Bryant Gallaher was a contestant on Season 13 of Hell's Kitchen. He was the runner-up of that season.

Season 13[]

Episode 1[]

Main article: Episode 1301 - 18 Chefs Compete

While the chefs were on their way to Hell's Kitchen, the bus pulled over to Pacific’s Cinerama Theatre as Ramsay wanted to show them an inspirational video before going there. As the chefs went to the theater with popcorn, Bryant admitted that he had no idea what was going on, but was willing to relax for a bit. After Ramsay revealed the grand prize of the season, he asked the chefs to cook their signature dish.

During the Signature Dish Challenge, Bryant was the seventh person from the blue team to have their dish judged by Ramsay and went up against Katie. He made a wild mushroom roulade and scored 4 points for being ambitious. Despite that, the blue team lost the challenge 23-24, and they were punished by setting up the dorms for both teams, and carrying the red team's luggage when they would come back from their reward. During the punishment, he powered through carrying a mattress by himself as he wanted to get the punishment done quickly. But, when he saw JR taking a break, he was not happy about that as he was working his ass off.

During dinner service, Bryant was on the meat station with Steve. At one point, Steve told him to help JP and JR on fish as the two of them were struggling. However, JR rejected his help, and he said that the latter was out of his mind.

The blue team lost the service, and they were asked to nominate two people. During deliberation, Bryant angrily yelled that he offered his help to JR, but he got shoved away despite the fact that JR sucked after the latter argued that he got his food out in time.

He was not nominated for elimination.[1]

Episode 2[]

During the Geoduck Challenge, Bryant was not seen participating during the first part, but during the second part, he was paired with Frank. They were seen only having one of their attempts accepted. The blue team lost the challenge 14-15, and they were punished by cleaning all the sand outside of the restaurant, prepping the remaining geoduck for the next service, and eating a boiled salt cod for lunch.

During the punishment, Bryant said that the heat was motivation to make sure they would not lose again. While eating lunch, he was not impressed with Sterling cleaning his plate and asked if he had something to prove. That led to an argument between the two of them, with Sterling asking him if he wanted a hug, but he rudely rejected it, and called him a damn fool. Their argument continued when the men were getting the geoduck cleaned, when Sterling asked for a zester, only for him to rudely tell him to look in his knife kit.

During prep, Bryant accepted Sterling's apology for their argument, and both of them hugged. During dinner service, he was on the appetizer station. After communicating with Steve, his risotto was deemed perfect, and Ramsay told him not to piss his pants, and keep the bar up. After the blue team was kicked out of the kitchen, he was pissed that they could not even complete their last table, and compared his anger to someone stealing his bike.

Both teams were named joint-losers, and they were asked to nominate two people each. During deliberation, Bryant pulled Sterling aside, and told him not to take the full blame on meat as Fernando was on the station as well, but secretly said that he was trying to put somebody who had a good chance of surviving.

He was not nominated for elimination.[1]

Episode 3[]

During the Jacket Challenge, Bryant was the fifth person from the blue team to have his dish judged and went up against Kalen in the lobster spring roll round. He won the round over Kalen, and the blue team won the challenge 6-4. They were rewarded with a trip to the Venice Beach boardwalk, a zip line experience, and lunch on top of the Erwin Hotel.

During dinner service, Bryant was on the fish station with Sterling. He got concerned at his partner's performance and micromanaged him on the scallops. When the team began working on entrées, he sent an overcooked and mushy halibut. Ramsay warned him that if he made one more mistake he'll kick him out. On his second attempt, his halibut was raw, and that caused Ramsay to kick him and Sterling out. Back in the dorms, he apologized to Sterling for getting him kicked out for his mistake. Despite that, the blue team won the service.[2]

Episode 4[]

Back in the dorms, Bryant was feeling down over his poor performance, but Sterling gave him a pep talk, urging him to ask for help if needed. It worked as he refused to have his poor performance defeat him, and promised Sterling that the next day would be redemption.

During the Brunch Service Challenge, Bryant was on the baked eggs Florentine station with Sterling. He ignored the latter's warning that the spinach needed salt as he tasted it fifteen times already, but even Ramsay said that it needed more salt, and was asked if he was okay. Because of his struggles, the men could not serve their first entrée, and despite getting reamed by Ramsay, and his teammates taking over his station, he refused to give up, but still sent a raw egg. On their last ticket, his eggs were still raw, and it caused the blue team to lose the challenge. They were punished by grinding chorizo sausages for the next service.

During dinner service, Bryant was on the garnish station. He was not seen much, the blue team lost the service, and they were asked to nominate two people.

He was not nominated for elimination.[3]

Episode 5[]

During the Protein Identification Challenge, Bryant was paired with Frank, and they were the third pair to compete. They landed on the elk lasagna, and they managed to get it on their first attempt. The blue team won the challenge 7:07-7:41, and they were rewarded with a trip to the Annenberg Beach House in Santa Monica.

During the Family Night dinner service, Bryant was on the meat station. He was not seen much, except when Ramsay praised his steak for being cooked beautifully, and the blue team won the service.[4]

Episode 6[]

During the Farm Animal Challenge, Bryant was paired with Fernando, and they chose veal and yams. His dish was not used for the second part, and the blue team won the challenge 28-25. They were rewarded with a trip to the Santa Barbara wine country, to sample wine and eat lunch.

During dinner service, Bryant was on the appetizer station with Aaron. He was not seen much, but both teams were named joint-losers, and they were asked to nominate two people each. During deliberation, he was ready to drop the dead weight and asked who they were going to nominate, before announcing that he would lose Sterling. Then, he agreed with Sterling that Steve should be nominated, based on his recent poor performances.

He was not nominated for elimination.[5]

Episode 7[]

After Katie's elimination, Bryant said goodbye to Sterling, who was transferred to the red team.

During the Italian Cuisine Challenge, Bryant competed against Sterling, and their dish was Fettuccine Alfredo. He was the last person from the blue team to have his dish judged and presented his herb fettuccine pasta with lemon, thyme, and parsley. While it was criticized for having too much on the plate, he won the round over Sterling. The blue team won the challenge 3-2, and they were rewarded with a $3000 shopping spree at American Rag Cie for a new wardrobe, and lunch at Cecconi’s.

During the Italian Night dinner service, Bryant served a clam cippolini tableside. When he was serving the Italian Consulate's table, he struggled to describe what the dish was and called it awkward. Both teams were named joint-losers, and they were asked to nominate two people each.

He was not nominated for elimination.[6]

Episode 8[]

After Ashley's elimination, Bryant said goodbye to Frank, who was transferred to the red team and welcomed Sade as a new teammate.

During the Dog Show Planning Challenge, Bryant wondered if Sade knew they were not actually cooking for the dogs, and added that nobody could be that stupid. He was the third person from the blue team to have his dish judged and presented his pork chop with red berry sauce. It was praised for being delicious, along with nailing the chop, and he won the round over Roe.

The blue team eventually lost the challenge 2-3, and they were punished by setting up the dining room for the next service, and washing and grooming the dogs that the American Kennel Club sent over. During the punishment, Bryant believed that if the team switch had not happened, the blue team would have won the challenge, though added about how sad it was to admit, as it meant having Frank back. Later, he was annoyed with Aaron’s micromanaging leadership.

During the Dog Show dinner service, Bryant was on the appetizer station. He was not seen much, except when he compared Steve and Santos' poor communication to a bulldog and a chihuahua, and the blue team won the service.[7]

Episode 9[]

During the Craps Challenge, Bryant rolled an L and chose leeks. His dish was chosen to be the blue team's representative, and he presented his Chilean sea bass with cauliflower purée, melted leeks, sweet tomato jam, and tossed Mache in olive oil. While it was praised for being beautiful, having a moist sea bass, he lost the challenge for the blue team as his daikons were under seasoned. However, he called that decision bullshit, stood by that his dish was better than La Tasha’s, and tried to argue that he wanted to keep the original texture, even though Ramsay reminded him that he had to season them no matter what. When he tasted Sade's dish, he arrogantly said that it tasted salty.

The blue team was punished by taking part in Double Delivery day, which included ice, wine, and a 650 pounds halibut. During the punishment, Bryant was confronted by Sade about how he did not taste her dish, and while he argued that she should have fought back, she retorted that she did before reminding him how his dish cost them the challenge. That led to an argument where Sade called him a fucking idiot, but Steve calmed both of them down.

The next day, Bryant was told by Steve about his sore leg, and while he was concerned, he hoped that he would recover quickly. During prep, he wondered what would happen to Steve, and later, found out that the latter would not compete any longer. During dinner service, he was on the fish station. He was not seen much, and the blue team won the service by a mile.[8]

Episode 10[]

Back in the dorms, Bryant was told by Aaron about how he felt he did not want the prize position. Even though he reminded him that the salary was $250,000 and that he had a chance to work under Ramsay, he felt that Aaron knew that he could not win, and added that if he was in Ramsay’s shoes, he would kick him out.

During the Indian Cuisine Challenge, Bryant got the wild card ingredient and chose tomatoes. He was the third person from the blue team to have his dish judged and went up against Roe in the cod round. He presented his dry-rubbed cod with champagne vinegar, and it was criticized for not being pleasant, along with the champagne vinegar not being Indian based, and he scored 4 points. The blue team lost the challenge after a tiebreaker at 22, and they were punished by prepping for the next service and cleaning the front entrance of the restaurant. During the punishment, he called Sade fucking annoying, mocked her whining, and reminded her that she was there to cook.

During prep, Bryant teased Aaron over his multiple jobs, got annoyed by Sade, and said that her attitude would not fly in the kitchen. During dinner service, he was on the garnish station. He wanted to show Ramsay that he could lead, but when he decided to help Aaron, he sent raw scallops. Despite sending his refire, he got into a spat with Sade over his attitude. Later, he accused Aaron of only knowing how to make desserts after the latter sent a raw halibut, covered a fire on Aaron's station, and continued to be at Sade's throat. Then, he sent up raw garnishes but recovered.

The blue team lost the service by a mile, and they were asked to nominate two people for elimination. During deliberation, a pissed Bryant refused to go down for the blue team’s poor performance and said that he was done playing nice. He confronted Aaron over why he did not listen to him, and while Aaron explained that he was not as organized as Sade was, he accused him of being unable to cook and listen at the same time. However, that led to an argument between the two of them, Aaron angrily told him to shut the fuck up, while he told him that he fucking sucked. Then, he considered Fernando as he has been nominated once before, but the latter felt that he could not figure out a proper argument. As his temper continued, Sade told him to simmer down, and Aaron reminded him how he sent raw scallops, even though he retorted that he would have taken responsibility. Then, he taunted the blue team to nominate him as he would survive anyway, but while Aaron said that nobody like him could be an executive chef due to his poor attitude, he argued that nobody would work under a pastry chef like him that could not cook fish. After, he left to be alone.

Bryant was the blue team's second nominee for elimination, with Aaron being the first. During his plea, he said that he had the strength that Ramsay was looking for and that he could lead. He survived elimination.[9]

Episode 11[]

Main article: Episode 1311 - 8 Chefs Compete

During the Blind Taste Test, Bryant got dunked twice during Santos' turn. He was the last person from the blue team to compete and went up against La Tasha. He scored three points by correctly identifying potato, bell pepper, and mozzarella. When the score was tied at 4, he was chosen by the blue team to compete in the sudden death round. However, he failed to get fennel, and the blue team lost the challenge. They were punished by cleaning the dorms.

During the closed VIP dinner service, Bryant was told by Santos to do most of his dish, but he felt that he was doing all of Santos' work. On Sade's course, he felt that she got lucky when Sous Chef James brought more salmon after she overcooked their initial batch. He was in charge of the New York steak course and knew that he could lead the team. Despite giving clear instructions, Santos did not pay attention, much to his annoyance. Later, he got more annoyed when he saw Santos shred the steak, and compared it to a 10-year old having a play knife, deciding to slice the beef himself. Both teams were named joint-losers, and they were asked to nominate two people each.

He was not nominated for elimination.[10]

Episode 12[]

Back in the dorms, Bryant was told by Sade that they had to communicate as there were only three of them left.

During the Amuse Bouche Challenge, Bryant decided to slice the scallops into small cubes to resemble tofu. He was the first person from the blue team to have his dish judged and presented his grilled scallop with charred corn, pea tendril, and wasabi caviar. While it was praised for being a one-bite dish like Ramsay wanted, as well as creative and original, it was criticized for having overcooked scallops, and he scored 7 points. The blue team won the challenge 23-16, and they were rewarded with a helicopter trip to Catalina Island, and eating at the Blue Water Grill. During lunch, he said that it was fun hanging out with Sade and Santos.

During dinner service, Bryant was on the meat station. He was not seen much, and after service, he hugged Sterling goodbye as the latter was eliminated on-the-spot. After, both teams were asked to nominate one person each.

Bryant was not nominated for elimination, and he received the fifth black jacket.[11]

Episode 13[]

Main article: Episode 1313 - 6 Chefs Compete

The next day, the chefs were taken to a parking lot, and Bryant hoped that their next challenge was not going to be avoiding a stabbing. During the Presentation Challenge, he decided to go for a simpler flavor, but ultimately, his dish was not chosen for the second part, much to his disappointment. He lost the challenge to Roe, and he was punished by cleaning both kitchens, taking deliveries of 200-pound beef shoulders, breaking it down, and portioning it. During the punishment, he decided not to help break down the beef shoulders, but instead went to the red kitchen to prep for service, though Sous Chef Andi pulled him back to the blue kitchen, and reminded him that it was not the time for that.

During dinner service, Bryant was on the appetizer station. He was pushing the team to pick up the pace as he refused to let La Tasha make another mistake after the latter served a raw lobster tail. Later, he helped Jennifer on plating, told Roe that her steak was undercooked, and went to help the latter on meat. Then, he called Santos a wingman with a broken wing after the latter was running around doing nothing.

After service, Bryant was named "Best of the Worst" for his strong performance and was asked to nominate two people for elimination. During deliberation, he realized that it could be his first major decision in front of his future boss, and decided to ask everybody to tell him what happened. Then, he reminded Santos about his overly peppered Caesar salads, reminded Roe on how she did not own her mistakes and asked her how could she not know how a steak was done by feeling it.

Bryant announced Roe as his first nominee and Santos as his second.[12]

Episode 14[]

Before heading back to the dorms, Bryant was pulled aside by Ramsay, who told him he has been improving a lot in the last few services and urged him to keep going. He promised Ramsay that he would not let him down, swore that he would fight to the end, and announced that the volcano was coming as he was the last man left. The next day, the chefs were taken to the woods, and he admitted that he was starting to feel like Ramsay’s hostage as the latter kept making unexpected decisions, and asked if was going to die.

During the 40 Portions Glamping Challenge, Bryant made a chipotle rubbed ribeye with summer grilled vegetables and horse cheese chive butter, and knew he would have to prove himself as the last male chef standing. While serving his dish, he kept his talking simple. He won the challenge after receiving 33% of the favorable votes and was rewarded with an Urban camping experience. He chose Sade to go on the reward with him, although he admitted that he did it for strategic reasons in order to find out her weaknesses. When Sade asked him who he felt was the next to go, he answered that it would be Roe.

During dinner service, Bryant was on the appetizer station with La Tasha. He was not seen much, except when he sent an under-seasoned burrata salad. When the chefs were lined up, they were asked to nominate two people for elimination. During deliberation, he was considered by La Tasha based on not being vocal and consistent in the previous services, but he felt that she was getting jealous over his running success lately, and refused to be nominated over a small scallop salad mishap. Then, he considered Jennifer and Roe.

Bryant was not nominated for elimination, and after, he said that he was amped for the final four and was ready to destroy it.[13]

Episode 15[]

The next day, Bryant received a video call from his wife and infant daughter, and later, he spent some time with them.

During the Taste It Now Make It Challenge, Bryant used turkey, couscous, and cherries to recreate Ramsay's dish. He lost the challenge to Jennifer as he got the wrong protein. He was punished by packing up all the unneeded furniture in the dorms, and helping Marino prep the dining room for the next service. During the punishment, he did not like working with La Tasha and Sade, and while he called them annoying, he admitted that every punishment was annoying.

During the 200th Hell's Kitchen dinner service, Bryant was on the garnish station. He got pushed by La Tasha for his potatoes, and he called her a bitch in response. He was the last person who ran the pass, and Ramsay told him to rev it up. He managed to get communicative with the chefs while keeping an eye on Sous Chef Andi as she has sent voluntary mistakes. That caused him to second guess a halibut dish, but Ramsay told him that it was good. When a cauliflower purée was sent instead of a celery root purée, he managed to figure it out after a quick taste. Because of his leadership, the team was able to push out their last tickets. Back in the dorms after the service, he believed that his strong performances would help him make it to the finals, but La Tasha felt that he was becoming arrogant.

After Jennifer's elimination, Ramsay asked the final three why they deserved to be in the finals, and Bryant said that he has been a team player and very vocal. He was the second chef who was announced as a finalist, with La Tasha being the first. After Sade's elimination, Ramsay congratulated him and La Tasha, and he said that he was Ramsay’s next head chef.[14]

Episode 16[]

Continuing from the previous episode, Ramsay told the two finalists to start working on their menus before dismissing them, and Bryant was speechless over being in the finals. Back in the dorms, he got to work on his menu, and knowing that it would determine the rest of his life, he decided to keep his items simple. After several hours of work, he knew that he gave everything to be a better husband and father by working two jobs, and wanted to win. The next day, he and La Tasha went to Palm Springs and flew in a private jet. At Palm Springs, they met Marino, who served as their tour guide. The three of them were watching the sights as they were relaxing at the Parker Palm Springs. After, the two finalists flew back to Los Angeles and met a stewardess, who told them to wait at a lounge as the car was not ready yet. When she came back, the walls fell down to reveal a live audience in the hanger, with Ramsay waiting on the stage for their final challenge.

During the Final Menu Challenge, Bryant knew that his family was his biggest inspiration after seeing his daughter clap for him. For the cold appetizer round, his grilled peach burrata salad was praised for being delicious, but he only scored 7 points as it lacked creativity. For the hot appetizer round, his Cajun seared prawns were praised for having a nice balance of sweet and acidity and scored 9 points. For the fish entrée round, his pan-seared halibut with edamame succotash was praised for the succotash component, but Matthew Kirkley felt that it needed more salt, and scored 8 points. For the chicken entrée round, his airline chicken breast with cream collards was criticized for being dry and scored 7 points. Finally, for the beef entrée round, his chipotle coriander ribeye and chimichurri sauce was praised for its components, and he scored 8 points. He lost the challenge to La Tasha 39-42.

Because Bryant lost the challenge, he was left with the last pick for his brigade. He picked Jennifer as his first pick, Sterling as his second, Santos as his third, and was left with Frank, while admitting that he would have picked Ashley if he had the chance. Back in Hell's Kitchen, he took suggestions from his team and was getting excited about the next day. During prep, he called it crazy after Frank burned the nuts needed for his dish. When he presented his sample dishes, Ramsay praised them for having great effort and flavoring.

During dinner service, Bryant pushed Frank for the first appetizers and refused to let him ruin his easy menu. Later, he told Frank that they have not served any dishes in the first ten minutes, and was getting nervous over the latter’s messy and disorganized performance. After Ramsay told him that Frank's prawns were overcooked, he decided to switch Sterling to hot appetizers, and Frank to garnish. It paid off as Sterling sent the appetizers quickly, and he called the latter his rock. When they moved on to entrées, he told Frank that his garnishes tasted burnt, and warned him that he was very close to being kicked out, while complaining that his menu was supposed to be easy for the latter. After Frank continued to be slow, he decided not to let his team run him any longer, kicked Frank out of the kitchen, and relocated Sterling on garnish. While clearing down, Ramsay told him that his decision to kick Frank out was a smart one.

After saying goodbye to his team, Bryant went back to the dorms, though he told that while Frank was a good person, he was not a great chef. Back in the dorms, he knew that he could be leaving with $250,000. When he and La Tasha were called to Ramsay's office, he got praised for finishing stronger than the rest of the chefs, and that he was born to cook. Then, he stood in front of a door, knowing it would open only if he was the winner. After waiting nervously for Ramsay's countdown to end, he turned the handle, but his door did not open.

Bryant became the runner-up of Hell's Kitchen, and while he was disappointed in his loss, he knew that he worked very hard, and congratulated La Tasha for winning. During the celebration, he received a standing ovation.[15]

  • He is the first runner-up since Jay (Season 7) to be named “Best of the Worst”. He is also the last one to this date.
  • He is the third finalist who kicked a member of his brigade out during the final dinner service, following Mary (Season 11) and Scott (Season 12), as well as the last one to this date who did.
