Season 10[]
Episode 1[]

The eighteen chefs arrived to Hell's Kitchen via SUVs and police escort, and as they walked in, Brian called Hell's Kitchen the Disneyland for kitchens. Sous Chef Scott told the chefs he shaved his head to prove his commitment to Ramsay and showed a picture of him with a full head of hair, before deciding to shave the chefs' heads. After two chefs got their heads shaved, really Sous Chef Scott's friends, the latter was about to shave Danielle's head until Ramsay stopped him and told her to get back in line. He told the chefs to get in the kitchens to cook their signature dishes.
During the Signature Dish Challenge, Brian revealed that he had a very different cooking style in the kitchen compared to others, and hoped Ramsay dug his personality, but the latter got annoyed by his whistling. After Sous Chef Andi revealed that she was wearing a bald cap instead of shaving her hair off, he thought she was hot with or without hair, taking sexy to a different level with her attitude. He was the fifth person from the blue team to have his dish judged by Ramsay, and went up against Kimmie. He made a dessert dish, Ramsay asked what he was doing, and neither he nor Kimmie scored that round. The blue team lost the challenge 3-5, and they were punished by cleaning up both kitchens. During the punishment, he was shocked by the number of dishes they had to clean from 18 people.
During dinner service, Brian was at the dessert station. He was not seen much, but after seeing Tavon's horribly butchered scallops, he accused him of treating the scallops like a homeless rat. The blue team lost the service, and they were asked to nominate two people for elimination. During deliberation, he agreed with Clemenza that they should nominate Tavon and Don.

Episode 2[]

Back at the dorms, Brian wanted it to be about the team as he felt they could not blend together and hoped for a breakthrough.
During the Scallop Challenge, Brian was not seen during the scallop collecting and was paired up Justin. They were seen only having one attempt sent up, but Ramsay rejected them for having poorly cut scallops that looked more like rectangles than circles. The blue team lost the challenge 2-6, and he defeatedly called the men’s loss a blowout. They were punished by cleaning up the ice from the front entrance, prepping prawns for the following night’s service, and drinking a scallop shake. During the punishment, he and Chris tossed a chunk of ice at the women after they left for their reward, and during their lunch, he had a shakestache on his face, and jokingly asked got scallops. However, an annoyed Royce told him to start acting like a man and not like a boy, annoying him as he did not want to be business all the time.
During dinner service, Brian served shrimp scampi tableside. From the start, he did not know what table he was serving to, much to Ramsay’s dismay. Later, James found from a blue diner that her shrimp scampi had raw shrimp, before bringing the dish to the pass. After seeing that, Ramsay called for him from the upstairs, showed him both raw and overcooked shrimp on the same table, and was forced to make a refire. After the men struggled on scallops, he managed to get his attempt accepted. Both teams were named joint losers, and they were asked to nominate two each.

Episode 3[]

During the Immigrants Lunch Service Challenge, Brian was on the sliders station. At one point, he sent up raw sliders, an embarrassed Ramsay said that the immigrants deserved better than that, and yelled that he could not sink any further than a slider. With Patrick’s help, the refire was accepted. The blue team lost the challenge, and they were punished with hard labor at Ballona Wetlands.
During dinner service, Brian was on the garnish station. He was not seen that night, and the blue team won the service.[3]
Episode 4[]

While going back to the dorms, Brian was proud of the men for completing dinner service, and felt it was a monumental shift for them. The next day, a group of dogs was let loose in the dorms, and their loud barking woke up the chefs, confusing Barbie. Once up, Sous Chef Scott gave them overalls to put on.
During the Creative Lamb Challenge, Brian was paired up with Royce on the lamb steak, and during the cooking, the latter ignored his suggestion of salting their lamb steak. They were the final pair from the blue team to have their dish judged by Ramsay, and went up against the pair of Christina and Dana. Royce presented their marinated grilled lamb steak with avocado mousse and coleslaw. Ramsay praised the combination of the mousse and the steak, along with the seasoning, and after a tough decision, Ramsay gave them the point, the men won 3-2, and he proudly felt he just gave birth. They were rewarded with a VIP trip to the Hollywood Park racetrack, and when Clemenza asked for some cash to gamble, Ramsay gave them $100 to use and asked them not to spend it on hot dogs.
When the blue team came back from their reward, Brian felt they had momentum after two victories from the previous dinner service and the challenge that day, before predicting another win that night. During dinner service, he was on the fish station with Patrick. At one point, he sent up a raw cioppino, annoying Clemenza as it was not a hard dish to make, but managed to get his refire accepted. On entrées, he wanted to redeem himself and let the fish station know who’s the boss, but Ramsay discovered that the cod was raw, and called it cat food before smashing it. While he was pissed at himself, Ramsay threw a piece of the cod at him as he felt he could not cook fish that night. Then, per Ramsay’s instruction, Justin went over to fish and saw that he burned the refire, annoying both Clemenza and Sous Chef Scott as they were wasting food, and Don said that he was way under a pile of shit. After, he burned their final cod of the night, and a pissed Ramsay asked him what he was doing before telling James to suggest sea bass as an alternative to the affected customers. However, when Ramsay called out the revised order, he said it would be out while calling Ramsay “baby”. Angered by that, Ramsay told him that he cooked like a fucking baby, and was kicked out of the kitchen.
Bot teams were named joint losers, and they were asked to nominate two each. During deliberation, Royce asked Brian how a personal chef could not cook fish, feeling that five monkeys could have done a better job than him, but while he admitted to his mistakes, he promised to never do it again. After, both Patrick and Clemenza considered him for elimination, but he refused to believe he was the weakest chef in the competition and was willing to fight.
Brian was named the blue team's second nominee for elimination, with Don as the first, and they joined Roshni and Danielle from the red team. During his plea, he called himself a machine, but Ramsay said he was not looking for a fucking machine. He survived elimination and welcomed Roshni as a new teammate. While being dismissed, he felt he had a kick in the ass that night.[4]
Episode 5[]

While going back to the dorms, a disbelieved Brian called his nomination the most terrifying moment in his life as he was nearly eliminated, before promising to his teammates he would not fuck up again. Clemenza reassured him that they believed in him, and the latter admitted that despite joking around a lot, he knew that the competition was no longer funny.
The next day, when Ramsay talked about Mexican food, it fired up Brian as he cooked and ate that ethnic style a lot, and predicted he would come out strong. During the Mexican Cuisine Challenge, he grabbed whatever balls were in front of him, and during the cooking, he had an idea for a shrimp taco with two sauces, and called it simple and sexy. Ultimately, his dish was not chosen for judging, and he felt it was a bad call. After Royce lost to Kimmie, he was pissed as if his tacos were judged, the latter would have lost.
The blue team lost the challenge 2-3, and they were punished by prepping for Mexican Night, which included making both the salsa and the tortilla by hand, and eating tripe for lunch. As the blue team was dismissed, Brian felt he was robbed of his chance to bounce back from the previous night. During the punishment, he hated the musky smell the tripe was emitting, and wanted that shit away from him. When the red team came back from his reward, he compared losing to pulling his lips to the back of his head while somebody threw acid in his face.
During the Mexican Night dinner service, Brian was on the fish station with Guy. He was not seen much, but after a lot of ejections from the blue kitchen, he and Roshni were the only ones left. Despite that, they decided to push it out, finally got the first order of entrées out, and got a groove going. Once service was over, he felt good to be one of the two remaining chefs on the blue team left in service. Both teams were named joint losers, and they were asked to nominate two each. During deliberation, he agreed with Royce to nominate Patrick and Guy for elimination.

Episode 6/7[]

Before the Fashion Night Planning Challenge, Brian was happy to see the models despite not knowing that the challenge was, before hoping to talk and cuddle with one of them. He was paired up with Justin on the appetizer dish, they discussed a lobster medallion dish, and wanted to keep the dish simple and sexy. They were the first pair from the blue team to have their dish judged, went up against the pair of Christina and Dana, and he believed their dish was pure sex on a plate. Justin presented their seasonal bean salad with lobster and fennel foam, but the presentation was immediately criticized for being unappealing, especially with the foam component as Ramsay compared it to regurgitated vomit, while Patrick himself commented that he would never do a foam component. Then, the taste itself was criticized for a sweet foam and a bland taste overall. They lost that round to the pair of Dana and Christina, but he said he did not care what the judges said as he felt their dish was very nice. When Patrick mentioned the word mucus to discuss his and Roshni's dish, he was dismayed he said that.
The blue team eventually won the challenge, and they were rewarded with a $1000 shopping spree at the M. Fredric boutique along with a wine tasting excursion at the Rosenthal Estate. During the reward, Brian skipped a beat over how attractive their personal shopper Elaina was, and felt there was something special between him and Elaina.
The next day, Clemenza woke everybody up at 5:15 AM, and Brian complained about the shouting. During prep, he got annoyed by Clemenza's attempt on organization, told him to take a breath, and reminded him they were still a team.[6] During the Fashion Night dinner service, he was on the garnish station. Patrick reminded the blue team about the models that would be shown that night, and he said Ramsay would be his blinder. When the first show of models took place, he felt it would be a hot night. When Clemenza and Guy were swamped on scallops, he refused to let the former go down even further, jumped in to help, and the effort paid off as they were accepted, and the blue team was finally able to complete their appetizers. During the second show, he called the models sexy. When the blue team was cleaning up, he and Roshni were dismayed when Ramsay showed them a tray of wasted swordfish Clemenza cooked.
The blue team lost the dinner service, and they were asked to nominate two people for elimination. During deliberation, Guy tried to push for Brian as he could have help Clemenza out on scallops, to which Royce agreed with. However, he argued he did help Clemenza as best as he could and got pissed because if it were not for him, they would have been fucked before hitting the punching bag in anger. When Roshni struggled to decide on their second nominee, he asked her to be decisive.
Brian was not nominated for elimination, even though Roshni told Ramsay he was a possibility. When Ramsay asked him who he felt should go home that night, he said Clemenza.[7]
Episode 8[]

During the Dome Challenge, Brian grabbed veal chop for his dish. He was the fourth person from the blue team to have his dish judged and went up against Dana. He made an ethnic fusion veal chop, but before it could be judged, he awkwardly welcomed the judges in both poor Italian and Spanish. That made everybody cringe, and an annoyed Patrick felt he did not think before he speaks. Despite that, the dish was praised for being cooked nicely, and he scored 6 stars. The blue team eventually lost the challenge 29-30, and they were punished by cleaning up the dorms and prepping for that night’s dinner service.
During dinner service, Brian was on the appetizer station with Clemenza. After Clemenza sent up raw pasta, he felt the former should know what to do with pasta as he probably made it 17 million times. When the blue team was working on Tito Ortiz's order, he felt confident, but his risotto was soupy, and Ramsay called him lazy for sending it up despite knowing how poorly it was. Despite that, the refire was accepted as he apologized to Ortiz before doing some boxing moves. After several mistakes, the blue team got kicked out of the kitchen.
The blue team lost the service, but when Brian argued that they were better than the red team, Ramsay reminded him about his soupy risotto, leading him to know it was not a joke due to it being their seventh dinner service. They were asked to nominate two people for elimination. During deliberation, Patrick considered him and Clemenza for elimination for their problems on appetizers, but he argued that he did not hold up the kitchen that night. That led him to accuse Patrick of overlooking his own mistakes, before considering the latter and Roshni as his nominees.
Brian was the blue team's first nominee for elimination, with Clemenza as the second. However, Ramsay did not agree to those choices as appetizers did not cause the stumbling block, they were not called down to the front, and he survived elimination. When Ramsay asked the safe blue chefs who should go home, he said Roshni. While being dismissed, he rightfully felt he did not deserve to be nominated, but if the blue team was fearing him as a threat, then he was okay with that as he was one.[8]
Episode 9/10[]

The next day, Brian was one of the chefs that listened to Kimmie's rap. During the Creative Steak Challenge, he went up against Barbie, and their ingredients were New York striploin, celery root, tomatoes, cauliflower, and shrimp. He was the fourth person from the blue team to have his dish judged by Ramsay, and said that if Barbie beat him, he would slam his head onto the first blunt object he could find. He made a New York strip tagliatta with celery root frite and warm salad, it was praised for a nailed temperature, and a brilliant combination of the cauliflower and shrimp. So, he tied that round with Barbie, and he thanked God for winning. The blue team won the challenge 3-2, and they were rewarded with a shopping spree at Sur la Table and lunch at Comme Ca. During the reward, he called Sur la Table Disneyland for chefs.
During prep, Brian felt that Justin needed to relax after the latter tried to lead the blue team during prep.[9] During the Steak-Family Night dinner service, he was on the appetizer station with Justin. At one point, he tried to lighten the mood by joking around and doing silly voices, but an annoyed Justin told him to shut the fuck up as he did not find it funny, Clemenza had no idea what he said due to speaking Spanish and had enough with his jokes. Then, Ramsay rejected his blinis for being too small and berated him for making a simple thing look difficult, and after he tried to do his funny impersonations again, a pissed Ramsay ordered him to act like a chef for two minutes. Despite that, he got his refire accepted, but Ramsay warned him that while he liked his funny side, he wanted to see his serious side or fuck off. Later, he felt Ramsay was harder on Patrick as he knew it was to bring out a lot of the latter, but after Patrick was kicked out of the kitchen, he accused the latter of cooking inside his head scared that night. Eventually, he, Justin, and Clemenza were the only remaining men left to complete their tickets, and Ramsay had them join the women in the kitchen. However, he got annoyed by the chaos from the Kimmie and Robyn feud, and when the red team got kicked out, the three men were left to complete their tickets. While he called it a hard night but knew that the three were the strongest chefs in the competition as they were the last chefs left.
Both teams were named joint losers, although Ramsay thanked Brian for his strong performance, and they were asked to nominate two each. During deliberation, he was disappointed that the blue team did not win despite the entire red team getting kicked out but knew that it would be an easy decision as two of the five blue chefs got kicked out, before considering Royce and Patrick for elimination.
Brian was not nominated for elimination, and after Patrick's elimination, he welcomed Robyn as a new teammate.[10]
Episode 11[]

During the Craps Challenge, Brian hoped Robyn would pick duck after landing on a D, but she picked dragon fruit instead. He rolled an E and after struggling, he picked edamame. During the cooking, he had an idea to make sushi out of the dragon fruit. Justin presented the blue team's charred chicken roulade with dragon fruit vinaigrette, edamame purée, and daikon-dragon fruit sushi roll. Ramsay praised the sushi roll for tasting delicious, the purée for being nailed despite being a tough one to pull off but criticized the chicken for tasting dry due to Royce’s decision to slice the chicken too early. The blue team won the challenge, and they were rewarded with a day in Las Vegas, staying in the Paris Hotel in a high roller’s suite above the prized restaurant Gordon Ramsay Steak. During the reward, he was very starstruck over seeing Carrot Top. When the blue team got back from their reward, he annoyed the red team with his loud entrance.
During dinner service, Brian was on the garnish station. At one point, he broke a pizza in the over, a pissed Ramsay accused the blue team of giving up. Then, Robyn was leading him on appetizers, with the latter taking notice of her vocalness in the kitchen and was very impressed. After Royce performed poorly on meat, he felt the former was all over the place with no chance of bouncing back. Eventually, an angry Ramsay called everybody minus Robyn into the back-pantry room, order them to have a meeting, and if none of them did not get a grip and an attitude change, they could fuck off. After Clemenza presented a weirdly colored cod, he accused the former of not getting the hang of fish due to being confused, lost, and check out. Eventually, the red team was called in to help them out, but he and Tiffany argued as he did not like how the later looked down on him and was close to putting her head in the deep fryer.
The blue team lost the service, with Ramsay berating him on his poor flatbreads, and they were asked to nominate two people for elimination. During deliberation, he felt that Ramsay obliterated their souls before considering Royce and Clemenza for elimination based on the meat and fish problems respectively. However, he was considered for elimination by the two men and Robyn.
He was not nominated for elimination.[11]
Episode 12/13[]

Back at the dorms, Tiffany and Brian were still sore over what happened that night when the former belittled him, but while she was not sympathetic over his complaints, he said that she sucked, and it was a personal punishment to see her face.
During the Wing Eating Challenge, Brian was one of the four chefs to compete against Joey Chestnut for $500, and claimed he could eat a large amount of food despite his appearance. He wanted to attack the wings as it was $500 on the line, but despite the chef’s efforts, Chestnut finished first as they only had seven wings left, although he commended the champion for his strong performance. During the Blind Taste Test, he was the first person from the blue team to compete, went up against Christina, and while he said he trained for that challenge, he never thought it would be after having a pound of wings in his stomach and all over his mouth. He got beets, turkey, calling it very dry and making Clemenza laugh, and pineapples. The blue team won the challenge 7-6, and they were rewarded with a day at Raging Waters with the whole park to themselves. During the reward, he got bored waiting in the sun, wanted a ride that was scary, and tried to convince his teammates to go on the largest slide of place. Everybody but Clemenza was up for it, so he did it at least twice.
Later that day, a truck horn blared, annoying Tiffany as she thought the red team was done with delivery day. However, Barbie opened the box to reveal a tablet, and after pressing play, it opened a prerecorded message from Ramsay. Then, Ramsay announced that he was giving both teams a chance to have their own menus for the following night’s service, and gave them one hour to create a menu with three appetizers, three entrées, and three desserts. Brian and Justin were agreeing on their ideas, but Clemenza accused the two of running the blue team.
During prep, Clemenza left prep to clean his jacket, but that pissed Brian as there was a lot of prep work to do. Later, he noticed that Clemenza was still missing, frustrating everybody.[12] During dinner service, he was on the garnish station and had his sea bass on the menu. After Robyn ruined all the squash blossoms, he said out of no personal felling that she sucked at cooking On the blue team's first order of entrées, he forgot the onions for the steaks, and Ramsay yelled that it was not good enough before accusing him of leaving his brain on a slide. When he did send up the onions, they were a hard clump to the point Ramsay compared it to a golf ball and accused him of not caring. Despite that, he got the refire accepted. Later, Justin reassigned him onto fish after Clemenza struggled on fish, but sent up only one sea bass when two were ordered as he did not like the color of the other one. Fed up with the disorganized performance, Ramsay saw the raw sea bass, and it was the final straw before kicking the blue team out of the kitchen.
Both teams were named joint losers, and they were asked to nominate two each. During deliberation, Brian considered Robyn for elimination, but the latter nominated him for fucking he on a lot of aspects that night. Then, he considered Clemenza for elimination, but the latter argued he did not deserve to be nominated.
Brian was not nominated for elimination, but when he claimed Clemenza got beaten during prep, the latter found it ridiculous.[13]
Episode 14[]

Before the Southern Cuisine Challenge, Brian chose to compete against Kimmie as he wanted to beat the best, and their dishes were pork chop and grits, with Kimmie warning him that he was going to get reamed. During the cooking, he revealed that he never made grits before and had zero idea how to make them, so he was left reading the instructions on the box, but that left him more confused. He was the second person from the blue team to have his dish be judged, was nervous when Kimmie’s grits received praise and presented his Southern rubbed pork chop on top of buttermilk brown sugar grits. While the presentation was praised for looking beautiful, Steel found the pork to be undercooked, leaving him ashamed and wanted to throw his plate against the wall. He lost the round to Kimmie. The blue team lost the challenge 1-3 and were punished by prepping for Southern Night which included baking fresh bread and churning butter.
During dinner service, Brian was on the fish station. When the blue team was working on their first orders, he knew that he fucked up on fish before but wanted to show the oysters who big daddy was. However, he served overcooked oysters that looked like snot, Robyn compared them to something a rabbit shat out, and Ramsay ordered him to speed up. After beating himself up, he got his refire accepted, but knew he had to whip ass that night. When the blue team moved onto entrees, despite knowing service started rough, he wanted to do everything to keep it smooth. However, he sent up burnt catfish, irritating Clemenza, and after given a piece to eat, Ramsay demanded to know what it tastes like. He snidely said it tasted like fish, angering Ramsay and Robyn as it was not the time to make jokes, and he was kicked out of the kitchen. Frustrated that he said the wrong thing, he was about to walk out the front entrance until James convinced him to go and fight back as Ramsay did not want a wimp who cracked. Inspired by that, he raced back to his station, only for Ramsay to call him to the front and ask him the same question, only with a threat of automatic elimination through the front doors if he did not say the right answer. He said the catfish tasted burnt and admitted to not seeing the bottom before sending it up and could work again. However, the blue team was completely stalled on entrées and leaving their diners hungry. One hour and a half into dinner service, he knew his brain got the best of him and hoped he got his shit together. When Robyn sent up raw chicken, Ramsay sarcastically dared him to say something funny now. After several mistakes, the blue team got kicked out of the kitchen. Both teams were named joint losers and were asked to nominate two people each. During deliberation, he was considered by Clemenza as he fucked up that night, and Robyn as he got kicked out of the kitchen.
He was not nominated for elimination.[14]
Episode 15[]

During the Relay Challenge, Brian participated in the third round but tried to work out through the mess he was left. As neither team scored a point on either dish, Ramsay named both teams joint losers in a team challenge. Everybody was punished by cleaning up the front of the restaurant and detailing the SUVs.
Before service began, Brian thought the dome Ramsay brought out was a cake, only to reveal it was a black jacket. During dinner service, he was on the meat station. At one point, he sent up a tray of meat that included a raw and not rested properly New York striploin, perfect pork, and Wellingtons sliced like door wedges. As Brian beated himself up, he called out five minutes on the refire. Later, he was dismayed to learn that one of his New York striploins were overcooked, and wanted their first ticket to be done, but sliced into a raw steak. After a frustrated Ramsay asked if he was serious, some of the blue diners decided to walk out, and then, he served overcooked Wellingtons. Having enough, Ramsay went into the red kitchen and called Barbie over to take over meat from him, leaving him furious about his situation and threw a temper tantrum.
The blue team lost the service, and they were asked to nominate two people for elimination. During deliberation, Brian wanted to get it over with, tried not to be personal, he felt the three men deserved black jackets over Robyn. However, she felt it was personal only for him to declare she was not a better chef than them. After, Robyn and Clemenza considered him for elimination, only for himself to considered the two for elimination as he refused to nominate Justin, and after the votes, he and Clemenza were tied with two votes each.
While the blue team named Robyn their first nominee for elimination, Brian and Clemenza were tied as the second nominee. Frustrated, Ramsay decided to call up the entire team, and during his plea, he felt he deserved to stay in Hell’s Kitchen as he was capable of a black jacket. After Clemenza and Justin received their black jackets, Ramsay asked him and Robyn to take off their jackets, only to be eliminated for his poor performance on meat and giving up after Barbie came into the blue kitchen. During his exit interview, he was shocked that he was going home as he felt he was going up in the competition, and felt he had a shot in winning.
Ramsay's comment: "Brian had a lot of energy and was a funny guy. But after tonight's performance, I wasn't laughing. And that's why he has to leave Hell's Kitchen." [15]
Episode 19/20[]

Brian was one of the eight chefs that returned for the final dinner service. He was Justin's second pick, after Barbie, and was followed by Royce and Clemenza. While shocked that he was not Justin’s first pick, he did not hold anything against the former as he was happy to be back. When looking over the menu, he called Clemenza dead weight after the latter showed attitude towards Justin.[16]
The next day during prep, when Clemenza burnt the crostini, Brian was horrified, but he was able to get the refires ready thanks to his help, and wanted to fight tooth and nail for Justin. During dinner service, he was on the garnish station. When Royce’s refired crab cakes were dry, Justin ordered him to help the former, and the third attempt was accepted. Later, his garnish was sent back for needing more salt, and when Barbie announced that she did not have enough portions for two ribeyes, he was shocked. - After his appearance on the show, Brian returned to being a Private Chef, offering private dinners, cooking lessons and group events on his website. He has received excellent reviews. While running his own private chef business, he is also a Sales Manager at Testa Produce, Inc, since September 2022.
- He got married in 2015 and has two children.
- He opened his first restaurant, Papa Willie's BBQ in 2019, until it closed in 2022.
