back on her board, making Amanda laugh as she compared her to a baby on the raft. After that, they played volleyball with Reece.
Punishment[]
The men were punished by taking deliveries of wheat flour, grinding it and making bread from scratch, which made Zach very disappointed as he wanted to win and go on the beach. While they were carrying bags of wheat, the women came by, annoying Jeremy, who yelled at them to shut up and get out of the way, and Dan, who said he was tired of those verbal slipovers.
In the kitchen, Sous Chef James gave instructions to the men, and they started grinding the wheat using mortars & pestles. Dan said he felt like a caveman and jokingly asked Ray if that was like grinding when he was a kid. Then, Barret declared that it sucked and that he wanted to be in Malibu at the moment. Later, when they were milling the bread, Jon declared it was stupid. Michael said that even though he made bread before, he never did it that way and that he never made anything that hard in his life. Ray declared he was too old for that before cracking some of his bones in his back and neck.
Later, the men were exhausted from milling the flour, with Barret not caring anymore. Then, Jeremy collapsed on the counter, making his teammates concerned. When they asked him if he was all right, Jeremy did not answer and declared that he needed a medic, which Barret called for him. When the medic entered the kitchen, Jeremy revealed that he was feeling dizzy, overheated, and having a headache. Jeremy also revealed he already had a stroke before. Jon felt like a dick as he knew he was one of the biggest reasons for the men's loss before adding it would kill him if Jeremy would die right there. The medic took Jeremy's pressure, revealed it was high, and he had to be taken to the emergency room. Jeremy was worried it could get him out of the competition for good and stated that he wanted to win but not to die. Finally, Dan wished Jeremy would be all right.
Before service[]
When the women came back from their reward, they were taunting the men while they were prepping. Almost three hours later, Jeremy came back from the hospital, revealing he was not eating enough, leaving his teammates in disbelief. Zach started laughing, and Jeremy offered his help to continue prep, but his teammates answered that they got it and that he should go back to the dorms and relax. After he left the kitchen, his teammates started laughing, with Ray jokingly saying the doctor needed a second opinion. Back in the dorms, Jeremy revealed what happened to him to the women. Nedra did not believe it was because he was not eating, referring to his size. Then, Jeremy looked in the fridge, took out some packaged chicken and eggs, and made himself a meal. He said that he was more hungry than ever, and after eating, he would be good to go.
After finishing prepping the bread dough, the men went to sleep, only to wake up at 4 am, as their second part of the punishment was to bake it. Zach was still really tired in the kitchen, stating that the roosters were not even up yet, and he was in his third dream. He and Barret yawned, and Sous Chef James asked Jeremy how he was feeling. Jeremy answered that he was feeling better as he was not hungry anymore.
Two hours later, the men finished baking the bread and went to sleep for another half hour. Then, Ramsay made a phone call to the dorms, Jon answered, and Ramsay ordered him to get both teams to the dining room immediately, which they did. Barret acknowledged that they should move quickly when Ramsay was asking for something as something would go down. Cyndi was not ready for anything as it was still too early in the morning. After greeting the chefs, Ramsay explained that as chefs, they were supposed to work long hours and that other professions sacrificing time were emergency doctors, nurses and EMTs. Then, he revealed that they would greet some of those guests for a breakfast service. Zach felt honored as those people were saving lives constantly, and they should treat them with the utmost respect. Finally, Ramsay revealed that the challenge would be like a regular dinner service. The first team completed their tickets being the winners, and somebody would be eliminated afterward. Jeremy swore that it would not be him and that he would pull his team to win no matter what. The teams had 15 minutes to learn the dishes, which were a croissant breakfast sandwich, eggs Benedict, a classic omelet, blueberry and banana pancakes, and smoked salmon with scrambled eggs, by studying the sample plates. During prep, Jeremy was seen asking some questions to Barret.
Breakfast service[]
The emergency workers started filling the restaurant, and in the red kitchen, Ja'Nel motivated the team, and Jacqueline dropped some eggs on the counter. After Zach motivated the men, they received their first ticket, with Ramsay asking them to give the extraordinary workers something back as there were many of them. After the first ticket was called, Michael and Jon gave a little pep talk to the team by saying they should not rush, and Ray dropped some of his eggs on the counter. He blamed the pans by saying they were too small, Ramsay asked him to stop, and he asked Ramsay for a bigger pan. Michael gave him one, with Ray responding by saying he loved him and restarting his eggs. Cyndi's eggs were stuck to the pans in the red kitchen, and she struggled to get them out. She acknowledged that they had to come out of the gates quickly and that they had to keep the momentum going, and Ramsay asked the women to wake up after she gave two minutes on her omelets.
In the blue kitchen, Anthony called thirty seconds for the first ticket. Still, Jeremy did not give any answers, infuriating Ramsay. Jeremy confessed that he did not hear the order, which infuriated Ramsay even more, and Anthony was dismayed as he compared Jeremy to when he was nominated after the opening night. Then, Anthony repeated that he needed thirty seconds on his omelet. Still, Jeremy asked how much time he needed before starting to walk with his croissant. His teammates pulled him back, Anthony repeated thirty seconds once more, and Jeremy still asked for a time. Barret told him to make some more croissants before mimicking his oblivion face. Jeremy stood in front of his station with his croissant in his hands, doing nothing, infuriating Ramsay, who mimicked his standing still action, and Anthony ordered him to walk. He brought his croissant to the pass, but the smoked salmon was still missing. Jeremy went to the back, asked Dan if he had a plate that he could walk with, which the latter answered not as he was almost done, but Jeremy walked with it anyway. However, it was revealed that the plate Jeremy brought to the pass was the sample one that Ramsay cooked an hour earlier. That infuriated Ramsay, who called Jeremy a disgusting pig, and he berated him and Dan by saying they could have killed somebody. Jon was dismayed by that mistake, saying that Jeremy should have noticed that plate was really old, and he asked him to get a rubber spatula at the back. While Jeremy was out of the kitchen, the rest of the men completed their first order.
In the red kitchen, Ja'Nel and Cyndi rallied and served food at a good pace, with Ramsay complimenting Ja'Nel for the perfectly cooked scrambled eggs. After Ramsay called the following ticket, Nedra was still tired and dropped her tongs on the grill. She confessed that she hated the morning, and she was pushed by Ramsay, who ordered her to wake up. When she sent her first eggs Benedict, they had soggy bread, and Ramsay asked her why she was using it as there was toasted one behind her. She answered by saying Yes, Chef, but he did not appreciate that answer. He asked her the same question for a second time, which she answered that she did not know they were soggy and that she had another one coming. Ramsay was discouraged and smashed the bread on the dish, while Amanda urged her team to bounce back. Amanda also jumped on Nedra's station to help, fearing that she would break the team down, and ordered her to stop smashing the eggs. Nedra retorted to Amanda that she was killing her, but Amanda did not appreciate it and said she had to do everything to Nedra. Because of her help, Nedra's second attempt at the eggs Benedict was accepted. In the blue kitchen, Ray sent his scrambled eggs to the pass, but they lacked seasoning. Ramsay was furious, ordered the team to taste it. When Ray said that he would put salt and pepper in it, Ramsay was dismayed and stated that he needed a doctor. Ray started again, was motivated by Zach. In the red kitchen, Amanda took the lead, and dishes were flying out of the kitchen.
On the next ticket, Jacqueline needed three minutes on pancakes while declaring it was easy, but she messed her first one, trashed it, and gave five minutes instead. Ramsay reminded her it was only breakfast, Nedra offered her help to Jacqueline, but she answered that she only needed her pancakes to be cooked. Nedra figured that they must get themselves together because she knew that she could be eliminated if they would lose. Then, Jacqueline used a rubber spatula to flip her pancakes, but Amanda and Nedra said that she could not, with the latter asking if she had to use the bottom of her toes to flip them because she did not have a proper spatula. After, Jacqueline sent her pancake, and with Nedra's help, they continued to push their dishes. In the blue kitchen, Ray bounced back from his under-seasoned eggs and got complimented by Ramsay, who told him to make every one of them like the one he just served. Meals were coming out of the blue kitchen at a great pace, and the men had three tickets left, while the women had two left. Zach verbally pushed his teammates, and in the red kitchen, Jessica clapped in her hands to motivate her team, and Amanda gave clear instructions to Jacqueline. Anthony vocally led the team in the blue kitchen, and dishes continued to be sent to the dining room, with Jon acknowledging that pancakes were a piece of cake. Jacqueline's second order of pancakes was too dark in the red kitchen, and Ramsay angrily tossed it in the bin. Ja'Nel acknowledged that pancakes were dragging. So, all the women grabbed a pan and started to cook pancakes. Michael was determined to do whatever it would take to win in the blue kitchen, and his eggs Benedict were accepted. In the red kitchen, the pancakes were finally accepted as well. The women were on their last ticket, and so were the men. Amanda and Zach rallied and motivated their respective teams to push their last order out. Cyndi said that to win, they had to send the pancakes in the next ten seconds. Near the end, Jacqueline burned another pancake. In the blue kitchen, Jeremy clapped his hands celebrating, but Dan told him not to do it. Anthony was amazed that the men could win, and finally, the men succeeded in sending their last ticket, therefore winning the service. The men celebrated, with Ray being very stoked. After, Ramsay went to the red kitchen and told the women that the pancake station was the most disorganized he has ever seen in his life. He went to the trash bin and removed the trashed pancakes, asking how many went in the bin before telling them they were way out of control.
Post-mortem[]
After the service, Ramsay went to the dining room and said to the emergency workers that it was an honor to cook for them that morning. Then, he went to the red kitchen, told the women their service was a disaster and asked them to nominate two people for elimination.
While going back to the dorms, Ja'Nel was not happy to send somebody home as it was not even 9 am, and some of them have not woke up entirely yet. During deliberation, Amanda quickly considered Jacqueline and Nedra for their respective shortcomings. Cyndi also considered Jacqueline, saying that they would have defeated the men if the pancakes were properly done. She also considered Nedra, which infuriated the latter, who left the conversation, went upstairs and declared that she did not deserve to be nominated as she was not the weakest. That led Ja'Nel to ask Nedra who should be instead of her, and the latter immediately targeted Mary, despite the latter not making any mistakes. Mary was confused by that statement and said that she worked really hard and did not deserve to be nominated. Amanda asked Nedra why Mary should be nominated when there were many problems with the eggs Benedict. That question made Nedra explode in anger. Finally, Mary asked if they should base their nominations on overall or that service, as they should soon reach a decision.
Elimination[]
Cyndi announced Jacqueline as the first nominee for struggling with pancakes and even recalled the raw chicken from the previous service. She also announced Mary as the second nominee. Still, Ramsay was surprised by that decision, and when he asked why, Cyndi answered it was because she was one of the weakest players on the team. Amanda was shaking her head, and when Ramsay asked for her opinion, she declared that she would have nominated Nedra instead of Mary. Still, Ja'Nel disagreed by saying that she would rather have Nedra on her team than Mary. After noticing that things were falling apart in the red team, Ramsay called Jacqueline and Mary down. During their pleas, Mary said that she was a fighter and that she was bouncing back after making a mistake. Jacqueline said that she had the knowledge and power. Ramsay responded by saying that she had the power to burn pancakes, which was the easiest dish. However, Jacqueline blamed Nedra for not being able to flip a pancake, and Nedra blamed the spatula she was using.
After deliberating, Ramsay sent Mary and Jacqueline back in line, saying that one of the chefs was way over their head, with Nedra starting to cry. But, as he announced the person who would be eliminated, the episode ended as a cliffhanger.

- This episode marks the first time a team won the first four challenges in a row. Conversely, this marks the first time a team lost the first four challenges of this season, and the second time a team lost four challenges in a row after Season 9's blue team.
